Man läßt hierauf die Lecithinemulsion etwa 10 Minuten lang stehen, worauf sich das Lecithin am Boden in einer gelatineartigen Schicht absetzt. Hierauf gießt man die überstehende Natriumbicarbonatacetonwasserlösung mit den in ihr gelösten Bitterstoffen ab. Alsdann füllt man zum zweitenmal 5 Gewichtsteile Aceton unter Zusatz von 10 bis 15 Prozent Wasser ein und emulgiert hiermit das Lecithin nochmals ι Stunde lang, wodurch die noch in dem Lecithin enthaltenen Bitterstoffreste und die Reste des Natriumbicarbonats ausgewaschen werden. Nach Abgießen dieser Lösung von dem sich absetzenden Lecithin wird dieses ein drittes Mal mit etwa 10 Teilen chemisch reinen Acetons 1 Stunde lang nachgewaschen, wodurch das in dem Lecithin bei dem vorstehenden Waschprozeß aufgenommene Wasser zum größten Teil von dem Aceton aufgenommen wird, was dadurch in die Erscheinung tritt, daß das Lecithin wieder eine mehr feste wachsartige Beschaffenheit annimmt.
