Abstract
L'invention concerne un produit analogue au bacon et un procédé pour sa préparation. Ce produit comprend une phase grasse constituée par une albumine coagulable à chaud, un composé formateur de pellicule et un composant gras, et une phase maigre constituée par une dispersion mobile d'une protéine coagulable à chaud, du type huile dans l'eau et d'une graisse constituée par un mélange d'huile de palme et d'huile de soja partiellement hydrogénée. Le produit obtenu peut être frit pour fournir une matière de texture masticable analogue à celle du bacon naturel frit
