Abstract
1362502 Proteinaceous milk products J A MEGGLE [trading as MOLKEREI J A MEGGLE MILCHINDUSTRIE] 26 Oct 1972 [9 Nov 1971] 49489/72 Heading A2B A milk product containing precipitated casein for example curds, dried curds, casein, acidified skim milk, buttermilk, or a concentrate derived from the ultrafiltration of skim milk, is adjusted to below the isoelectric point of casein by addition of an acidified milk derivative, for example sweet, sour, partially delactosed, partially deproteinised, or desalinated whey, skim milk, buttermilk, or an ultrafiltration product, the product is then brought into dispersion or solution, and dried, preferably after concentration with regard to the protein content, and after heat sterilising. Other foodstuff components may be added to the product, such that on reconstituting with water the result preferably has a pH around the isoelectric point. The product may be used in the preparation of curd filling for cakes, and in salad dressing and mayonaisse-like products.
