Abstract

1339939 Tomato pulp H J HEINZ CO Ltd 19 Oct 1972 [5 Nov 1971] 51588/71 Heading A2B Hot break tomato pulp is prepared by feeding whole tomatoes into a falling stream of scalded tomato pulp the temperature of which is at a value to minimize enzyme activity in the mixture of tomatoes and pulp, chopping the tomatoes as they are carried downwardly in the stream, recirculating with reheating the chopped pulp to form the falling stream, and pumping off a portion of the recirculating pulp at a rate commensurate with the rate of feed of whole tomatoes. Fig. 1 shows an apparatus according to the invention, wherein whole tomatoes are fed by a screw conveyor 1 into a scald tank 2, where they meet and commingle with a stream of scalded, pulp entering via inlet 7 and are chopped by chopper 11. The resulting pulp is pumped by pump 5 through heat exchanger 19 to inlet 10, and pulp is withdrawn via line 21 by pump 22.
