Abstract

本发明涉及一种速冻莲子的生产工艺。特别是速冻“建莲”的生产工艺。其特征在于按以下工序步骤进行:(1)将采摘下来的莲子经通芯处理工序去芯;(2)按以下配比配制浸泡溶液:乙二胺四乙酸二钠0.02-0.15%、维生素C 0.1-0.3%、余量为水;(3)将经通芯处理后的莲子置入浸泡溶液中浸泡;(4)经洗清后快速冻结,制成速冻产品后冷藏。该工艺制成的速冻莲子不仅有利于较长时期的冷藏保存,而且易煮烂,无褐变,便于食用,品味好。

速冻莲子的生产工艺
技术领域
本发明涉及一种速冻莲子的生产工艺,特别是速冻“建莲”的生产工艺。
背景技术
建莲粒大,色白,莲香浓郁,是福建省建宁县特产的优质产品,也是福建省出口创汇的主要农产品。然而传统的晒干工艺;不仅难以保持原有的品味,而且食用时需先浸泡几十分钟,然后再用高压锅蒸煮,十分不方便。
发明内容
本发明的目的是要提供一种速冻莲子的生产工艺,该工艺制成的速冻莲子不仅有利于较长时间的冷藏保存,而且易煮烂,无褐变,便于食用,品味好。
本发明的特征在于按以下工艺步骤进行:(1)将采摘下来的鲜莲经通芯处理工序去芯;(2)按以下配比配制浸泡溶液:乙二胺四乙酸二钠0.02-0.15%、维生素C0.1-0.3%、余量为水;(3)将经通芯处理后的莲子置入浸泡溶液中浸泡;(4)经洗清后快速冻结,制成速冻产品后冷藏。
本发明一是由于将经通芯处理后的莲子置入采用乙二胺四乙酸二钠和维生素C配制的浸泡溶液中浸泡,因此能使酶失去活性,有效防止因芯部组织损伤而产生氧化酶致使色泽褐变的现象发生。二是由于采用速冻工艺,因此能较好地保持了莲子的新鲜品味和清香。故较之传统的干莲而言,本发明工艺制成的速冻莲子不仅有利于莲子的较长时间的冷藏保存,而且易煮烂,无褐变,便于食用,品味好。
具体实施方式
下面结合实施例对发明予于具体描述:
本发明实施例的工艺步骤如下:(1)将采摘下来的鲜莲经通芯处理工序去芯;(2)按以下配比配制浸泡溶液:乙二胺四乙酸二钠0.02-0.15%、维生素C0.1-0.3%、余量为水;(3)将经通芯处理后的莲子置入浸泡溶液中浸泡,浸泡的时间为20-40分钟;(4)经洗清后快速冻结,制成速冻产品后冷藏。
在本发明最佳实施例中:(1)按以下配比配制浸泡溶液:乙二胺四乙酸二钠0.1%、维生素C0.2%、水99.7%;(2)将莲子置入浸泡溶液中浸泡的时间为30分钟。
上述的莲子采用福建建宁地区出产的莲子为宜。
本发明工艺简单,制成品品质佳且便于食用,应用前景可观。

Claims (4)

1.一种速冻莲子的生产工艺,其特征在于按以下工序步骤进行:
(1)将采摘下来的莲子经通芯处理工序去芯:
(2)按以下配比配制浸泡溶液:乙二胺四乙酸二钠0.02-0.15%、维生素C 0.1-0.3%、余量为水;
(3)将经通芯处理后的莲子置入浸泡溶液中浸泡;
(4)经洗清后快速冻结,制成速冻产品后冷藏。
2.根据权利要求1所述的速冻莲子的生产工艺,其特征在于所述的莲子为福建省建宁地区出产的莲子。
3.根据权利要求1或2所述的速冻莲子的生产工艺,其特征在于:将莲子置入浸泡溶液中浸泡的时间为20-40分钟。
4.根据权利要求3所述的速冻莲子的生产工艺,其特征在于:
(1)按以下配比配制浸泡溶液:乙二胺四乙酸二钠0.1%、维生素C 0.2%、水99.7%;
(2)将莲子置入浸泡溶液中浸泡的时间为30分钟。
