Abstract

L'invention a pour objet un procédé de fabrication de fromages frais ou de produits moulés ou non contenant du fromage frais, en faisant subir au petit lait obtenu lors de la fabrication du fromage blanc, une ultrafiltration, et en réchauffant le concentré obtenu après avoir stabilisé à un pH de 4,5 jusqu'à ce qu'au moins 50 % de l'albumine de petit lait soit devenus insolubles dans le concentré. Le produit obtenu est ajouté en bloc au fromage frais fabriqué de manière traditionnelle, et on obtient un fromage frais ayant une bonne structure, sans pertes d'albumine L'invention trouve une application dans la fabrication des fromages.
