酱料,是调味食物的材料。根据统计,可以被称之为正统酱料的有450种之多。所谓正统酱料,就是人们在烹调时普遍使用的正规酱料。另外还有许多属于个人研究的偏方、特定品牌酱料,或是不常用但有特色的酱料,已超过1800种。中国人常用的酱料有:拌冷面酱、自制香辣刺激的辣椒、烧烤酱、鲍汁、传统芝麻酱、叉烧包酱料、豆豉酱、肉末麻辣酱、烤肉酱汁、蒜蓉酱、韩式辣椒酱、黑椒汁、甜辣酱、寿司醋、水餃煎餃沾醬、酸辣黄金酱、潮式酸辣酱等。目前,具有保健功能的保健酱料报导较少。

本发明采用如下原料作为制备酱料。
野葛根,学名:whitekwaokrua,Puerarialobata,中文名:白高颗。别称:白葛根。是泰国的一种神奇热带香草,也俗称:乳果。它属于豆科,葛属或大豆及豌豆属,该植物在泰国北部、西部和东北部300-800米的森林中广泛存在,根块生长在地下1~2米深处。泰国野葛根与其它豆科植物不同的是其特有的“葛雌素”和“脱氧微雌醇”等植物活性成份,这些活性成分是其他豆科植物所没有。野葛根进入中国市场时间较短,在中国为了让人们更好认识它,也被借称为:野葛根,但和和中国的野生葛根或葛根是性质完全不同的两种植物。
野葛根巨大的地下块茎积蓄了包含有异黄酮(异黄、酮苷、大豆甙元、金雀异黄甙、异黄酮木碱和葛根黄素)的“植物***”及其衍生物、b-谷甾醇、豆固醇、拟雌内酯、葛根黄素。野葛根以一定的剂量和一定的周期应用于人体是非常安全的。选择的野葛根培养品种有高含量的异黄酮成分,不仅对人类乳腺癌细胞系具有杀伤作用,而且还具有很高的抗诱变作用。
黄精(学名:Polygonatumsibiricum),又名:土灵芝、鸡头黄精、黄鸡菜、笔管菜、爪子参、老虎姜、鸡爪参。为黄精属植物,根茎横走,圆柱状,结节膨大。叶轮生,无柄。药材基源:为百合科植物黄精等的根茎。具有补脾,润肺生津的作用。黄精性味甘甜,食用爽口。其肉质根状茎肥厚,含有大量淀粉、糖分、脂肪、蛋白质、胡萝卜素、维生素和多种其他营养成分,生食、炖服既能充饥,又有健身之用,可令人气力倍增、肌肉充盈、骨髓坚强,对身体十分有益。黄精根状茎形状有如山芋,山区老百姓常把它当作蔬菜食用。
桑葚sāngshèn又读sāngrèn),桑树的成熟果实,桑葚又叫桑果、桑泡儿,农人喜欢其成熟的鲜果食用,味甜汁多,是人们常食的水果之一。成熟的桑葚质油润,酸甜适口,以个大、肉厚、色紫红、糖分足者为佳。每年4~6月果实成熟时采收,去杂质,晒干或略蒸后晒干食用,也可来泡酒。具体成熟时间各地不一样,南方早一点,北方稍迟一点。该品为聚花果,由多数小核果集合而成,呈长圆形,长2~3cm,直径1.2~1.8cm。黄棕色、棕红色至暗紫色,有短果序梗。小核果卵圆形,稍扁,长约2mm,宽约1mm,外具肉质花被片4枚。气味微酸而甜。《本草纲目》等多种医药典籍中对桑椹的要用价值和用法有详尽的阐述,桑椹性味甘寒,具有补肝益肾、生津润燥、乌发明目等功效。桑果古来就是百姓常采用的一种利尿,保健,消暑的鲜果,在本草纲目中有记载其特殊功效。
杏叶沙参(学名:Adenophorahunanensis)是桔梗科沙参属多年生草本植物,为中国的特有植物。分布在中国大陆的广西、江西、广东、河南、贵州、四川、山西、陕西、湖北、湖南、河北等地,生长于海拔800米至2000米的地区,一般生于山坡草地以及林缘草地。模式标本产地是湖南武冈。南沙参载于东汉《神农本草经》,列为上品,并记述有“主积血惊气,除寒热,补中益肺气。”的功用。南北朝《本草经集注》中将沙参与人参、玄参、丹参、苦参称为五参。养阴清肺,祛痰止咳。治肺热燥咳,虚痨久咳,阴伤咽干喉痛。《本经》:主血积惊气,除寒热,补中益肺气。《别录》:疗胃痹心腹痛,结热邪气,头痛,皮间邪热,安五脏,补中。《药性论》:能去皮肌浮风,疝气下坠,治常欲眠,养肝气,宣五脏风气。
具体实施方式
一种保健酱料,其特征在于由下列各原料按重量份制备而成:
野葛根30份,黄精根20份,桑葚果10份,杏叶沙参嫩叶5份,食盐2份,花椒3份,山茶油30份,冰糖1份。
实施例1:由下列各原料按重量制备而成:野葛根60克,黄精根40克,桑葚果20克,杏叶沙参嫩叶10克,食盐4克,花椒6克,山茶油60克,冰糖2克。
用干燥去皮的野葛根、黄精根在100度油温锅中炸熟至可碎,迅速捞出过滤余油。冷却后磨碎至100目筛。
干燥的杏叶沙参嫩叶、桑葚果加花椒蒸熟、烘燥。倒入搅拌机中,加入食盐、冰糖、山茶油,搅拌。
将以上原料按比份量搅拌成糊状;全部原料充分搅拌均匀。消毒杀菌、瓶装。
实施例2:由下列各原料按重量份制备而成:野葛根30克,黄精根20克,桑葚果10克,杏叶沙参嫩叶5克,食盐2克,花椒3克,山茶油30克,冰糖1克,芝麻10克,南乳8克、大蒜10克,胡荽8克,味精2克,红干葱5克,葱头油3克,茴香2克,八角2克。
用干燥去皮的野葛根、黄精根在100度油温锅中炸熟至可碎,迅速捞出过滤余油。冷却后磨碎至100目筛。
干燥的杏叶沙参嫩叶、桑葚果加花椒、芝麻、大蒜、胡荽、红干葱、茴香、八角蒸熟、烘燥。倒入搅拌机中,加入食盐、冰糖、山茶油,南乳、味精、葱头油搅拌。将以上原料按比份量搅拌成糊状;全部原料充分搅拌均匀。消毒杀菌、瓶装。
本实施例2为增加口感,还加入了传统的食用用调料。

1.一种保健酱料,其特征在于由下列各原料按重量份制备而成:野葛根30份,黄精根20份,桑葚果10份,杏叶沙参嫩叶5份,食盐2份,花椒3份,山茶油30份,冰糖1份。
