本发明涉及功能饮料技术领域,具体涉及一种青少年魔芋葡苷聚糖饮料及其制备方法。
背景技术
青少年正处于生长发育的黄金时期,身体和心理发育变化较大。在这个时期,青少年内分泌活跃,代谢旺盛,活泼好动,需要消耗大量的能量,且该阶段青少年学习压力较大,容易用脑过度,需要补充大量的营养物质,然而仅仅通过日常饮食补充能量,不能完全满足青少年的需求。青少年多数存在挑食、厌食、偏食等不良习惯,这会导致对营养吸收不均衡,身体容易营养失调。饮料广受青少年喜爱,但目前市场上的各种饮料,大多数是高糖高酸产品,有效成分含量低,无法为青少年提供所需的营养成分,甚至会导致蛀牙和肥胖,少数功能性饮料存在原料单一且含量不足,功能性作用不突出的问题。因此,如何科学、合理地研制出一款能够满足青少年生理需求,合理补充所需营养,帮助青少年调整身体素质和不良情绪的饮料,是目前亟需解决的问题。

为了解决上述问题,本发明提供了一种青少年魔芋葡苷聚糖饮料及其制备方法,在补充青少年生长发育营养需求的同时,能够提高青少年的免疫力,增强体质,促进青大脑和身体的生长发育,调节不良情绪,使青少年健康生长发育。

一种青少年魔芋葡苷聚糖饮料,由以下重量份的原材料组成:魔芋葡苷聚糖8~18份、大豆多肽4~9份、蒸熟芋艿30~40份、α-淀粉酶1~3份、抗凝剂5~8份、蔗糖8~16份、柠檬酸6~12份、复合维生素0.5~1份、矿物质0.2~0.8份,水至250份。

优选地,所述魔芋葡苷聚糖的制备方法为:
a.将魔芋切成3~4mm薄片,45~60℃烘干,超微粉碎,过350~500目筛,将魔芋粉置于60~100mL石油醚中,于30~50℃下回流6~8h,脱脂脱色,旋蒸去除石油醚,得脱脂脱色魔芋;
b.在脱脂脱色魔芋中按料液比为1:20加入5mol/LNaOH,加热搅拌,加入5mol/LHCl调至pH为7,再按料液比为1:10~15加入中性Pb(AC)2和5~8g/m3H2S混匀,减压浓缩至原体积的1/3,加入75%无水乙醇,经4000r/min离心25~30min,取沉淀干燥,得葡甘聚糖粗制品;
c.按料液比1:18~20向葡苷聚糖粗制品加入78~84%无水乙醇,置于超声功率208W、60℃下提取20~22min,于4500r/min条件下离心,取上清液浓缩至体积为上清液的1/4,得浓缩液;
d.加入与浓缩液等体积的95%无水乙醇,醇沉10~12h,在4500r/min条件下离心10min,弃上清液,去除溶剂,冷冻干燥,得魔芋葡苷聚糖。
优选地,所述大豆多肽的制备方法为:
a.取新鲜大豆洗净粉碎,过80目筛,按料液比为1:9加入蒸馏水搅拌均匀,用0.1mol/L氢氧化钠溶液调节pH至9,浸提1h,取提取液经3800r/min离心10min,取上清液,加入0.1mol/L盐酸调节pH至4.5,经3800r/min离心10min,取沉淀物,得大豆复合蛋白物;
b.取大豆复合蛋白物加水配制成5%水溶液,用0.1mol/LNaOH调节溶液pH为9,加入1%复合蛋白酶,在55℃水浴恒温振荡器中进行酶解6h,每隔30min滴加0.1mol/L氢氧化钠溶液保持pH,酶解结束后,加热升温至85℃,保温10min灭酶,再置于4℃下,经4000r/min离心10min,取上清液浓缩至1g/mL,得大豆多肽。
优选地,所述抗凝剂的制备方法为:按抗凝剂组份配比取鲜薜荔、鲜蒟蒻、鲜薯蓣、鲜荸荠,加入水中,搅拌成浆,过滤,得抗凝剂。
本发明还提供一种魔芋葡苷聚糖饮料的制备方法,包括以下步骤:
(1)取蒸熟芋艿、α-淀粉酶和水混合搅拌2~10min,成混合浆,于50~60℃保温2.5~4.5h,压滤去渣,得滤液;
(2)取抗凝剂加入15~20mL水加热至完全溶解,加入到步骤(1)滤液中搅拌均匀,得溶液;
(3)将魔芋葡苷聚糖、大豆多肽、蔗糖、柠檬酸、复合维生素、矿物质混合,加入步骤(2)所得的溶液中,搅拌均匀,得饮料原液;
(4)将步骤(3)调配好的饮料原液置于75℃,20~30MPa下均质2次,然后在120℃下杀菌3s;
(5)待料温降至85℃时,灌装,密封,然后在120℃下灭菌15min,得青少年魔芋葡苷聚糖饮料。
本发明所述各主要功效成分作用机理如下:
魔芋中的魔芋葡甘聚糖是一种优异的膳食纤维,具有清理肠道、提高耐糖能力、防止肥胖、改善胆固醇代谢等功能,能够增强人体机能,促进肌红细胞复原,具有一定的抗疲劳功效。
大豆多肽易于消化吸收,还具有少量的游离氨基酸、糖类和无机盐成分,可以提高机体的抗氧化能力,增强机体免疫力,促进骨骼肌蛋白质的合成,还可以促进对矿物质、维生素的吸收。
抗凝剂是植物天然提取物,分子中的悬浮亲水基团抑制了饮料中沉淀的生成,能够解决饮用时造成沙砾感的现象,改善饮料的口感,提高产品质量,使制成的饮料口感细腻能长期存放,且不会产生分层现象。
与现有技术相比,本发明的有益之处为:
1、本发明从魔芋中提取魔芋葡苷聚糖,所得魔芋葡苷聚糖是一种天然的高分子可溶性膳食纤维,具有清理肠道、提高耐糖能力、防止肥胖、改善胆固醇代谢等功能,将其添加至饮料中,能增强青少年的体质,预防青少年肥胖症的发生,且具有一定的抗疲劳效果;
2、本发明从新鲜大豆中提取大豆多肽,所得大豆多肽含蛋白质丰富,且容易被青少年消化吸收,将其添加至饮料中,能够为青少年提供充足的蛋白质等营养成分,促进青少年骨骼肌蛋白质的合成,提高青少年的抗氧化能力;
3、本发明还添加了抗凝剂,能够改善饮料的口感,使饮料口感细腻鲜美,且能使饮料长期存放而不发生分层现象;
4、本发明将魔芋葡苷聚糖、大豆多肽复配制成一种青少年魔芋葡苷聚糖饮料,能够提高青少年的免疫能力和抗氧化能力,改善胆固醇代谢,预防青少年肥胖,使青少年健康生长发育。

实施例1
一种青少年魔芋葡苷聚糖饮料,由以下重量份的原材料组成:魔芋葡苷聚糖8份、大豆多肽9份、蒸熟芋艿30份、α-淀粉酶3份、抗凝剂5份、蔗糖16份、柠檬酸6份、复合维生素1份、矿物质0.2份,水至250份。
所述抗凝剂由以下重量份的原材料组成:鲜薜荔0.5份、鲜蒟蒻2份、鲜薯蓣0.5份、鲜荸荠3份。
所述复合维生素由以下重量份的原材料组成:维生素B10.06份、维生素B20.06份、维生素B30.005份、维生素B50.015份、维生素D0.05份。
所述矿物质由以下重量份的原材料组成:乳酸锌0.01份、乳酸钙0.5份、磷酸氢二钠0.05份、氯化钠0.2份、氯化钾0.1份、硫酸镁0.12份、***钠0.0001份。
所述魔芋葡苷聚糖的制备方法为:a.将魔芋切成3~4mm薄片,45~60℃烘干,超微粉碎,过350~500目筛,将魔芋粉置于60~100mL石油醚中,于30~50℃下回流6~8h,脱脂脱色,旋蒸去除石油醚,得脱脂脱色魔芋;b.在脱脂脱色魔芋中按料液比为1:20加入5mol/LNaOH,加热搅拌,加入5mol/LHCl调至pH为7,再按料液比为1:10~15加入中性Pb(AC)2和5~8g/m3H2S混匀,减压浓缩至原体积的1/3,加入75%无水乙醇,经4000r/min离心25~30min,取沉淀干燥,得葡甘聚糖粗制品;c.按料液比1:18~20向葡苷聚糖粗制品加入78~84%无水乙醇,置于超声功率208W、60℃下提取20~22min,于4500r/min条件下离心,取上清液浓缩至体积为上清液的1/4,得浓缩液;d.加入与浓缩液等体积的95%无水乙醇,醇沉10~12h,在4500r/min条件下离心10min,弃上清液,去除溶剂,冷冻干燥,得魔芋葡苷聚糖。
所述大豆多肽的制备方法为:a.取新鲜大豆洗净粉碎,过80目筛,按料液比为1:9加入蒸馏水搅拌均匀,用0.1mol/L氢氧化钠溶液调节pH至9,浸提1h,取提取液经3800r/min离心10min,取上清液,加入0.1mol/L盐酸调节pH至4.5,经3800r/min离心10min,取沉淀物,得大豆复合蛋白物;b.取大豆复合蛋白物加水配制成5%水溶液,用0.1mol/LNaOH调节溶液pH为9,加入1%复合蛋白酶,在55℃水浴恒温振荡器中进行酶解6h,每隔30min滴加0.1mol/L氢氧化钠溶液保持pH,酶解结束后,加热升温至85℃,保温10min灭酶,再置于4℃下,经4000r/min离心10min,取上清液浓缩至1g/mL,得大豆多肽。
所述抗凝剂的制备方法为:按抗凝剂组份配比取鲜薜荔、鲜蒟蒻、鲜薯蓣、鲜荸荠,加入水中,搅拌成浆,过滤,得抗凝剂。
上述一种青少年魔芋葡苷聚糖饮料的制备方法,包括以下步骤:
(1)取蒸熟芋艿、α-淀粉酶和水混合搅拌2~10min,成混合浆,于50~60℃保温2.5~4.5h,压滤去渣,得滤液;

一种青少年魔芋葡苷聚糖饮料,由以下重量份的原材料组成:魔芋葡苷聚糖18份、大豆多肽4份、蒸熟芋艿40份、α-淀粉酶1份、抗凝剂8份、蔗糖8份、柠檬酸12份、复合维生素0.5份、矿物质0.8份,水至250份。
所述抗凝剂由以下重量份的原材料组成:鲜薜荔0.5份、鲜蒟蒻2份、鲜薯蓣0.5份、鲜荸荠3份。

由上表可知,通过实施例1与对比例1的对比可知,在本发明制备的饮料中添加魔芋葡苷聚糖,可将饮料中蛋白质、矿物质和膳食纤维的成分含量提高34.4%、22.9%和28.0%;通过实施例1与对比例2的对比可知,在本发明制备的饮料中添加大豆多肽,可将饮料中蛋白质、矿物质和膳食纤维的成分含量提高76.3%、53.6%和42.5%。
综上可知,在本发明制备的饮料中加入魔芋葡苷聚糖和大豆多肽,可显著提高饮料中蛋白质、矿物质和膳食纤维等营养成分的含量,能够为青少年生长发育提供充分的能量,其次,膳食纤维的提高还能改善食欲、促进消化,具有提高青少年机体对营养物质及功效成分吸收效率的作用。
试验例2
选择70只雄性小鼠进行实验,体重18-24g,随机分成7组,每组10只,每组小鼠每天进行45min游泳训练,训练周期2周,在小鼠的每天训练后,分别灌喂本发明实施例1-5和对比例1-3制备的运动饮料50ml。末次游泳训练结束后30min,进行游泳至力竭,测试力竭游泳时间。实验结果如下表2所示:

由上表可知,通过实施例1与对比例1的对比可知,在本发明制备的饮料中添加魔芋葡苷聚糖,可将小鼠的力竭游泳时间延长64.3%;通过实施例1与对比例2的对比可知,在本发明制备的饮料中添加大豆多肽,可将小鼠的力竭游泳时间延长32.2%。
综上可知,在本发明制备的饮料中加入魔芋葡苷聚糖和大豆多肽,可显著延长小鼠的力竭游泳时间,有助于消除疲劳,帮助缩短体力恢复时间。
以上所述实施例仅表达了本发明的几种实施方式,其描述较为具体和详细,但并不能因此而理解为对本发明专利范围的限制。应当指出的是,对于本领域的普通技术人员来说,在不脱离本发明构思的前提下,还可以做出若干变形和改进,这些都属于本发明的保护范围。
Claims (10)
1.一种青少年魔芋葡苷聚糖饮料,其特征在于,由以下重量份的原材料组成:魔芋葡苷聚糖8~18份、大豆多肽4~9份、蒸熟芋艿30~40份、α-淀粉酶1~3份、抗凝剂5~8份、蔗糖8~16份、柠檬酸6~12份、复合维生素0.5~1份、矿物质0.2~0.8份,水至250份。
2.根据权利要求1所述的一种青少年魔芋葡苷聚糖饮料,其特征在于,由以下重量份的原材料组成:魔芋葡苷聚糖10~15份、大豆多肽5~8份、蒸熟芋艿32~38份、α-淀粉酶1.5~2.5份、抗凝剂6~7份、蔗糖10~14份、柠檬酸8~10份、复合维生素0.6~0.8份、矿物质0.4~0.6份,水至250份。
3.根据权利要求2所述的一种青少年魔芋葡苷聚糖饮料,其特征在于,由以下重量份的原材料组成:魔芋葡苷聚糖13份、大豆多肽6.5份、蒸熟芋艿35份、α-淀粉酶2份、抗凝剂6.5份、蔗糖12份、柠檬酸9份、复合维生素0.75份、矿物质0.5份,水至250份。
4.根据权利要求1~3任一项所述的一种青少年魔芋葡苷聚糖饮料,其特征在于,所述抗凝剂由以下重量份的原材料组成:鲜薜荔0.5~2份、鲜蒟蒻0.5~2份、鲜薯蓣0.5~2.5份、鲜荸荠1~3份;所述复合维生素由以下重量份的原材料组成:维生素B1 0.06~0.1份、维生素B2 0.03~0.06份、维生素B3 0.005~0.008份、维生素B5 0.008~0.015份、维生素D0.05~0.1份;所述矿物质由以下重量份的原材料组成:乳酸锌0.01~0.03份、乳酸钙0.1~0.5份、磷酸氢二钠0.05~0.08份、氯化钠0.1~0.2份、氯化钾0.1~0.2份、硫酸镁0.08~0.12份、***钠0.0001~0.005份。
5.根据权利要求4所述的一种青少年魔芋葡苷聚糖饮料,其特征在于,所述抗凝剂由以下重量份的原材料组成:鲜薜荔0.9~1.6份、鲜蒟蒻0.9~1.6份、鲜薯蓣1~2份、鲜荸荠1.5~2.5份;所述复合维生素由以下重量份的原材料组成:维生素B1 0.07~0.09份、维生素B20.04~0.05份、维生素B3 0.006~0.007份、维生素B5 0.010~0.012份、维生素D 0.06~0.09份;所述矿物质由以下重量份的原材料组成:乳酸锌0.015~0.025份、乳酸钙0.2~0.4份、磷酸氢二钠0.06~0.07份、氯化钠0.12~0.18份、氯化钾0.13~0.7份、硫酸镁0.09~0.11份、***钠0.0013~0.0023份。
6.根据权利要求5所述的一种青少年魔芋葡苷聚糖饮料,其特征在于,所述抗凝剂由以下重量份的原材料组成:鲜薜荔1.25份、鲜蒟蒻1.25份、鲜薯蓣1.5份、鲜荸荠2份;所述复合维生素由以下重量份的原材料组成:维生素B1 0.08份、维生素B2 0.045份、维生素B30.0065份、维生素B5 0.012份、维生素D 0.075份;所述矿物质由以下重量份的原材料组成:乳酸锌0.02份、乳酸钙0.3份、磷酸氢二钠0.065份、氯化钠0.15份、氯化钾0.15份、硫酸镁0.1份、***钠0.0025份。
7.根据权利要求1~3任一项所述的一种青少年魔芋葡苷聚糖饮料,其特征在于,所述魔芋葡苷聚糖的制备方法为:
a.将魔芋切成3~4mm薄片,45~60℃烘干,超微粉碎,过350~500目筛,将魔芋粉置于60~100mL石油醚中,于30~50℃下回流6~8h,脱脂脱色,旋蒸去除石油醚,得脱脂脱色魔芋;
b.在脱脂脱色魔芋中按料液比为1:20加入5mol/L NaOH,加热搅拌,加入5mol/L HCl调至pH为7,再按料液比为1:10~15加入中性Pb(AC)2和5~8g/m3H2S混匀,减压浓缩至原体积的1/3,加入75%无水乙醇,经4000r/min离心25~30min,取沉淀干燥,得葡甘聚糖粗制品;
c.按料液比1:18~20向葡苷聚糖粗制品加入78~84%无水乙醇,置于超声功率208W、60℃下提取20~22min,于4500r/min条件下离心,取上清液浓缩至体积为上清液的1/4,得浓缩液;
d.加入与浓缩液等体积的95%无水乙醇,醇沉10~12h,在4500r/min条件下离心10min,弃上清液,去除溶剂,冷冻干燥,得魔芋葡苷聚糖。
8.根据权利要求1~3任一项所述的一种青少年魔芋葡苷聚糖饮料,其特征在于,所述大豆多肽的制备方法为:
a.取新鲜大豆洗净粉碎,过80目筛,按料液比为1:9加入蒸馏水搅拌均匀,用0.1mol/L氢氧化钠溶液调节pH至9,浸提1h,取提取液经3800r/min离心10min,取上清液,加入0.1mol/L盐酸调节pH至4.5,经3800r/min离心10min,取沉淀物,得大豆复合蛋白物;
b.取大豆复合蛋白物加水配制成5%水溶液,用0.1mol/LNaOH调节溶液pH为9,加入1%复合蛋白酶,在55℃水浴恒温振荡器中进行酶解6h,每隔30min滴加0.1mol/L氢氧化钠溶液保持pH,酶解结束后,加热升温至85℃,保温10min灭酶,再置于4℃下,经4000r/min离心10min,取上清液浓缩至1g/mL,得大豆多肽。
9.根据权利要求1~3任一项所述的一种青少年魔芋葡苷聚糖饮料,其特征在于,所述抗凝剂的制备方法为:按抗凝剂组份配比取鲜薜荔、鲜蒟蒻、鲜薯蓣、鲜荸荠,加入水中,搅拌成浆,过滤,得抗凝剂。
10.一种制备如权利要求1~9任一项所述的一种青少年魔芋葡苷聚糖饮料的方法,其特征在于,包括以下步骤:
(1)取蒸熟芋艿、α-淀粉酶和水混合搅拌2~10min,成混合浆,于50~60℃保温2.5~4.5h,压滤去渣,得滤液;
(2)取抗凝剂加入15~20mL水加热至完全溶解,加入到步骤(1)滤液中搅拌均匀,得溶液;
(3)将魔芋葡苷聚糖、大豆多肽、蔗糖、柠檬酸、复合维生素、矿物质混合,加入步骤(2)所得的溶液中,搅拌均匀,得饮料原液;
(4)将步骤(3)调配好的饮料原液置于75℃,20~30MPa下均质2次,然后在120℃下杀菌3s;
(5)待料温降至85℃时,灌装,密封,然后在120℃下灭菌15min,得青少年魔芋葡苷聚糖饮料。
