SE TRATA DE UN PROCEDIMIENTO PARA LA FABRICACION DE GRASA DE MANTECA Y MANTEQUILLA CON PORCION REDUCIDA DE COLESTEROL MEDIANTE UN TRATAMIENTO CON VAPOR DE AGUA. PARA ESTO, LA GRASA SE INTRODUCE EN UNO O MAS TUBOS DE REACCION HORIZONTALES O LIGERAMENTE INCLINADOS QUE SE CALIENTAN A UNA TEMPERATURA ENTRE 195 Y 250 C Y SOMETEN A UNA PRESION DE 0,5 - 5 AT. EL VAPOR DE AGUA PARA EL TRATAMIENTO SE INYECTA DESDE UNO O MAS TUBOS DE VAPOR PARALELOS QUE SE EXTIENDEN A LO LARGO DE TODA LA LONGITUD DEL TUBO DE REACCION Y POR LA CAPA DE GRASA LIQUIDA (ACEITE), A TRAVES DE UNA SERIE DE PERFORACIONES EN LA PARED DEL TUBO, EN LA CORRIENTE DE ACEITE QUE AVANZA HACIA LOS TUBOS DE REACCION. DESPUES SE QUITAN LOS VAHOS Y LA GRASA SE REFRIGERA. EVENTUALMENTE, SE AÑADEN SUSTANCIAS RECOMBINADORAS. LA GRASA DE MANTECA Y LAS MANTEQUILLAS CON POCO COLESTEROL PUEDEN FABRICARSE EN UNA INSTALACION QUE, EN CASO APROPIADO, TIENE VARIOS TUBOS DE REACCION.
