Abstract
An improved process for manufacturing a food product of farinaceous material by extrusion swelling and subsequent compression between a pair of metal surfaces, comprising baking a hydrated farinaceous material in a pressurized chamber at an elevated temperature, thereby forming a substantially gelatinized mass, extruding said farinaceous material through a die opening to form an extruded product having a desired cross section, the moisture content of said extruded product being reduced relative to the moisture content of said hydrated material, compressing at least a portion of said product extruded between a pair of surfaces while said extruded material remains in a docile state, the distance between said surfaces being such that the thickness of at least some portions of the extruded product is substantially shining, and cutting the extruded product into segments of predetermined length.
