Abstract
Un proceso para fabricar un producto de queso en forma de palitos, tipo mozzarella, que comprende los pasos de (a) proveer cuajada de queso, (b) calentar, amasar y estirar la cuajada de queso junto con cualesquiera ingredientes deseados en un mezclador/unidad de cocción con inyección directa de vapor utilizando inyección directa de vapor a la cuajada de queso con mezclado suficiente para mantener la temperatura de la cuajada de queso en menos de alrededor de 70°C para obtener un producto de queso, (c) extruir el producto de queso, y (d) enfriar el producto de queso extruido para obtener el producto de queso en forma de palitos, tipo mozzarella, en donde el producto de queso en forma de palitos, tipo mozzarella posee tacto en la boca suficientemente bueno y propiedades de textura que se adaptan para consumo directo por un consumidor. EI proceso de acuerdo con la reivindicación 1, en donde el producto de queso extruido se enfría en salmuera fría. EI proceso de acuerdo con la reivindicación 2, en donde se inyecta vapor en la cuajada de queso con una presión de alrededor de 1.5 a alrededor de 2.5 bar. EI proceso de acuerdo con la reivindicación 3, en donde se inyecta vapor con una presión de alrededor de 2 bar. El proceso de acuerdo con la reivindicación 3, en donde se inyecta vapor hasta que la temperatura de la cuajada es alrededor de 60 a alrededor de 67°C.
