Abstract
本发明公开一种健康型高蛋白米粉,包括以下重量百分比组分:非转基因大米蛋白粉5‑40%;非转基因大米米粉40‑70%;低聚糖10‑30%;植物或果蔬粉5‑15%;瓜尔胶0.1‑1%;黄原胶0.05‑0.5%;甜叶菊0.01‑0.05%。本发明采用低聚糖代替传统的蔗糖、阿斯巴甜,热量值接近零,抑制体内血糖升高,活化肠道有益菌,并通过添加药食两用植物或果蔬粉,改善口味,提高保健效果,可供糖尿病人、肥胖病人和低血糖病人食用。

技术领域
本发明涉及功能性米粉加工领域,具体涉及一种健康型高蛋白米粉。
背景技术
大米性甘味平,具有健脾养胃、益精强志和聪耳目明之功效,被誉为“五谷之首”。明代医药学家李时珍在《本草纲目》 中称大米具有“和五脏, 好颜色” 的妙用。 而《食物本草》中则称大米能“充滑肌肤,可以养颜”,可见大米具有明显改善皮肤营养状况和促进皮肤光滑细腻的美容效果。
大米米粉是通过大米熟化粉碎后制得的一种大米制品,在生产过程中,通过科学的加工工艺,不仅可以减少大米蛋白质、氨基酸等营养成分的损失,还能将大米淀粉改性成易被人体吸收的熟化大米淀粉。目前,大米米粉被广泛应用婴幼儿辅食制品及成年人代餐粉产品。
现代医学研究表明,大米蛋白含人体必需的各种氨基酸,其氨基酸组成模式优于酪蛋白和大豆分离蛋白,生物价高达77%,接近“完全蛋白”。以7.2%的大米蛋白含量计,下表列出大米中不同氨基酸的含量:
现有技术,一般通过在大米米粉中添加大量蔗糖、果糖等甜味剂,提高甜度和口感,食用后,体内血糖浓度骤增,不符合糖尿病人、肥胖病人、高血压病人等人群的食用要求,且蛋白含量和保健价值都较低。申请号CN201310358430.6的专利,公开一种复合型高大米蛋白固体饮料及其制备方法,以三氯蔗糖或阿斯巴甜作为甜味剂,三氯蔗糖虽然安全性高,但生产技术难度大,阿斯巴甜俗称甜蜜素,在人体内代谢分解为甲醇、天冬氨酸和苯丙氨酸,可造成神经细胞致死性伤害,孕妇、婴幼儿、苯丙酮尿症患者等人群不宜食用。
发明内容
针对现有技术的不足之处,本发明的目的在于提供一种健康型高蛋白米粉。
本发明的技术方案概述如下:
一种健康型高蛋白米粉,包括以下重量百分比组分:非转基因大米蛋白粉5-40%;非转基因大米米粉40-70%;低聚糖10-30%;植物或果蔬粉5-15%;瓜尔胶0.1-1%;黄原胶0.05-0.5%;甜叶菊0.01-0.05%。
优选的是,所述高蛋白米粉包括以下重量百分比组分:非转基因大米蛋白粉18-24%;非转基因大米米粉40-60%;低聚糖12-20%;植物或果蔬粉9-14.5%;瓜尔胶0.6-1%;黄原胶0.37-0.45%;甜叶菊0.03-0.05%。
所述非转基因大米蛋白粉和非转基因大米米粉的转基因蛋白检出率小于万分之一。
优选的是,所述低聚糖包括水苏糖、棉子糖、低聚果糖、低聚木糖、低聚牛乳糖、低聚乳果糖、低聚异麦芽糖的一种或任意几种。
优选的是,所述植物或果蔬粉的原料为有机制品。
优选的是,所述植物或果蔬粉包括胡萝卜粉、杏仁粉、苦瓜粉、山药粉、人参粉、红豆粉、红枣粉、抹茶粉、枸杞粉、薏米粉、黑米粉、黑豆粉、南瓜粉、百合粉、蒲公英粉、灵芝粉、芦荟粉的一种或任意几种。
优选的是,所述高蛋白米粉的食用方法如下:采用温开水冲散,一天服用2次,每次用量为20g。
优选的是,所述高蛋白米粉适用于婴幼儿除外的人群,包括糖尿病人、肥胖病人或低血糖病人。
本发明的有益效果:
本发明采用低聚糖代替传统的蔗糖、果葡糖浆、阿斯巴甜等甜味剂,热量值接近零,可有效抑制体内血糖升高,活化肠道有益菌,再通过添加药食两用植物或果蔬粉,提升产品的特征香气和保健高效,可供糖尿病人、肥胖病人和低血糖病人食用,并以瓜尔胶和黄原胶作为稳定剂,加速米粉分散和溶解,使其保持较均一的悬浮状态。
具体实施方式
下面结合实施例对本发明做进一步的详细说明,以令本领域技术人员参照说明书文字能够据以实施。
本发明提出一实施例的健康型高蛋白米粉,包括以下重量百分比组分:非转基因大米蛋白粉5-40%;非转基因大米米粉40-70%;低聚糖10-30%;植物或果蔬粉5-15%;瓜尔胶0.1-1%;黄原胶0.05-0.5%;甜叶菊0.01-0.05%。
本发明以非转基因大米米粉作为主料,熟化后大米淀粉更易吸收,能快速补充人体所需蛋白质和能量,改善肠道环境,其较优的配方区间为40-60%,以非转基因大米蛋白粉作为辅料,是蛋白质的主要来源,由清蛋白组件、球蛋白组件、醇溶性蛋白组件和谷蛋白组件构成,富含人体必需氨基酸,其较优的配方区间为18-24%,上述非转基因大米米粉和非转基因大米蛋白粉中转基因检出率小于万分之一,安全无害,以低聚糖作为甜味剂,是高蛋白米粉甜味的主要来源,包括水苏糖、棉子糖、低聚果糖、低聚木糖、低聚牛乳糖、低聚乳果糖、低聚异麦芽糖的一种或任意几种,区别于传统蔗糖、阿斯巴甜、果葡糖浆类甜味剂,更加安全可靠,不会引发起体内血糖浓度升高,可供糖尿病人、肥胖病人和低血糖病人食用,低聚糖在人体中无法被消化吸收,热量值几乎为零,不会引起牙齿龋齿,有利于保持口腔卫生,还具有膳食纤维的部分生理功能,活化肠道内双歧杆菌,并促进其生长繁殖,改善肠道环境,其较优的配方区间为12-20%,组分中的植物或果蔬粉为药食两用的有机制品,包括胡萝卜粉、杏仁粉、苦瓜粉、山药粉、人参粉、红豆粉、红枣粉、抹茶粉、枸杞粉、薏米粉、黑米粉、黑豆粉、南瓜粉、百合粉、蒲公英粉、灵芝粉、芦荟粉的一种或任意几种,有效补充人体所需矿物质和维生素,并改善高蛋白米粉的口感和香气,其较优的配方区间为9-14.5%,瓜尔胶和黄原胶作为稳定剂,加速高蛋白米粉在水中分散和溶解,两者较优配方区间分别为0.6-1%、0.37-0.45%,以甜叶菊作为辅助甜味剂,具有治疗糖尿病、控制肥胖症、控制血糖、降低血压、抗肿瘤、促进新陈代谢等药用功能,其较优的配方区间为0.03-0.05%。
上述健康型高蛋白米粉采用温开水冲散,效果最佳,能较好保持米粉的悬浮状态,不沉淀分层,口感顺滑爽口,具有植物或果蔬粉的特征香味,一天服用2次,每次用量为20g,适用于婴幼儿除外的大部分人群,包括糖尿病人、肥胖病人或低血糖病人。

上述实施例5:低聚糖成分为水苏糖、低聚木糖、低聚牛乳糖,植物或果蔬粉成分为枸杞粉、薏米粉、黑米粉;
上述实施例6:低聚糖成分为低聚木糖、低聚牛乳糖、低聚乳果糖,植物或果蔬粉成分为黑豆粉、南瓜粉、百合粉、蒲公英粉;
上述实施例7:低聚糖成分为棉子糖、低聚乳果糖、低聚异麦芽糖,植物或果蔬粉成分为灵芝粉、芦荟粉、红枣粉、枸杞粉;
上述对比例1:植物或果蔬粉成分为胡萝卜粉。
选择450名体重及身高相近的肥胖症患者,随机分为9组,每组50人,并依次编号为实1-实7、对1-对2,每组分别在餐前饮用相应实施例及对比例冲调的米粉饮品,一天服用2次,每次用量为20g,连续服用6周,并记录体重变化,以±表示增降趋势。
表2列出饮用不同实施例和不同对比例的9组肥胖症患者体重变化:

由表2可知,添加低聚糖的高蛋白米粉能明显抑制肥胖病人体重的增长,长期食用,可达到较好的减重效果。
选择450名血糖浓度初始值相近的糖尿病患者,随机分为9组,每组50人,并依次编号为实1-实7、对1-对2,每组分别在餐前饮用相应实施例及对比例冲调的米粉饮品,一天服用2次,每次用量为20g,连续服用6周,并记录血糖浓度变化,以±表示增降趋势。
表3列出饮用不同实施例和不同对比例的10组成年人浓度变化:

由表3可知,添加低聚糖的高蛋白米粉能明显降低糖尿病人的血糖值,可供糖尿病人长期食用。
尽管本发明的实施方案已公开如上,但其并不仅仅限于说明书和实施方式中所列运用,它完全可以被适用于各种适合本发明的领域,对于熟悉本领域的人员而言,可容易地实现另外的修改,因此在不背离权利要求及等同范围所限定的一般概念下,本发明并不限于特定的细节。
Claims (8)
1.一种健康型高蛋白米粉,其特征在于,包括以下重量百分比组分:非转基因大米蛋白粉5-40%;非转基因大米米粉40-70%;低聚糖10-30%;植物或果蔬粉5-15%;瓜尔胶0.1-1%;黄原胶0.05-0.5%;甜叶菊0.01-0.05%。
2.根据权利要求1所述一种健康型高蛋白米粉,其特征在于,所述高蛋白米粉包括以下重量百分比组分:非转基因大米蛋白粉18-24%;非转基因大米米粉40-60%;低聚糖12-20%;植物或果蔬粉9-14.5%;瓜尔胶0.6-1%;黄原胶0.37-0.45%;甜叶菊0.03-0.05%。
3.根据权利要求1所述一种健康型高蛋白米粉,其特征在于,所述非转基因大米蛋白粉和非转基因大米米粉的转基因蛋白检出率小于万分之一。
4.根据权利要求1所述一种健康型高蛋白米粉,其特征在于,所述低聚糖包括水苏糖、棉子糖、低聚果糖、低聚木糖、低聚牛乳糖、低聚乳果糖、低聚异麦芽糖的一种或任意几种。
5.根据权利要求1所述一种健康型高蛋白米粉,其特征在于,所述植物或果蔬粉的原料为有机制品。
6.根据权利要求5所述一种健康型高蛋白米粉,其特征在于,所述植物或果蔬粉包括胡萝卜粉、杏仁粉、苦瓜粉、山药粉、人参粉、红豆粉、红枣粉、抹茶粉、枸杞粉、薏米粉、黑米粉、黑豆粉、南瓜粉、百合粉、蒲公英粉、灵芝粉、芦荟粉的一种或任意几种。
7.根据权利要求1-6任一项所述一种健康型高蛋白米粉,其特征在于,所述高蛋白米粉的食用方法如下:采用温开水冲散,一天服用2次,每次用量为20g。
8.根据权利要求1-7任一项所述一种健康型高蛋白米粉,其特征在于,所述高蛋白米粉适用于婴幼儿除外的人群,包括糖尿病人、肥胖病人或低血糖病人。
