Das bei dieser Mischkondensation anfallende Wasser läuft am Ende der kanalartigen Vertiefung 12 auf deren Boden 19 zum Geräteablauf 14, der in einen Siffon 20 mündet, dessen Ablaufrohr mit 21 bezeichnet ist. - A apparatus for heat-treatment of substances, more specifically of foods, with a cooking chamber (2) surrounded by a casing (1), a fan chamber (4) with an air circulation fan (5) separated from the cooking chamber (2) by a separating plate (3), but connected to it in terms of flow, an device for generating a treatment medium containing vapour inside the cooking chamber (2), a condensation device (16) for condensing the excess vapour as well as with isolation devices (20) in all conduits leading out of the cooking chamber (2), characterized in that the condensation device (16, 23) is configured as a co-condensation device extending from the pressure area (13) of the air circulation fan (5) into the cooking chamber (2).
- The apparatus according to claim 1, characterized in that at least one injector nozzle (16) that is located in the immediate pressure area (13) of the air circulation fan (5), the jet direction (17) of which is oriented essentially in the direction of the flow (18) of the treatment medium, is provided for the co-condensation.
- The apparatus according to claim 2, characterized in that the injector nozzle (16) or nozzles are disposed on the wall of the fan chamber (13) opposite to the slot aperture (10) of the separating plate (3), with its jet direction (17) oriented onto the slot aperture (10) at the lower end of the separating plate (3).
- The apparatus according to claim 3, characterized in that the floor of the cooking chamber (11) has a duct-type depression extending from the pressure area (13) of the fan chamber (4) into the cooking chamber (2), the floor (19) of said depression being tilted in direction of the cooking chamber, and that the injector nozzle (16) or nozzles is or are disposed on the narrow side (15) of the duct-type depression (12) associated to the pressure area (13) of the air circulation fan (5).
- The apparatus according to claim 4, characterized in that the width of the depression (12) corresponds to approximately 20 to 25% of the width of the floor of the apparatus.
- The apparatus according to claim 4 or 5, characterized in that extending from the separating plate (3) the depression (12) is covered by a splash guard (24) over a part of its length.
- The apparatus according to claim 6, characterized in that the splash guard (24) is pierced by apertures.
- The apparatus according to one of the claims 4 to 7, characterized in that an outflow of the apparatus (14) is provided at the deepest place of the depression (12).
- The apparatus according to one of the claims 4 to 8, characterized in that a separate outflow is provided for the water of the co-condensation.
- The apparatus according to one of the claims 1 to 9, characterized in that the cooking chamber (2) has an inlet conduit (26) for ambient air controlled by a low pressure valve (25).
