Abstract

L'invention concerne un procédé de préparation d'un mélange pour sauce. On réunit un matériau farinacé en particules contenant de l'eau et une matière grasse liquide chaude pour former un mélange en particules epais que l'on maintient à une température suffisante pour évaporer une partie substantielle de l'eau et pour enrober les particules de matière grasse liquide. Le mélange chauffé qui a une consistance pâteuse revient à l'état liquide lorsqu'on le refroidit dans un intervalle de température particulier. Quand on refroidit encore le mélange liquéfié, on obtient une masse plastique dans laquelle les particules farinacées et les glycérides gras cristallisés sont dispersés. Application à la préparation de divers mélanges pour sauce.
