Claims (4)

1. Bezalkoholno funkcionalno piće na bazi slada ili na bazi bezalkoholnog piva ili na bazi vodene arome obogaćeno aminokiselinama i dijetalnim vlaknima, naznačeno time što istovremeno sadrži autolizat dobiven iz otpadne kvasne kaše i dijetalnih vlakana dobivenih iz fragmentiranih pivarskih zrna.
2. Postupak proizvodnje bezalkoholnog funkcionalnog pića na bazi slada ili na bazi bezalkoholnog piva ili na bazi vodene arome, obogaćenog aminokiselinama i dijetalnim vlaknima, naznačen time što se suspenzija dijetalnih vlakana i autolizat kvasca dobivaju odvojenim (paralelnim) tehnološkim postupcima u kojima se suspenzija dijetalnih vlakana dobiva na način da se pivarska zrna pomiješaju s vodom u omjeru 1:1, zatim se fragmentiraju na sobnoj temperaturi u homogenizatoru, a zatim se dobivena suspenzija filtrira kroz tkaninu za filtraciju kako bi se odvojile čestice veće od 0,5 mm dok se autolizat kvasca dobije na način da se kaša kvasca podvrgava procesu inkubacije koji se provodi u reaktoru s grijaćim plaštem (45-50 °C) i miješanju s vodom u omjeru od 1:1 s dodatkom saponina (Quillaja ekstrakt) kao induktorom gdje je koncentracija saponina 0,04% m/v u odnosu na razrijeđenu kašu kvasca; zatim se, nakon završene faze autolize, čvrsta frakcija odvaja centrifugiranjem u hlađenoj centrifugi, nakon čega se suspenzija dijetalnih vlakana i autolizat sjedinjuju s osnovnim sastojcima u obliku sladne baze ili bezalkoholnog piva ili s bazom vodene arome obogaćenom aditivima za okus i aromu radi dobivanja funkcionalnog bezalkoholnog napitka.
3. Postupak proizvodnje bezalkoholnog funkcionalnog pića patentnom zahtjevu 2 naznačen time što se dobivena suspenzija dijetalnih vlakana i autolizat u prvom koraku pohranjuju u hladnjaku do 48 sati, a nakon toga se podvrgavaju pasterizaciji, a zatim se sjedinjuju s osnovnim sastojcima u obliku sladne baze ili bezalkoholnog piva ili bazom vodene arome obogaćenom aditivima za okus i aromu radi dobivanja bezalkoholnog funkcionalnog napitka.
4. Postupak proizvodnje bezalkoholnog funkcionalnog pića patentnom zahtjevu 2, naznačen time što se dobivena suspenzija dijetalnih vlakana i autolizat u prvom koraku sjedinjuju s osnovnim sastojcima u obliku sladne baze ili bezalkoholnog piva ili bazom vodene arome obogaćenom aditivima za okus i aromu radi dobivanja bezalkoholnog funkcionalnog napitka koji se naknadno podvrgava pasterizaciji.
