本发明属于食品加工领域,特别是涉及一种香菇米酒保健饮料,它是由糯米、香菇柄、党参、白术、茯苓、甘草、大枣、龙眼肉、果胶、小曲制成,该保健米酒酸甜适口,具有米酒特有的香气,很好地掩盖了中药的气味和滋味,使得该保健米酒即具有保健功能,又具有适口性,易被消费者接受。本发明工艺独特,操作简单,适用于不同年龄性别的人群,该产品营养丰富,口感甘甜,集保健营养一体,服用、携带比较方便。

一种香菇米酒保健饮料
技术领域
本发明属于食品加工领域,特别是涉及一种香菇米酒保健饮料。
背景技术
随着社会的发展,人们的生活压力逐渐增大,很多人出现了亚健康状态。有的去医院接受治疗,西医找不到合适的方法,利用中医阴阳平衡的理论一般以阴虚、阳虚的法则来辩证施治,但是效果甚微,另外中药的服用也很不方便。市场上出现了很多的保健食品,里面都添加了违禁成分,该保健品的配方中没有考虑消费者的消化吸收功能,保健食品是供慢性病人、康复期人群以及亚健康人群食用的,他们的消化吸收能力较弱且大多气血不足,保健品都没有考虑到这方面的因素。再之服用的毕竟类似药品的东西,从心理上消费者认为是在吃药,且口感太差。近年来,出现了王老吉、加多宝、和其正一类的饮料,这种饮料都是以清热为主的成分,适合夏季容易上火的人群服用。若遇到阴虚人群,这种饮料的服用,会加重病情的发展。而且这些饮料都有中药的味道,口感也欠佳。
发明内容
本发明目的在于克服上述缺陷而提供一种见效快、口感好、服用方便、经济实惠且能快速纠正人体亚健康状态的香菇米酒保健饮料。
为实现上述目的,本发明采取了如下技术方案。一种香菇米酒保健饮料的制备方法,其特征在于:
(1)、按配方质量份配比称取以下原料:糯米1000份、香菇柄100份、党参10份、白术8份、茯苓8份、甘草5份、大枣12份、龙眼肉5份、果胶0.15份、小曲4份。
(2)、将称取的糯米清洗除去杂质,然后加适量水浸渍16-24h,捞出得浸渍
糯米A,备用;
(3)、将称取的党参、白术、茯苓、甘草用粉碎机粉碎,过50目筛,得混合颗粒物,再将该混合物加入500毫升的水浸泡2小时后进行过滤,得滤液B、浸泡颗粒物C;
(4)、将通过步骤(3)所得的得滤液B于115℃灭菌15min,冷却后得液体D;
(5)、将称取的大枣、龙眼肉加入300毫升的水进行煎煮20分钟,然后过滤得滤液E;
(6)、将称取的香菇柄用蔬菜绞菜机绞碎,然后在115℃灭菌15min,得香菇柄颗粒物F;
(7)、将称取的小曲用30℃的温开水活化1-2小时,得活化小曲,备用;
(8)、将通过步骤(2)所得的浸渍糯米A与步骤3所得的浸泡颗粒C混合,然后放入蒸锅中,常压下通蒸汽,圆汽后再蒸30分钟,捞出,得熟而不烂,均匀一致的米饭;将经过步骤(4)所得的液体D与该米饭混合,同时用凉开水调米饭含水量至60%,待其温度降至30℃时与经过步骤(7)所得的活化小曲进行混合接种;
(9)、将接种后的米饭装入发酵缸内,表面抹平,搭“U”形或“V”形酒窝,30℃保温发酵1d后加入香菇柄F,混合均匀,再继续发酵3d压榨,得米酒浆F,
(10)、将米酒浆F与滤液E混合,然后添加果胶作为增稠稳定剂进行调配,包装后于85℃杀菌7min即得成品
本发明饮料中的香菇多糖具有免疫调节、抗肿瘤、抗衰老、抗氧化、抗病毒和抗感染等功能,目前主要应用在医药和保健品上,香菇多糖作为药物使用时需要提取、精制,大部分保健品中的多糖也是经过提取的,但目前香菇多糖的提取率低,导致其成本居高不下。
许多保健品的配方中没有考虑消费者的消化吸收功能,保健食品是供慢性病人、康复期人群以及亚健康人群食用的,他们的消化吸入能力较弱且大多气血不足。该香菇保健饮料的生产,不仅利用了酒曲中的酶的作用提高了香菇多糖的提取率,并且加入了中药成分,具有补脾益气助消化、益气养阴、养血的功效。米酒因微生物发酵氨基酸含量丰富,人体必需氨基酸的含量全,还富含B族维生素,与该保健米酒中添加成分的功效相辅相成,并且该米酒酒精度低(小于1度),对消化***无刺激,适合体弱者、熬夜人群、重症恢复期病人、及产妇饮用。该保健米酒利用香菇柄作原料,废物利用,其它成分也都容易得到,不需要特殊的设备,生产设备及生产原料成本都不高,另外该保健米酒酸甜适口,具有米酒特有的香气,很好地掩盖了中药的气味和滋味,使得该保健米酒即具有保健功能,又具有适口性,易于被消费者接受。
本发明工艺独特,操作简单,适用于不同年龄性别的人群,该产品营养丰富,口感甘甜,集保健营养一体,服用、携带比较方便。
本发明认证检验结果:
一、卫生学、稳定性、功效成分检测,结果表明该保健饮料感官指标符合标准要求,卫生学指标和微生物指标符合《保健食品通用标准》的要求,产品的标志性成分——氨基酸、B族维生素含量满足功能要求,且稳定性良好;
二、安全性毒理学评价,是按照***《保健食品检验与评价技术规范》(2003年
版)进行实验,方法及结果如下:a.用该饮料105倍人体剂量一次性经口灌胃后,无明显的中毒表现或不良反应,2周内无动物死亡,表明本品属无毒类。b.遗传毒性试验中,Ames试验、小鼠骨髓细胞微核试验和小鼠***畸形实验3项遗传毒理性试验均为阴性结果,表明本品无致突变作用。c.大鼠30d喂养实验,未引起大鼠整体健康状况、生理生化功能和器官组织形态学各重要指标的异常变化。依据评价标准,该饮料是安全的。
三、动物功能性试验采用雄性ICR小鼠40只,将其分为3个剂量实验组和一个阴性对照组,实验组按人体推荐服用量的10、20、30倍连续灌胃30d,测定实验组和对照组受试小鼠的负重游泳时间、血乳酸、血清尿素、肝糖原值。结果表明:30倍人体剂量组小鼠负重游泳时间显著长于对照组)(P<0.05);20倍人体剂量组游泳后0分钟血乳酸含量和20分钟血乳酸曲线下面积显著低于对照组(P<0.01)、(P<0.05);10倍人体剂量组肝糖原含量显著高于对照组(P<0.05)。依据评价标准,该饮料具有缓解体力疲劳的保健功能。
四、***试验:结果为阴性。
适宜人群:易疲劳者;不适宜人群:少年儿童;食用方法及食用量:口服,每日1次,每次250ml;保质期24个月;贮藏方法:密封,置于阴凉、通风、干燥处。
具体实施方式:
一种香菇米酒保健饮料的制备方法步骤如下:
(1)、按配方质量份配比称取以下原料:糯米1000份、香菇柄100份、党参10份、白术8份、茯苓8份、甘草5份、大枣12份、龙眼肉5份、果胶0.15份、小曲4份;

Claims (1)

1.一种香菇米酒保健饮料的制备方法,其特征在于:
(1)、按配方质量份配比称取以下原料:糯米1000份、香菇柄100份、党参10份、白术8份、茯苓8份、甘草5份、大枣12份、龙眼肉5份、果胶0.15份、小曲4份;
(2)、将称取的糯米清洗除去杂质,然后加适量水浸渍16-24h,捞出得浸渍糯米A,备用;
(3)、将称取的党参、白术、茯苓、甘草用粉碎机粉碎,过50目筛,得混合颗粒物,再将该混合物加入500毫升的水浸泡2小时后进行过滤,得滤液B、浸泡颗粒物C;
(4)、将通过步骤(3)所得的滤液B于115℃灭菌15min,冷却后得液体D;
(5)、将称取的大枣、龙眼肉加入300毫升的水进行煎煮20分钟,然后过滤得滤液E;
