Abstract

Una enzima alfa-amilasa estable al calor y a los ácidos caracterizado porque (1) es capaz de retener por lo menos aproximadamente 70% de su actividad inicial de alfa-amilasa cuando se mantiene a 90ºC y a un pH de 6,0 durante 10 minutos en ausencia de iones calcio añadidos; (2) es capaz de retener por lo menos aproximadamente 50% de su actividad inicial de alfa-amilasa cuando se mantiene a 90ºC a un pH de 6,0 durante 60 minutos en ausencia de iones calcio añadidos; y (3) es capaz de retener por lo menos aproximadamente 50% de retener por lo menos aproximadamente 50% de su actividad inicial de alfa-amilasa a una temperatura de 80ºC y a un pH de 4,55 en presencia de 5mM de iones calcio durante 10 minutos.
