背景技术
蔬菜含有丰富的维生素、矿物质和膳食纤维,是儿童生长发育不可缺少的食物种类。根据中国营养学会发布的2016版膳食指南,蔬菜位于膳食宝塔的第二层,占据日常饮食结构相当重要的一部分。成人及2岁以上儿童每天应摄入蔬菜类食物300~500g。但是现在生活中很多人无肉不欢,却对蔬菜敬而远之,一提到吃蔬菜就愁眉苦脸。
如果长期不吃蔬菜,会造成维生素、矿物质摄入不足,排便困难,抵抗力下降等健康问题。青汁粉是以大麦嫩叶、甘薯嫩叶、甘蓝嫩叶以及青桔等天然绿色植物加工的超微粉末。同时材料不只限于被栽培的蔬菜,至于野菜、山菜、树叶等,只要无毒性、且含丰富优质的维生素及矿物质、叶绿素等,几乎皆可制成青汁粉。植物青汁不仅含有丰富的叶绿素,更含有比其他成熟植物更丰富的黄酮类物质,长期食用补充人体日常所需的各种微量元素及维生素,也正是因为里面含有很多膳食纤维,对于经常大鱼大肉而缺少绿色蔬菜的都市人群来说,既有利于改善饮食结构,也可以顺便排毒清肠改善便秘。

本发明提供的青汁粉休闲食品形似海苔片,口味良好,低糖少盐或者无盐,不添加色素和香精,食用时无需饮水,放入口腔内能较快溶解,尤其适用于咀嚼或吞咽能力较弱的老年人及儿童,每日服用几片即可补充丰富的膳食纤维、维生素及微量元素。而且,本发明提供的青汁粉休闲食品携带方便,制备方法简单,耗时短,成本较低廉。
具体实施方式
本发明通过以下实施例作进一步阐述,但本发明的范围并不限于这些实施例。所以,在本发明的方法前提下对本发明的简单改进均属本发明要求保护的范围。
实施例1
每片含青汁粉100mg,每1000片青汁粉休闲食品的组成为:
青汁粉 | 100 g |
甜茶苷 | 1.5g |
木糖醇 | 40g |
苹果酸 | 2.5g |
聚乙烯醇 | 6g |
羟丙甲基纤维素 | 8g |
羧甲基纤维素钠 | 1g |
甘油 | 3g |
纯化水 | 适量 |
制备工艺如下:
提前配制6%聚乙烯醇胶液和5%羟丙甲基纤维素胶液。称量青汁粉、木糖醇、羧甲基纤维素钠、甜茶苷、苹果酸、甘油,混合均匀后,加入到混合胶液中,搅拌均匀,静置脱气,涂布,在60℃下烘干,脱膜,按规格裁剪,即得青汁粉休闲食品。
实施例2
每片含青汁粉100mg,每1000片青汁粉休闲食品的组成为:
青汁粉 | 100 g |
木糖醇 | 40g |
食用盐 | 1g |
柠檬酸 | 3g |
普鲁兰多糖 | 20g |
微晶纤维素 | 5g |
甘油 | 3g |
纯化水 | 适量 |
制备工艺如下:
提前配制15%普鲁兰多糖胶液。称量青汁粉、木糖醇、食用盐、柠檬酸、微晶纤维素、甘油,混合均匀后,加入到混合胶液中,搅拌均匀,静置脱气,涂布,在60℃下烘干,脱膜,按规格裁剪,即得青汁粉休闲食品。
实施例3
每片含青汁粉120mg,每1000片青汁粉休闲食品的组成为:
青汁粉 | 120 g |
三氯蔗糖 | 1g |
木糖醇 | 35g |
苹果酸 | 2.5g |
聚乙烯醇 | 5g |
普鲁兰多糖 | 9g |
微晶纤维素 | 2g |
山梨醇 | 4g |
纯化水 | 适量 |
制备工艺如下:
提前配制6%聚乙烯醇胶液和15%普鲁兰多糖胶液。称量青汁粉、三氯蔗糖、木糖醇、山梨醇、微晶纤维素、苹果酸、甘油,混合均匀后,加入到混合胶液中,搅拌均匀,静置脱气,涂布,在60℃下烘干,脱膜,按规格裁剪,即得青汁粉休闲食品。
实施例4
每片含青汁粉100mg,每1000片青汁粉休闲食品的组成为:
青汁粉 | 100 g |
蔗糖 | 8g |
木糖醇 | 30g |
苹果酸 | 3g |
羟丙甲基纤维素 | 6g |
普鲁兰多糖 | 8g |
羧甲基纤维素钠 | 1g |
甘油 | 3g |
纯化水 | 适量 |
制备工艺如下:
提前配制5%羟丙甲基纤维素胶液和15%普鲁兰多糖胶液。称量青汁粉、蔗糖、木糖醇、羧甲基纤维素钠、苹果酸、甘油,混合均匀后,加入到混合胶液中,搅拌均匀,静置脱气,涂布,在60℃下烘干,脱膜,按规格裁剪,即得青汁粉休闲食品。
试食实验的方法:将20名健康志愿者随机分为4组,分别试食实施例1~4中制备的青汁粉休闲食品,每人每次服用两片,在不喝水的情况下,记录放入口腔后的溶化时间,并对口感进行评价。结果表明,四种样品均可在一分钟内溶化,而且口感较好,无异味和刺激感。
Claims (9)
1.一种青汁粉休闲食品,其特征是由下述重量配比的原料制成:青汁粉20%~70%,调味剂5%~30%,被膜材料5%~15%,水分保湿剂0~3%,稳定剂0~3%。
2.权利要求1所述的青汁粉休闲食品,其特征是所述青汁粉选自大麦嫩苗粉、小麦嫩苗粉、果汁粉、甘薯嫩叶粉、甘蓝粉、西兰花粉、谷物粉中至少一种。
3.权利要求1所述的青汁粉休闲食品,其特征是所述果汁粉选自苹果粉、香蕉粉、雪梨粉、哈密瓜粉中至少一种。
4.权利要求1所述的青汁粉休闲食品,其特征是所述谷物粉选自南瓜粉、山药粉、玉米粉、绿豆粉、红豆粉中至少一种。
5.权利要求1所述的青汁粉休闲食品,其特征是所述调味剂选自蔗糖、三氯蔗糖、木糖醇、甜茶苷、食盐、柠檬酸、苹果酸中至少一种。
6.权利要求1所述的青汁粉休闲食品,其特征是所述被膜材料选自普鲁兰多糖、羟丙甲基纤维素、聚乙烯醇中至少一种。
7.权利要求1所述的青汁粉休闲食品,其特征是所述水分保湿剂选自甘油、山梨醇中至少一种。
8.权利要求1所述的青汁粉休闲食品,其特征是所述稳定剂选自微晶纤维素、羧甲基纤维素钠中至少一种。
9.权利要求1所述的青汁粉休闲食品,其特征是制备方法包括如下步骤:
提前配制适量浓度的被膜材料胶液,将称量的青汁粉、调味剂、水分保湿剂、稳定剂混合均匀后,加入被膜材料胶液中,搅拌均匀,静置脱气,涂布,在60℃下烘干,脱膜,按规格裁剪,即得青汁粉休闲食品。
