Abstract
本发明公开了一种浓缩型保健无花果汁,其原料为:无花果、水、酸奶、牛油果、异麦芽糖醇、无花果叶、螺旋藻粉、混合酶、维生素C、马铃薯变性淀粉、谷胱甘肽、亚油酸甘油酯。产品营养丰富,酸甜适口,浓度适中,性质稳定,果香和奶香相结合,香味和谐,余味悠长;以VC进行护色,使口味酸甜,还能增加营养物质;以异麦芽糖醇代替白砂糖,马铃薯变性淀粉代替明胶,有助于肠道益生菌的生长,能够抑制龋齿和肥胖,使果汁稳定,不含添加剂,安全健康;加入牛油果、酸奶、无花果叶和螺旋藻,与无花果的营养成分有机结合,能够增强抵抗力,美容养颜,减肥瘦身,解毒抗癌,预防心脑血管疾病,延年益寿;丰富市场上果汁的品种,满足消费者的需求。
Description
技术领域
本发明涉及饮料领域,具体的说,涉及一种浓缩型保健无花果汁。
背景技术
无花果不仅食用价值高,作为传统中药又具有健胃清肠、消肿解毒、明目生肌等多种功效。无花果中含有苯甲醛、佛手柑内脂、补骨酯素等抗癌物质,还含有大量的硒,硒能够清除自由基,保护细胞膜免受氧化,对心脑血管、血糖、血压有调节作用,又有保肝抗癌作用。
酸奶是以新鲜的牛奶为原料,经过巴氏杀菌后再向牛奶中添加有益菌(发酵剂),经发酵后,再冷却灌装的一种牛奶制品。牛奶在发酵成酸奶的过程中,奶中20%左右的糖、蛋白质被分解成为小的分子。在发酵的过程中乳酸菌还可以产生人体所必须的多种维生素,鲜奶中钙含量丰富,经发酵后,钙等矿物质都不会发生变化,但发酵后产生的乳酸有效的提高钙、磷在人体中的利用率,所以酸奶的钙磷更容易被人体吸收。酸奶含有多种酶,促进消化吸收,保护肠胃,维护肠道菌群生态平衡,防癌抗癌,预防便秘,常饮酸奶能够润肤、明目、固齿、健发,乳酸菌可以产生一些增强免疫功能的物质,可以提高人体免疫,防止疾病。
将无花果加工成无花果饮料,能够增加无花果的深加工品种,但是目前市场上的无花果饮料多以浸提得到的清汁为主,其营养成分和功能方面都存在一定的缺陷,目前市场上还未出现以无花果、牛油果、酸奶、无花果叶及螺旋藻有机结合得到的浓缩型保健无花果汁。
发明内容
为了弥补已有技术的缺陷,本发明的目的是提供一种浓缩型保健无花果汁。
一种浓缩型保健无花果汁,由以下重量份的原料制成:无花果100~120、水5~8、酸奶10~15、牛油果8~10、异麦芽糖醇8~10、无花果叶2~4、螺旋藻粉1~3、混合酶0.1~0.2、维生素C0.2~0.3、马铃薯变性淀粉0.1~0.3、谷胱甘肽0.1~0.3、亚油酸甘油酯0.1~0.3。
所述混合酶的重量比为纤维素酶:果胶酶=2:7。
一种浓缩型保健无花果汁的制作方法,其具体步骤为:
(1)选择无病虫害、成熟的新鲜无花果和牛油果,洗净,去蒂,切块,加水,打浆,过40~60目筛,加入马铃薯变性淀粉,搅拌均匀,在蒸汽中热烫4~6分钟;
(2)将维生素C加入1)的果浆中,搅拌均匀,加入混合酶,50℃水浴,不断搅拌,酶解3~4小时后,80℃水浴,灭酶20~30分钟;
(3)向2)中加入异麦芽糖醇,搅拌均匀,得浓缩型无花果汁;
(4)将无花果叶洗净,晾干,打碎,80~90℃水浴,回流2次,每次加入2~3倍量的蒸馏水,每次回流1小时,再加入2~3倍量的60%酒精,回流1次,回流2小时,合并提取液,微波真空干燥,得无花果叶提取物;
(5)将无花果叶提取物、螺旋藻粉、谷胱甘肽和亚油酸甘油酯加入3)得到的浓缩型无花果汁中,搅拌均匀,得浓缩型保健无花果汁;
(6)巴氏灭菌后,以流动的冷水进行快速冷却,温度至4~6℃时,加入酸奶,搅拌均匀;
(7)无菌条件下进行灌装,贴标签,得成品,4℃进行贮藏。
牛油果,富含蛋白质、脂肪、维生素和矿物质,能够降低胆固醇,美容护肤,预防婴儿血管畸形,保护消化***。
无花果叶,含补骨脂素、佛手柑内酯、β-谷甾醇、β-香树脂醇、蛇麻脂醇、棕榈酸、缬草酸、愈疮木酚、廿八烷、芸香甙等,能够解毒消肿,行气止痛,抗癌,增强免疫力,瘦体美容,养颜益寿。
螺旋藻,营养丰富,优质蛋白质高达60~70%,能够减肥,抗疲劳,抗辐射,增强免疫力,保护肠胃,抗肿瘤,降血脂,降胆固醇,抗衰老,调节血糖。
谷胱甘肽,解毒,抗辐射,保护肝脏,抗过敏,改善某些疾病症状,养颜美容护肤,保护眼睛,抗衰老。
亚油酸甘油酯,具有降低人体血液中胆固醇和血脂的作用,可作为治疗动脉粥样硬化药物的原料。
本发明的优点是:本发明提供的一种浓缩型保健无花果汁,营养丰富,酸甜适口,浓度适中,性质稳定,果香和奶香相结合,香味和谐,余味悠长;加入VC,不仅可以进行护色,又能调节果浆的pH,使口味酸甜,还能增加无花果的营养物质,延长保质期;以异麦芽糖醇代替白砂糖,热量低,有助于肠道益生菌的生长,能够抑制龋齿和肥胖;以马铃薯变性淀粉代替明胶,使果汁保持稳定,不分层,使用天然原料,不含添加剂,安全健康,还可以赋予果汁马铃薯的香味和营养成分;加入多种生物活性原料,与无花果的营养成分有机结合,克服了无花果汁营养和功能较单一的缺点,增加营养物质、生物活性物质及活的乳酸菌,产生增强免疫力的物质,维护肠道菌群生态平衡,形成生物屏障,抑制有害菌对肠道的入侵,抑制致癌因子的产生,能够增强抵抗力,美容养颜,减肥瘦身,解毒抗癌,预防心脑血管疾病,延年益寿;丰富了无花果的深加工产品,提高了农户的经济收入,满足消费者的需求。
具体实施方式
下面用具体实施例说明本发明。
实施例1
一种浓缩型保健无花果汁,由以下重量份的原料组成:无花果100、水5、酸奶10、牛油果8、异麦芽糖醇8、无花果叶2、螺旋藻粉1、混合酶0.1、维生素C0.2、马铃薯变性淀粉0.1、谷胱甘肽0.1、亚油酸甘油酯0.1。
所述混合酶的重量比为纤维素酶:果胶酶=2:7。
一种浓缩型保健无花果汁的制作方法,其具体步骤为:
(1)选择无病虫害、成熟的新鲜无花果和牛油果,洗净,去蒂,切块,加水,打浆,过40目筛,加入马铃薯变性淀粉,搅拌均匀,在蒸汽中热烫4分钟;
(2)将维生素C加入1)的果浆中,搅拌均匀,加入混合酶,50℃水浴,不断搅拌,酶解3小时后,80℃水浴,灭酶20分钟;
(3)向2)中加入异麦芽糖醇,搅拌均匀,得浓缩型无花果汁;
(4)将无花果叶洗净,晾干,打碎,80℃水浴,回流2次,每次加入2倍量的蒸馏水,每次回流1小时,再加入2倍量的60%酒精,回流1次,回流2小时,合并提取液,微波真空干燥,得无花果叶提取物;
(5)将无花果叶提取物、螺旋藻粉、谷胱甘肽和亚油酸甘油酯加入3)得到的浓缩型无花果汁中,搅拌均匀,得浓缩型保健无花果汁;
(6)巴氏灭菌后,以流动的冷水进行快速冷却,温度至4℃时,加入酸奶,搅拌均匀;
(7)无菌条件下进行灌装,贴标签,得成品,4℃进行贮藏。
实施例2
一种浓缩型保健无花果汁,由以下重量份的原料组成:无花果110、水6、酸奶13、牛油果9、异麦芽糖醇9、无花果叶3、螺旋藻粉2、混合酶0.15、维生素C0.25、马铃薯变性淀粉0.2、谷胱甘肽0.2、亚油酸甘油酯0.2。
所述混合酶的重量比为纤维素酶:果胶酶=2:7。
一种浓缩型保健无花果汁的制作方法,其具体步骤为:
(1)选择无病虫害、成熟的新鲜无花果和牛油果,洗净,去蒂,切块,加水,打浆,过40~60目筛,加入马铃薯变性淀粉,搅拌均匀,在蒸汽中热烫5分钟;
(2)将维生素C加入1)的果浆中,搅拌均匀,加入混合酶,50℃水浴,不断搅拌,酶解3.5小时后,80℃水浴,灭酶25分钟;
(3)向2)中加入异麦芽糖醇,搅拌均匀,得浓缩型无花果汁;
(4)将无花果叶洗净,晾干,打碎,85℃水浴,回流2次,每次加入3倍量的蒸馏水,每次回流1小时,再加入3倍量的60%酒精,回流1次,回流2小时,合并提取液,微波真空干燥,得无花果叶提取物;
(5)将无花果叶提取物、螺旋藻粉、谷胱甘肽和亚油酸甘油酯加入3)得到的浓缩型无花果汁中,搅拌均匀,得浓缩型保健无花果汁;
(6)巴氏灭菌后,以流动的冷水进行快速冷却,温度至5℃时,加入酸奶,搅拌均匀;
(7)无菌条件下进行灌装,贴标签,得成品,4℃进行贮藏。
实施例3
一种浓缩型保健无花果汁,由以下重量份的原料组成:无花果120、水8、酸奶15、牛油果10、异麦芽糖醇10、无花果叶4、螺旋藻粉3、混合酶0.2、维生素C0.3、马铃薯变性淀粉0.3、谷胱甘肽0.3、亚油酸甘油酯0.3。
所述混合酶的重量比为纤维素酶:果胶酶=2:7。
一种浓缩型保健无花果汁的制作方法,其具体步骤为:
(1)选择无病虫害、成熟的新鲜无花果和牛油果,洗净,去蒂,切块,加水,打浆,过60目筛,加入马铃薯变性淀粉,搅拌均匀,在蒸汽中热烫6分钟;
(2)将维生素C加入1)的果浆中,搅拌均匀,加入混合酶,50℃水浴,不断搅拌,酶解4小时后,80℃水浴,灭酶30分钟;
(3)向2)中加入异麦芽糖醇,搅拌均匀,得浓缩型无花果汁;
(4)将无花果叶洗净,晾干,打碎,90℃水浴,回流2次,每次加入3倍量的蒸馏水,每次回流1小时,再加入3倍量的60%酒精,回流1次,回流2小时,合并提取液,微波真空干燥,得无花果叶提取物;
(5)将无花果叶提取物、螺旋藻粉、谷胱甘肽和亚油酸甘油酯加入3)得到的浓缩型无花果汁中,搅拌均匀,得浓缩型保健无花果汁;
(6)巴氏灭菌后,以流动的冷水进行快速冷却,温度至6℃时,加入酸奶,搅拌均匀;
(7)无菌条件下进行灌装,贴标签,得成品,4℃进行贮藏。
对比例
市售普通无花果汁。
降血压效果:
好转:血压有所降低,并趋于稳定,高血压症状减轻或消失;
无效:血压不下降,甚至出现上升趋势,高血压症状没有减轻,甚至更加严重。
随机选择600位高血压患者,病龄在6个月以上,随机分为4组,每组150位,受试前均陆续减少降血压药物至完全停药,每位患者在受试前均测量血压,并进行记录,每位患者每天饮用该组的无花果汁600毫升,每天3次,每天测1次血压,连续饮用各无花果汁40天,根据记录的血压情况,由医生总结每种无花果汁的降血压情况,结果见表1;

表1的结果表明,实施例的无花果汁好转率明显较对比例高,具有明显的降血压功能。
感官评定:
随机选择60人,年龄18岁以上,每人对实施例和对比例的无花果汁进行感官评定前30分钟不得食用其他食物,品尝下一种无花果汁之前必须先用温开水反复漱口3~5次;
每部分共计10分,1~3为一般,4~6为佳,7~9为上佳。10为满分,取其平均值,结果见表2。

表2的结果表明,本发明的一种浓缩型保健无花果汁,营养丰富,色泽艳丽均匀,果汁组织均匀稳定,不分层,酸甜适口,浓度适中,清香爽口,余味悠长,得到广大消费者的喜爱。
Claims (3)
1.一种浓缩型保健无花果汁,其特征在于,由以下重量份的原料制成:无花果100~120、水5~8、酸奶10~15、牛油果8~10、异麦芽糖醇8~10、无花果叶2~4、螺旋藻粉1~3、混合酶0.1~0.2、维生素C0.2~0.3、马铃薯变性淀粉0.1~0.3、谷胱甘肽0.1~0.3、亚油酸甘油酯0.1~0.3。
2.如权利要求1所述的一种浓缩型保健无花果汁,其特征在于,所述混合酶的重量比为纤维素酶:果胶酶=2:7。
3.如权利要求1所述的一种浓缩型保健无花果汁的制作方法,其特征在于,包括以下步骤:
(1)选择无病虫害、成熟的新鲜无花果和牛油果,洗净,去蒂,切块,加水,打浆,过40~60目筛,加入马铃薯变性淀粉,搅拌均匀,在蒸汽中热烫4~6分钟;
(2)将维生素C加入1)的果浆中,搅拌均匀,加入混合酶,50℃水浴,不断搅拌,酶解3~4小时后,80℃水浴,灭酶20~30分钟;
(3)向2)中加入异麦芽糖醇,搅拌均匀,得浓缩型无花果汁;
