本发明涉及功能性食品技术领域,具体而言,涉及一种肠胃调理促进食欲的组合物、饮料及其制备方法。
背景技术
营养是儿童生长发育的物质基础,任何一种食物都不能完全满足儿童生长发育的需要。儿童的饮食行为和习惯不仅影响其生长发育,而且与成年后的健康及多种疾病的发生密切相关。王芳等研究180例儿童饮食行为调查分析发现,有53.3%的儿童有挑食的行为,其中有39.4%儿童有1-3种食物不吃;有28.9%的儿童经常对食物不感兴趣、厌食。
厌食症,主要发生在1-6周岁的小儿群体当中。该病的主要表现为食欲减退、食量减少,进而引起营养不良和维生素、微量元素缺乏,严重影响生长发育,并可能导致其他疾病发生,如贫血、佝偻以及发育迟缓等等,临床向来非常重视对该病的治疗。
形成本病的病因较多,中医认为小儿时期脾常不足,加之饮食不知自调,挑食,偏食,好吃零食,食不按时,饥饱不一;大多数由于家长缺乏育儿知识,过度宠溺幼儿,饮食不加节制,从而脾胃转运失司,受纳失常,以致食欲不振,日久形成厌食。食积内存,首伤脾胃,小儿体弱,护顾不周常引发他病。脾胃一伤,先天元气不得水谷精微滋养,则病之所由生,引起患儿纳差、厌食等。若厌食日久不愈,营养不足,可继发疳证、营养不良、贫血等疾病。
食积,又称伤食、积滞,是儿科常见的脾系疾病之一,临床以不思乳食,脘腹胀满,食而不化,嗳腐吐酸,大便酸臭或便秘为特征。西医未明确指出其分属于哪个病,目前医学界说法不一,文献中有将积滞归属于小儿消化紊乱、厌食或功能性消化不良等。西医对本病的治疗主要从以下方面:(1)积极治疗原发病;(2)纠正微量元素缺乏,如有缺锌,口服葡萄糖酸锌;(3)助消化剂,如胃酶合剂或酵母;(4)胃动力药,如吗丁啉等;(5)激素疗法,强的松、小剂量胰岛素等。这些治疗方法主要是对症处理,改善症状,不能从根本上治疗患儿胃肠动力不足的问题。
鉴于此,特提出本发明。

本发明的目的在于提供一种肠胃调理促进食欲的组合物、饮料及其制备方法以解决上述技术问题。
本发明是这样实现的:
一种肠胃调理促进食欲的组合物,其包括如下重量份数的原料:麦芽粉10.8-14.8份,山楂粉8.4-12.4份,鸡内金粉2.3-6.3份,橘皮粉7.3-11.3份,莱菔子粉4.4-8.4份,山药粉1.2-5.2份,茯苓粉0.7-1.5份和葡萄糖酸锌0.1-0.18份。
发明人创造性的提供了一种肠胃调理促进食欲的组合物,该组合物的配方具有如下作用和功效:消食健脾、开胃生津、调节脾胃功能、改善食欲。
其中,麦芽粉和山楂粉为君药,小麦芽可以行气消食,山楂用于食积不消;橘皮、莱菔子粉为臣药,可消积除满、消食化积,健胃消食;山药和鸡内金为佐药,可益气养阴、健脾,具有辅佐君臣的作用。脾气薄弱加山药补益气阴;茯苓作为使药,健脾益气,辅以橘皮醒脾和胃,行气化滞,助气助运。
本发明提供的配方原料是经过科学严谨的论证得出的,通过定位人群挑食、厌食原因进行精准定位,本品饮料中的活性成分(总黄酮)优于市面上普通饮品。
本发明所选用的原料均为适合长期服用、有开胃生津和调节脾胃功能的原料,且原料对人体无害,效果显著。
麦芽粉可以消食除胀,宽中下气,醒脾开胃,益气补虚。麦芽又称麦芽、大麦集、麦粟、大麦毛,为禾本科植物大麦的成熟果实经发芽干燥而成。它具有行气消食、健脾开胃、退乳消胀的作用。用于食积不消、脘腹胀痛、脾虚食少。生麦芽健脾和胃,用于脾虚食少、乳汁郁积;炒麦芽行气、消,用于食积不消;焦麦芽消食化滞,用于食积不消、脘腹胀痛,为中医临床上常用的一味消食药。麦芽中含有淀粉酶,可将淀粉分解成麦芽糖,以利于机体吸收。据医学记载,炒麦芽水煎液中提取胰淀粉酶激活剂,经鉴定和验证,提取物中不含其它成分,仅是大量硝酸钙和少量氯化钠的混合物,对胰淀粉酶有显著激活作用,因此,炒麦芽水煎液具有助消化作用的主要成分是硝酸根离子和氯离子。
山楂粉用于肉食积滞,胃脘胀满,高脂血症。山楂粉具有如下功效:消食健胃,可用于各种饮食积滞,尤其善于消化油腻柔石积滞,凡肉食积滞之脘腹胀满,嗳气吐酸,腹痛泄泻者均可使用;行气散瘀:炒焦后可用于泻痢腹痛,疝气腹痛等。山楂炒了之后活血化瘀功能减弱,健胃消食的功效增强,但是炒的山楂仍然有活血化瘀的功效。炒山楂对于肉食有很好的消化作用。炒山楂具有降血脂和降低胆固醇的作用。
鸡内金粉用于食积不消,呕吐泻痢,小儿疳积,遗尿,遗精,石淋涩痛,胆胀胁痛。现代研究表明,鸡内金主要含有蛋白质(胃蛋白酶、淀粉酶、类角蛋白等)、多糖、氨基酸(氨基酸总量为86.924%,其中必需氨基酸占30.264%,鲜味氨基酸占43.018%)等,在刺激肠胃运动,改善血脂、血液流变学和心肌保护方面具有潜在的生物活性。临床上鸡内金粉可以口服,可以治疗很多疾病和症状,特别是纠正患者因脾胃功能虚弱出现的消化***疾病,像食欲不振、身体消瘦、大便秘结甚至儿童的疳积,都适合通过鸡内金粉冲服进行治疗。
橘皮粉用于脘腹胀满,食少吐泻,咳嗽痰多等症状。橘皮中含有丰富的药效成分,主要为黄酮类(橙皮苷、陈皮多甲氧基黄酮、川陈皮素)、挥发油类(柠檬烯)、生物碱类(辛弗林)等。橙皮苷、新橙皮苷、柚皮苷在柑橘类植物果皮中含量较高,多甲氧基黄酮是橘类特有的成分,橘皮中还含有少量类胡萝卜素、维生素C及微量元素等。橘皮粉通常有助于消化,而且具有通气健脾、燥湿化痰、解腻留香、降逆止呕的功效,还有消炎、减少尿量的作用。
莱菔子粉促胃肠动力作用,可以消食化积、除胀行滞,尤以消面积食滞为特长,且其促进胃肠运动的活性部位能增加大鼠血浆MTL的含量,莱菔子行气消食的作用机制可能与促进血浆胃动素的分泌和作用于M受体相关。
山药粉用于脾虚食少,久泻不止等症状。山药粉中含有丰富的蛋白质、人体必需的氨基酸、多种微量元素、多糖、尿囊素、皂苷等多种营养成分及功能因子,具有降血糖、降血脂、抗氧化、抗衰老、增强免疫和抗肿瘤等功效。
茯苓粉用于水肿尿少,痰饮眩悸,脾虚食少,便溏泄泻等症状。茯苓多糖可增强机体免疫功能,具有抑瘤生长、抗脾脏增大和抗胸腺萎缩的作用,既可增强体液免疫,又可增强细胞免疫。
葡萄糖酸锌为白色结晶性或颗粒性粉末;无臭。适用于小儿厌食症、各种皮肤痤疮、复发性阿弗口腔溃疡等缺锌性疾病。参与多种含锌酶和锌依赖酶的合成与激活,对蛋白质合成、核酸合成、肠道蛋白的吸收和消化发挥重要生理功能,可促进生长发育。通过合成味蕾中的味觉素、防止颊黏膜上皮细胞角化不全,以维持正常食欲及味觉。

在本发明应用较佳的实施方式中,上述原料包括:麦芽粉12.8份、山楂粉10.4份、鸡内金粉4.3份、橘皮粉9.3份、莱菔子粉6.4份,山药粉3.2份,茯苓粉1.1份和葡萄糖酸锌0.14份。
在本发明应用较佳的实施方式中,上述原料还包括88.8-128.8份的白砂糖。

在本发明应用较佳的实施方式中,上述制备方法包括将白砂糖88.8-128.8份置于450-550份水中进行熬煮时,边加热边搅拌,熬煮时间大于30分钟;优选的,冷却至45±5℃。
在本发明应用较佳的实施方式中,上述将原料糊状溶液与熬煮后白砂糖溶液混合时,加入21-41份浓缩山楂汁;优选的,加热温度为80-90℃,加热时间为8-12分钟。
加热温度过低,会导致得到的总黄酮的含量降低。通过试验表明,温度升高品尝口感没有明显影响。而随着温度升高有利于黄酮抗氧化活性的提高。
采用炒山楂健脾化食,同时加入山楂浓缩汁。既利用了生山楂消食和助胃健胃消化的功能,同时由于山楂浓缩汁味酸,酸甘化阴,因此山楂浓缩汁又有开胃生津之效。
在本发明应用较佳的实施方式中,上述加入浓缩山楂汁加热后进行冷却,然后加入山楂味香精并定容。以山楂汁及山楂味香精作为调味剂,酸甜可口,广受儿童喜爱。
优选的,定容后进行超滤过滤。通过超滤过滤以滤除杂质。
采用糖度计对糖液、过滤前和过滤后物料进行可溶固形物含量变化进行监测,如果变化超过0.2%则需要补糖。
采用pH计对物料过滤前、均质前和灭菌后进行监测,要求pH必须小于4.0,最好低于3.5,pH在上述条件下才能在100-121℃下灭菌15-30min保持12个月的货架期。饮料总黄酮的含量控制到1.024mg/ml-1.424mg/ml。
在本发明应用较佳的实施方式中,上述定容后还包括灌装、灭菌和包装;优选的,灭菌温度为100-121℃,灭菌时间为15-30min。
通过灌装机进行分装,然后进行灭菌。灭菌后按照包装规格进行包装,码放整齐装箱并用胶带封好,准备入库。质检员监督包装全过程。包装过程中要随时检查产品的包装质量及所用包材的质量。

肠胃调理促进食欲的饮料的制备方法包括如下步骤:
按配方分别称取麦芽粉、山楂粉、鸡内金粉、橘皮粉、莱菔子粉、山药粉、茯苓粉、葡萄糖酸锌置于容器中,加入适量纯化水搅拌至糊状,得到原料糊状溶液。
然后准确称取白砂糖108.8g,加入500g纯化水进行熬煮,且边加热边搅拌均匀,煮沸30分钟后,冷却至45±5℃,备用。

按配方称取麦芽粉、山楂粉、鸡内金粉、橘皮粉、莱菔子粉、山药粉、茯苓粉、葡萄糖酸锌置于容器中,加入适量纯化水搅拌至糊状,得到原料糊状溶液。
然后准确称取白砂糖88.8份,加入480份纯化水进行熬煮,边加热边搅拌均匀,煮沸30分钟后,冷却至45±5℃,备用。

按配方称取麦芽粉、山楂粉、鸡内金粉、橘皮粉、莱菔子粉、山药粉、茯苓粉和葡萄糖酸锌置于容器中,加入适量纯化水搅拌至糊状,得到原料糊状溶液。
然后准确称取白砂糖108.8份,加入520份纯化水进行熬煮,边加热边搅拌均匀,煮沸30分钟后,冷却至45±5℃,备用。
再将35g浓缩山楂汁、原料糊状溶液分别加入白砂糖溶液中,搅拌均匀。加热至85℃保持10分钟,然后冷却至室温,再加入山楂香精,用纯化水定容至全量,搅拌均匀后,采用超滤过滤。

本实施例提供了一种肠胃调理促进食欲的饮料及制备方法,包括如下重量份数的原料:麦芽粉12.8份、山楂粉10.4份、鸡内金粉4.3份、橘皮粉9.3份、莱菔子粉6.4份,山药粉3.2份,茯苓粉1.1份和葡萄糖酸锌0.14份。其制备方法如下:
按配方称取麦芽粉、山楂粉、鸡内金粉、橘皮粉、莱菔子粉、山药粉、茯苓粉、葡萄糖酸锌置于容器中,加入适量纯化水搅拌至糊状,得到原料糊状溶液。
然后准确称取白砂糖108.8份,加入500份纯化水进行熬煮,且边加热边搅拌均匀,煮沸30分钟后,冷却至45±5℃,备用。
再将40g浓缩山楂汁、原料糊状溶液分别加入白砂糖溶液中,搅拌均匀。加热至90℃保持12分钟,然后冷却至室温,再加入山楂香精,用纯化水定容至全量,搅拌均匀后,采用超滤过滤。
最后,通过灌装机将饮料分装成小瓶,在100℃下灭菌30min。
本发明还提供了对比例实施例,从而进一步观察和验证本发明的效果及功效。
对比例1:
一种肠胃调理促进食欲的饮料及制备方法,原料组成与本发明实施例1相同,两者区别仅在于,采用枳实粉替换实施例1中的莱菔子粉,饮料的制备方法相同。
实验过程:2020年5月4日-5月18日,选取实验对象条件如下:本企业员工,年龄在22-55岁,有厌食、积食习惯,共100名。将实验对象随机分成两组,分别为对照组和实验组,每组各50名,对照组服用含有枳实粉的配方,实验组服用本发明实施例1的配方。两组人群中,饮料的服用量相同,服用量为2瓶/天,50mL/瓶,连续服用14d后,观察效果。
对于实验组和对照组的改善饮食效果进行统计,统计结果参照图1所示。疗效判断标准:
显著:症状完全消失;
有效:症状部分消失;
无效:症状无改善。
以问卷调查方式进行疗效反馈。
由图1可知,实验组整体的效果优于对照组,尤其是在积食方面有着显著的改善效果,其对积食和厌食的改善效率分别为90.91%、88.24%,而对照组对积食和厌食的改善效率只有79.31%和76.19%,由此可见,本发明实施例1饮料的消食效果比对比例1更佳。
对比例2
一种肠胃调理促进食欲的饮料及制备方法,原料组成与本发明实施例1相似,区别仅在于,采用了砂仁粉替换实施例1中的陈皮粉,饮料的制备方法相同。
实验过程:2020年5月25日-6月8日,选取实验对象条件如下:本企业员工,年龄在22-55岁,有食欲不振的症状,共100名。将实验对象随机分成两组,分别对照组和实验组,每组各50名,对照组服用含砂仁粉的配方制得的饮料,实验组服用本发明实施例1的配方制得的饮料。两组人群中,饮料的服用量相同,连续服用14d后,观察效果。
实验组和对照组的人群服用后的效果参照图2所示,从图2可以看出,含砂仁粉的饮料和含陈皮粉的饮料都可以改善食欲不振症状,但实验组的效果更优于对照组,其改善效率分别为96%和90%。
口感对比图参照图3所示,由图3口感对比图上看,实验组的口味更佳,更为饮用者接受。由此可见,本发明实施例1提供的配方制得的饮料的无论是消食效果还是口感都优于对比例2。
对比例3:一种肠胃调理促进食欲的饮料及制备方法,原料组成与本发明实施例1相同,不同之处在于,本对比例将浓缩山楂汁、原料糊状溶液,分别加入白砂糖溶液中,搅拌均匀,加热50℃保持10分钟,其他工艺步骤均不变。
实验过程:进行两次实验,分别标注为实验组和对照组,对照组按照对比例3的配方和工艺进行饮料制备,实验组按照实施例1的配方和制备工艺进行饮料制备,最后对两组饮料中总黄酮的含量进行测定。
饮料总黄酮含量测定的方法:
标准液配制:精确称取芦丁对照品20.8mg,置于100mL容量瓶中,加入70%乙醇使其溶解并稀释至刻度,摇匀。
标准曲线绘制:精确称取对照品溶液0、1.0、2.0、3.0、4.0、5.0mL分别置于25mL比色管中,加入0.7mL 5%NaNO2,摇匀,放置5min后加入0.7mL 10%Al(NO3)3,放置6min后再加入5mL 1mol/LNaOH,摇匀,用70%乙醇定容至刻度线,(以蒸馏水代替作空白对照)放置10min后在510nm处测吸光度,以吸光度为纵坐标,标品浓度为横坐标绘制标准曲线。
样液测定:精确称取5g配制的成品饮料于50mL容量瓶中,加入70%乙醇定容至刻度,配制成浓度为0.1g/mL的样品溶液备用(是否要稀释及稀释倍数根据测定吸光值在0.2-0.8范围内即可),吸取5mL稀释后的样品溶液于25mL比色管中,加入0.7mL 5%NaNO2,摇匀,放置5min后加入0.7mL 10%Al(NO3)3,放置6min后再加入5mL、1mol/L NaOH,摇匀,用70%乙醇定容至刻度线,放置10min后在510nm处测吸光度。饮料总黄酮以芦丁的相对量表示,实验均重复3次。
获得的标准曲线为Y=10.883X+0.00003,R2=0.9962,标准曲线参照图4所示。饮料中总黄酮计算按饮料溶液乘以稀释倍数进行计算。
经过重复三次检测后得到以下结果:

通过表1对比结果得出,实验组的黄酮含量多于对照组,其制备工艺更优异,由此可见,本发明实施例1制备工艺较对比例3更加优异,获得的活性成分物质含量多。
通过上述实施例和对比例的实验论证,可以得出本发明提供的肠胃调理促进食欲的饮料具有黄酮含量多,消食效果明显,口感好的优点。

Claims (10)
1.一种肠胃调理促进食欲的组合物,其特征在于,其包括如下重量份数的原料:麦芽粉10.8-14.8份,山楂粉8.4-12.4份,鸡内金粉2.3-6.3份,橘皮粉7.3-11.3份,莱菔子粉4.4-8.4份,山药粉1.2-5.2份,茯苓粉0.7-1.5份和葡萄糖酸锌0.1-0.18份。
2.根据权利要求1所述的组合物,其特征在于,所述原料包括:麦芽粉11.8-13.8份,山楂粉9.4-11.4份,鸡内金粉3.3-5.3份,橘皮粉8.3-10.3份,莱菔子粉5.4-7.4份,山药粉2.2-4.2份,茯苓粉0.9-1.3份和葡萄糖酸锌0.12-0.16份。
3.根据权利要求2所述的组合物,其特征在于,所述原料包括:麦芽粉12.8份、山楂粉10.4份、鸡内金粉4.3份、橘皮粉9.3份、莱菔子粉6.4份,山药粉3.2份,茯苓粉1.1份和葡萄糖酸锌0.14份。
4.根据权利要求2所述的组合物,其特征在于,所述原料还包括88.8-128.8份的白砂糖。
5.一种肠胃调理促进食欲的饮料,其特征在于,所述饮料包括如下重量份数的原料:麦芽粉10.8-14.8份,山楂粉8.4-12.4份,鸡内金粉2.3-6.3份,橘皮粉7.3-11.3份,莱菔子粉4.4-8.4份,山药粉1.2-5.2份,茯苓粉0.7-1.5份,葡萄糖酸锌0.1-0.18份,白砂糖88.8-128.8份和水。
6.一种如权利要求5所述的饮料的制备方法,其特征在于,其包括:按配方称取麦芽粉、山楂粉、鸡内金粉、橘皮粉、莱菔子粉、山药粉、茯苓粉、葡萄糖酸锌置于容器中,加水搅拌得到原料糊状溶液,称取白砂糖88.8-128.8份置于水中进行熬煮,再将原料糊状溶液与熬煮后的白砂糖溶液混合,加热。
7.根据权利要求6所述的饮料的制备方法,其特征在于,所述制备方法包括将白砂糖88.8-128.8份置于450-550份水中进行熬煮时,边加热边搅拌,熬煮时间大于30分钟;优选的,熬煮后冷却至45±5℃。
8.根据权利要求6所述的饮料的制备方法,其特征在于,将原料糊状溶液与熬煮后白砂糖溶液混合时,加入21-41份浓缩山楂汁;优选的,加热温度为80-90℃,加热时间为8-12分钟。
9.根据权利要求8所述的饮料的制备方法,其特征在于,加入浓缩山楂汁加热后进行冷却,然后加入山楂味香精并定容;
优选的,定容后进行超滤过滤。
10.根据权利要求9所述的饮料的制备方法,其特征在于,定容后还包括灌装、灭菌和包装;优选的,灭菌温度为100-121℃,灭菌时间为15-30min。
