Abstract
Un método para producir un polipéptido que tiene actividadhexosa oxidasa, que comprende aislar o sintetizar un fragmento de DNA que codifica el polipéptido, introducir dicho fragmento de DNA en un organismo huésped apropiado en donde el fragmento de DNA es combinado con una señal de expresión apropiada para el fragmento de DNA, cultivar el organismo huésped bajo condiciones que llevan a la expresión del polipéptido con actividad hexosa oxidasa y recuperar el polipéptido del medio de cultivo o del organismo huésped.Un polipéptido en forma aislada que tiene actividad hexosa oxidasa, que comprende por lo menos una secuencia de aminoácidos seleccionada entre el grupo compuesto por:(i) Tyr-Glu-Pro-Tyr-Gly-Gly-Val-Pro(ii) Ala-Ile-Ile-Asn-Val-Thr-Gly-Leu-Val-Glu-Ser- Gly-Tyr-Asp-X-X-X-Gly-Tyr-X-Val-Ser-Ser,(iii) Asp-Leu-Pro-Met-Ser-Pro-Arg-Gly-Val-Ile-Ala-Ser-Asn-Leu-X-Phe,(iv) Asp-Ser-Glu-Gly-Asn-Asp-Gly-Glu-Leu-Phe-X-Ala-His-Thr,(v) Tyr-Tyr-Phe-Lys,(vi) Asp-Pro-Gly-Tyr-Ile-Val-Ile-Asp-Val-Asn-Ala-Gly-Thr-X-Asp,(vii) Leu-Gln-Tyr-Gln-Thr-Tyr-Trp-Gln-Glu-Glu-Asp,(viii) X-Ile-Arg-Asp-Phe-Tyr-Glu-Glu-Met,en donde X representa un aminoácido seleccionado entre el grupo compuesto por Ala, Arg, Asn, Asp, Asx, Cys, Gln, Glu, Glx, Gly, His, Ile, Leu, Lys, Met, Phe, Pro, Ser, Thr, Trp, Tyr y Val,y muteínas y variantes de los mismos.Una molécula de DNA recombinante que comprende un fragmento de DNA que codifica un polipéptido que tiene actividad hexosa oxidasa.Una célula microbiana que comprende la molécula de DNA recombinante de acuerdo con la reivindicación 26. Un método para preparar un producto alimenticio caracterizado porque se usa un polipéptido de acuerdo con la reivindicación 9 o una célula microbiana de acuerdo con la reivindicación 29.Un método para preparar un forraje para animales, caracterizado porque se usa el polipéptido de acuerdo con la reivindicación 9 o una célula microbiana de acuerdo con la reivindicación 29.Un método para reducir el contenido de azúcar de un producto alimenticio que comprende agregar a dicho producto una cantidad del polipéptido de acuerdo con la reivindicación 9 o una célula microbiana de acuerdo con la reinvindicación 29 que es suficiente para eliminar por lo menos parte del azúcar inicialmente presente en dicho producto alimenticio.
