一种水果花茶药酒,它包括:所述水果花茶药酒按重量计,其原料组成包括小米20‑25%、茶叶2‑4%、樱桃15‑35%、木瓜15‑25%、金银花3‑5%、茉莉花2‑4%、决明子2‑3%和肉桂2‑8%。本发明还公布一种水果花茶药酒的制作方法。本发明的有益效果是:将樱桃、木瓜、金银花和茶叶的营养物质、特殊香味与乙醇完美混合一起,酿造出的发酵酒香味独特,口感柔和。由于水果和茶叶中的营养成分已全部溶解,相对于直接食用果肉,更易被人体吸收。

一种水果花茶药酒及其制作方法
技术领域
本发明涉及一种水果花茶药酒及其制作方法。
背景技术
樱桃铁的含量较高,每百克樱桃中含铁量多达59毫克,居于水果首位。维生素A含量比葡萄、苹果、橘子多4-5倍。胡萝卜素含量比葡萄、苹果、橘子多4~5倍。此外,樱桃中还含有维生素B、C及钙、磷等矿物元素。每100g含水分83g,蛋白质1.4g,脂肪0.3g,糖8g,碳水化合物14.4g,热量66千卡,粗纤维0.4g,灰分0.5g,钙18mg,磷18mg,铁5.9mg,胡萝卜素0.15mg,硫胺素0.04mg,核黄素0.08mg,尼可酸0.4mg,抗坏血酸900mg,钾258mg,钠0.7mg,镁10.6mg。
樱桃用于脾胃虚弱,少食腹泻,或脾胃阴伤,口舌干燥;肝肾不足,腰膝酸软,四肢乏力,或遗精;血虚,头晕心悸,面色不华,面部雀斑等顽固性斑类可起淡化作用。
金银花自古以来就以它的药用价值广泛而著名。其功效主要是清热解毒,主治温病发热、热毒血痢、痈疽疔毒等。现代研究证明,金银花含有绿原酸、木犀草素苷等药理活性成分,对溶血性链球菌、金黄葡萄球菌等多种致病菌及上呼吸道感染致病病毒等有较强的抑制力,另外还可增强免疫力、抗早孕、护肝、抗肿瘤、消炎、解热、止血、抑制肠道吸收胆固醇等,其临床用途非常广泛,可与其它药物配伍用于治疗呼吸道感染、菌痢、急性泌尿***感染、高血压等40余种病症。
茶酒是用植物的果实和茶叶的浸提液或者直接用茶叶发酵而成的酒品,樱桃、金银花和茶叶中都含有大量对人健康非常有益的成分,其中氨基酸等种类齐全,并含有多种维生素和矿物质,这些营养成分在发酵的过程中大部分被保留在了茶酒中,使茶酒具有丰富的营养物质。现有技术中没有一个很好的方法用于制作樱桃茶酒。
发明内容
本发明所要解决的技术问题是解决现有技术的不足,提供一种水果花茶药酒及其制作方法。
本发明解决上述技术问题的技术方案如下:一种水果花茶药酒,它包括:所述水果花茶药酒按重量计,其原料组成包括小米20-25%、茶叶2-4%、樱桃15-35%、木瓜15-25%、金银花3-5%、茉莉花2-4%、决明子2-3%和肉桂2-8%。经过反复试验,最好控制樱桃、金银花、茶叶三者的比例是5:2:1.5,这样有更好的口感,樱桃与金银花之间的比例一定不能高于6:1。
本发明还公布一种水果花茶药酒的制作方法,其包括如下步骤:
(1)以清水洗涤原料小米、茶叶、樱桃、木瓜、金银花、决明子、茉莉花和肉桂;
(2)将木瓜去皮去瓤洗净切块,送入果浆机打浆,得木瓜浆;将樱桃切块,送入果浆机打浆,得樱桃浆;将茶叶、金银花、茉莉花粉碎,加5-10倍沸水浸提5-8分钟,过滤得提液,与木瓜浆、搅拌樱桃浆均匀,在30-40℃加入0.1-0.4%的果胶酶酶解2-3小时,离心过滤去渣,得果茶汁;
(4)清蒸小米、决明子和肉桂,时间15-20分钟,温度95-100℃;
(5)待清蒸后的小米、决明子和肉桂冷却至室温后,加入所述果茶汁,翻拌均匀,加入糠和酶,进行酶解发酵;
(6)对酶解后的原料进行上甑,上甑时间为50-55分钟,蒸馏温度为45-50℃;
(7)出甑加浆:然后向原料中加入水,水温度大于70℃,出甑,降至室温;
(8)加曲:将酒曲加入料中,并翻拌均匀;
(9)入窖发酵:加纯净水进行发酵,温度为26-28℃。
本发明的有益效果是:将樱桃、木瓜、金银花和茶叶的营养物质、特殊香味与乙醇完美混合一起,酿造出的发酵酒香味独特,口感柔和。由于水果和茶叶中的营养成分已全部溶解,相对于直接食用果肉,更易被人体吸收。

以下结合实施例对本发明的原理和特征进行描述,所举实例只用于解释本发明,并非用于限定本发明的范围。
第一实施例:
一种水果花茶药酒,其包括:所述水果花茶药酒按重量计,其原料组成包括小米20-25%、茶叶2-4%、樱桃15-35%、木瓜15-25%、金银花3-5%、茉莉花2-4%、决明子2-3%和肉桂2-8%。
第二实施例:
一种对权利要求1所述的水果花茶药酒的制作方法,其包括如下步骤:
(1)以清水洗涤原料小米、茶叶、樱桃、木瓜、金银花、决明子、茉莉花和肉桂;
(2)将木瓜去皮去瓤洗净切块,送入果浆机打浆,得木瓜浆;将樱桃切块,送入果浆机打浆,得樱桃浆;将茶叶、金银花、茉莉花粉碎,加5-10倍沸水浸提5-8分钟,过滤得提液,与木瓜浆、搅拌樱桃浆均匀,在30-40℃加入0.1-0.4%的果胶酶酶解2-3小时,离心过滤去渣,得果茶汁;
(4)清蒸小米、决明子和肉桂,时间15-20分钟,温度95-100℃;
(5)待清蒸后的小米、决明子和肉桂冷却至室温后,加入所述果茶汁,翻拌均匀,加入糠和酶,进行酶解发酵;

上述的酶解发酵加入0.07-0.08%碱性蛋白酶,0.02-0.03%中性蛋白酶,0.02-0.04%淀粉酶,于36-37℃酶解,5-6小时。
尽管上面已经示出和描述了本发明的实施例,可以理解的是,上述实施例是示例性的,不能理解为对本发明的限制,本领域的普通技术人员在本发明的范围内可以对上述实施例进行变化、修改、替换和变型。

Claims (3)

1.一种水果花茶药酒,其特征在于,它包括:所述水果花茶药酒按重量计,其原料组成包括小米20-25%、茶叶2-4%、樱桃15-35%、木瓜15-25%、金银花3-5%、茉莉花2-4%、决明子2-3%和肉桂2-8%。
2.一种对权利要求1所述的水果花茶药酒的制作方法,其特征在于,包括如下步骤:
(1)以清水洗涤原料小米、茶叶、樱桃、木瓜、金银花、决明子、茉莉花和肉桂;
(2)将木瓜去皮去瓤洗净切块,送入果浆机打浆,得木瓜浆;将樱桃切块,送入果浆机打浆,得樱桃浆;将茶叶、金银花、茉莉花粉碎,加5-10倍沸水浸提5-8分钟,过滤得提液,与木瓜浆、搅拌樱桃浆均匀,在30-40℃加入0.1-0.4%的果胶酶酶解2-3小时,离心过滤去渣,得果茶汁;
(4)清蒸小米、决明子和肉桂,时间15-20分钟,温度95-100℃;
(5)待清蒸后的小米、决明子和肉桂冷却至室温后,加入所述果茶汁,翻拌均匀,加入糠和酶,进行酶解发酵;
(6)对酶解后的原料进行上甑,上甑时间为50-55分钟,蒸馏温度为45-50℃;

3.根据权利要求1和2所述的一种水果花茶药酒的制作方法,其特征在于,所述酶解发酵加入0.07-0.08%碱性蛋白酶,0.02-0.03%中性蛋白酶,0.02-0.04%淀粉酶,于36-37℃酶解,5-6小时。
