背景技术
萝卜含有大量各种维生素与矿物质、胡萝卜素和维生素C以及抑制癌细胞生长的抗癌物质、大量食物性纤维,所以能预防便秘、肠癌;同时能减少热量的摄取,是减肥的最佳食品之一。 萝卜,味甘性温,能滑肠通便,健胃益气。含有较多的纤维素, 能在肠中吸收水份增大粪便的体积,引起通便的作用。糙米 糙米含有丰富的蛋白质、淀粉、维生素B1、A、E、纤维素、钙、铁和磷等矿物质,其中丰富的纤维质有助排便。现有的萝卜加工食品种类少,且多缺乏养生保健的作用。

本发明的目的是提供一种酱制萝卜及其腌制方法,质地脆,滋味鲜甜,香气适宜。营养提取物配伍合理,具有复配营养,保健养生,使用荷叶分层隔开腌制,使得荷叶的淡淡清香。

风味酱制萝卜,由以下重量份的原料组成:萝卜片50-55、燕麦12-15、芝麻2-4、辣椒2-5、小茴香3-5、枸杞1-3、马兰头1-2、火麻仁3-5、薄荷2-4、酒酿10-12份、乌梅2-3份、柠檬叶4-5份、松花粉3-5份、芡实 3-5份、槐花2-4份、菊苣 1-3份、檀香 4-6份、陈皮3-5份、食盐30-40份、水适量、自制酱汁10-15份;
所述的自制酱汁由下列重量份原料制成:大茴香3-5、 小茴香1-2、无漏子1-3、 三奈2-4、肉苁蓉4-6、酸枣仁3-5、地黄花2-4、乌贼1-2、石榴酒适量;
所述的自制酱汁的制备方法为: 将大茴香、小茴香、无漏子、三奈、肉苁蓉、酸枣仁、地黄花、乌贼除杂洗净,大火烧开后,撇沫,加石榴酒继续煮制2-3小时,制成卤水。
