Abstract

Description

根据一个美国专家委员会的观点(Pilch S.M.,Physiologicaleffects and health consequences of dietary fiber-F.B.A,223,84,2059-Bethesda,MD Federation of AmericanSocieties for Experimental Bio1.,1987),在健康人日常食物定额中,饮食纤维的数量应该在27到40克之间。
饮食纤维可以,尤其是,根据它们的性质和它们的化学和物理结构,根据它们在胃肠运输期间的可消化性或根据它们在胃肠运输期间的生理性质进行分类。
在化学上,饮食纤维是由多糖或木质素组成的。这些化合物在胃肠运输过程中不被内源分泌物水解(T.Schweizer et al.,ThePhysiological and nutritional importance of dietaryfibres,Exprientia,44,P 182-186,1991)。

不溶性纤维,例如纤维素,玉米纤维或不溶性大豆纤维,基本上具有一种机械作用。它们通常仅稍微地被肠道菌群酵解并且有助于减少肠道运输的持续时间(Scheppach et al.,Addition of dietaryfiber to liguid formula diets,JPEN,14,P 202-209,1990)。
可溶性纤维,例如果胶,菊粉或抗性淀粉,是肠道菌群非常好的发酵底物。这种发酵的结果是脂肪酸的释放,尤其是结肠中的短链脂肪酸,它具有降低结肠中的pH值和控制结肠中致病细菌的生长和发展的效果。
EP0 591267描述了一个营养产品的纤维***,包括按其质量比5-50%的***胶,5-25%的羧甲基纤维素钠和45-80%的蒸麦外壳纤维。
而且,已经证明经过肠道途径服用不具饮食纤维的组合物会在病人中引起肠道紊乱,例如腹泻或便秘(Palacio et al.,Nutrition inClincal Practice,5,P 99-106,1990)。
因而,EP 756 828描述了一种以纤维为基础的组合物,尤其为肠营养设计,使帮助维持良好的肠道功能成为可能。此组合物可以是液体形态或干粉形态,每2000Kcal含有15-50%可溶性饮食纤维多糖,15-45%不溶性饮食纤维多糖和8-70%寡糖或抗性淀粉。它也可以含有碳水化合物和/或脂肪和/或蛋白质物质。
本发明的目的是提供一种以纤维为基础的营养组合物,它在可溶性纤维和不溶性纤维的比例上具有良好的平衡,具有有利的粘度和良好的贮存稳定性。而且,本发明中的组合物试图作用于完整的胃肠***,在胃、小肠和结肠的水平上。
为达到此结果,本发明中的纤维为基础的营养组合物包括至少一种由豌豆内部纤维(pea internal fibers),豌豆外壳纤维(Peaexternal envelope fibres)和菊粉(inulin)组成的纤维混合物。
惊奇地观察到有以天然饮食纤维为基础这一优势的本发明中的组合物,一方面具有良好的机械特性例如尤其是减少胃肠运输的持续时间,另一方面具有良好的营养和生物特性例如尤其是释放短链脂肪酸,使尤其是在肠道粘膜水平上保持细菌平衡和避免致病菌的生长和发展成为可能。
本发明中的纤维混合物可以含有20-50%豌豆内部纤维,20-40%豌豆外壳纤维和20-60%菊粉。
豌豆内部纤维是由15%纤维素,45%半纤维素和40%果胶组成的纤维。占不溶性部分的66%豌豆内部纤维,一方面具有一种作用于胃肠运输持续时间的机械作用,另一方面具有营养和生物作用,因为这些纤维被肠道菌群酵解并使短链脂肪酸得到释放。这些短链脂肪酸的释放导致了结肠中pH值的降低,因而导致了结肠中致病菌株的生长和发展的减少。脂肪酸的释放对于弥补抗生素的副作用是非常重要的,因为在抗生素治疗过程中肠道菌群不再履行其功能,而含有可溶性部发的高纤维食物使克服这一问题成为可能。而且,短链脂肪酸的释放,例如丁酸,引起结肠中水分和钠离子的吸收,使增加抗腹泻作用成为可能。再者,丁酸是结肠细胞的高能量底物。
豌豆外壳纤维由68%纤维素,25%半纤维素和7%木质素组成。它们构成了10%可溶性部分和90%不溶性部分。它们一方面在肠道中具有保持水分的作用,另一方面在胃肠运输过程中具有机械作用。
菊粉纤维是可溶性纤维,存在于多种植物中例如芦笋,菜蓟,洋葱,小麦或菊苣。菊粉纤维不在小肠中消化。它们在结肠中被酵解。菊粉纤维在消化***中的主要作用是,例如,减少肠道运输的持续时间,降低血糖水平,降低血液中脂类的含量,降低结肠中的pH值,减少便秘现象和双裂效果(bifidogenic effect)。因而,菊粉纤维可被双歧杆菌酵解,结果增加了这些细菌在肠道菌群中的浓度并且减低了肠道菌群中的肠细菌,尤其是梭状芽胞杆菌的浓度。
本发明中的组合物可以包括,例如,1-5%纤维混合物,15-30%蛋白质,40-65%碳水化合物,15-20%脂类,1-2%维生素和/或0.5-0.8%矿物盐。
在本发明的组合物中,菊粉可以被寡糖或寡糖混合物代替。寡糖可以是,例如,半乳糖-寡糖,果糖-寡糖,木糖-寡糖或淀粉的寡聚衍生物。
此组合物可被试图用于,例如,肠营养。它具有可溶性饮食纤维和不溶性饮食纤维之间的良好的平衡。而且,此组合物可以容易地通过肠途径给药,或通过重力,利用适于良好营养服用的稳定的流速,或通过泵***。事实上,一方面如果流速太慢,构成肠营养组合物的食物产品的增效作用会失去,而另一方面如果流速太高,会引起吸收和耐受性紊乱。
试图用于肠营养此组合物可以是一种组合物,它包括一种具有,例如,45-55%比例的可溶性部分和45-55%的不溶性部分的纤维混合物。此比例使最大限度地利用这两部分各自的优势成为可能。
再者,为肠营养设计的此组合物可以具有低于例如12cp的粘度,例如在Rheomate型粘度计的帮助下可以测定出剪切力,从而由此数值计算出粘度水平。
本发明中的营养组合物在以下的物理化学数据和以下的应用实例的帮助下,进行了更加详细的描述。
试验1:一种以豌豆内部纤维,豌豆外壳纤维和菊粉为基础的营养组合物的物理化学分析
制备一种本发明中的以纤维为基础的营养组合物。
为此目的,将5g/l的豌豆内部纤维,5g/l的豌豆外壳纤维和5g/l的菊粉于65-70℃混合在脱矿质水中。
将此混合物打散5分钟,通过一个胶体磨后贮存于搅拦的罐中。
同时,通过将39g/l的脂类混合物与1.4g/l的乳化剂硬脂酸甘油混合起来制备一种前制乳浊液。
然后将此前制乳浊液与纤维混合物混合。为此目的,将它们通过胶体磨。
从而获得一种冷却到60℃的乳浊液。
经过乳化阶段后,加入37.5g/l的蛋白质混合物,125g/l的碳水化合物以及300g/l的各种矿物盐的混合物,以便产生出均质的制备物。
通过在25℃混合2g/l的维生素到脱矿质水中制备一种维生素的水溶液。
将此维生素的水溶液加入到制备物中。
获得一种本发明中的营养组合物,其pH值被调至7.1。
此营养组合物在150℃下热处理6秒钟,然后,在6℃贮存。
在室温下贮存一个月后,测定营养组合物的颗粒大小,粘度,质地及稳定性。此外,对营养组合物的口味进行评价。
所有这些测量值都被列于以下表工中。

表I中的测试结果表明本发明中的组合物具备非常适合于在肠营养领域中使用的特点。事实上,由于其低粘度,此组合物很适合于通过重力进行作用。而且,此组合物具有非常好的稳定性。在室温下贮存一个月后,没有发现沉淀物存在。

实施例1
制备一种本发明中的为肠营养设计的营养组合物。
为此目的,按试验1中描述的方式制备一种组合物。
此组合物在无菌环境中被分装到200ml的塑料袋中,密封后在10℃贮存。
然后,将这些袋子中中的组合物通过重力由肠途经给病人服用。因为其合适的粘度,此组合物具有适合于良好的营养服用的均匀流速。
实施例2
制备一种富含纤维的甜点奶油。
为此目的,一种由1.03kg豌豆内部纤维,0.55kg豌豆外壳纤维和0.55kg菊粉组成的纤维混合物于70℃在混合器中通过搅拌被混入20升脱矿质水中。此纤维混合物保持搅拌5分钟使其成为水合物。然后,此纤维混合物在室温下保存。
然后,在混合器中于70℃制备一种含有10升脱矿质水,0.3kg硬脂酸甘油,2.13kg黄油和5.95kg脱脂奶粉的组合物。
将此混合物在胶体磨中研磨以产生前制乳浊液。
仍然通过搅拌,将5.95kg脱脂奶粉混入加热至70℃的3升脱矿质水中,然后合并到事先已加入水合纤维混合物的前制乳浊液中。
通过搅拌将加热至70℃的24升脱矿质水加入到上述整个溶液中,随后再加入0.12kg角叉藻聚糖,6.5kg蔗糖,0.65kg葡萄糖浆,1.7kg修饰淀粉,6.25kg牛奶蛋白质,76g氯化镁,5.4g硫酸铁,4g硫酸锌,55g β-胡萝卜素,0.16kg香草调料,20g维生素混合液,40g抗坏血酸钠,0.65kg脱水葡萄糖浆和0.66kg磷酸氢二钠。
然后,调至每100g脱矿质水中29g将干提取物回收。
然后,将得到的产物除气至-500mbar并且在管状灭菌器中于150℃杀菌7秒钟。如此生产出的甜点奶油随后被冷却至17℃并且包装到密封的125g装的塑料罐中。
实施例3
制备一种以苹果为基础的,富含纤维的谷物块。
为此目的,将一种含有200g大豆卵磷脂,3.7kg葵花油和3.7kg豆油的混合物加热至40℃。
一种温度为90℃且含有10.5kg寡果糖浆,9.6kg葡萄糖浆和3kg果糖的混合物被加入到上述油类混合物中。
从而,整个获得的混合物被混合至温度为75℃。
然后,加入5.7kg牛奶蛋白质,6.25kg豌豆内部纤维,3kg菊粉,545碳酸钙,1.5kg苹果粉,3kg脱水苹果,145.1g维生素,500g明胶,1.5kg苹果调料,16g浸出蛋白质混合物,10kg大豆和5kg小麦胚芽。
然后将此混合物在旋转的带凹槽的滚轴间压紧以便形成连续的条状产品,将其经过通风冷却通道进行冷却,最后切割成每个13mm厚,60mm宽和90mm长的棒。
将每个块包装在密封的袋子中。
Claims (7)
1.以纤维为基础的营养组合物,它包括至少一种由豌豆内部纤维,豌豆外壳纤维和菊粉组成的纤维混合物。
2.权利要求1中的组合物,其中纤维混合物含有20-50%豌豆内部纤维,20-40%豌豆外壳纤维和20-60%菊粉。
3.权利要求1和2中的组合物,其中菊粉被一种寡糖或寡糖混合物替代。
4.权利要求1中的组合物,包括至少1-5%纤维混合物,15-30%蛋白质,40-65%碳水化合物,15-20%脂类,1-2%维生素和/或0.3-5%矿物盐。
5.权利要求4中的组合物,其特征在于,它是一种试图用于肠营养的组合物。
6.权利要求4中的组合物,其特征在于,纤维混合物具有45-55%比例的可溶性部分和45-55%比例的不溶性部分。
7.权利要求4中的组合物,其特征在于,它具有低于12cp的粘度。
