    本发明主要涉及食品及其制备方法技术领域,尤其涉及一种麦芽鱼肉酱及其制备方法。
背景技术
    市场上的即食肉食品的种类很少,基上是以生鲜肉为主,然而随着人们生活水平的提高,市场上单一的肉食品并不能满足人们的生活需求,且市售的即食肉食品的营养也是单一的,并没有体现其辅助的功效。
发明内容
本发明为了弥补已有技术的缺陷,提供一种麦芽鱼肉酱及其制备方法。
本发明是通过以下技术方案实现的:一种麦芽鱼肉酱,由以下重量份原料组成:辣椒酱130-150、番茄酱60-80、带鱼100-120、椰汁50-60、银耳20-30、花生米40-50、麦芽20-30、橘子20-30、山楂20-30、乌梅7-9、丁葵草7-8、金银花9-10、石榴叶4-5、花生壳5-6、牛奶80-100、生姜末10-20、红酒20-30、食用盐20-30、白砂糖20-30、水适量。
一种麦芽鱼肉酱的制备方法,包括以下步骤:
(1)将带鱼洗净,取其肉,放入锅中,加入牛奶、生姜末、红酒,加热熬煮1-2小时,冷却后,将液体过滤掉,取剩余物,即鱼肉、生姜末备用;
(2)将银耳、花生、麦芽米洗净,与椰汁一起,加热焖煮1-2小时,然后将银耳、花生米、麦芽捞出备用;
(3)将橘子、山楂洗净,取其果肉,与银耳、花生米、麦芽一起打成花生酱;
(4)将乌梅、丁葵草、金银花、石榴叶、花生壳用4-7倍量的水加热提取,将所得中药提取物加热浓缩,得到中药浓缩液;
(5)将辣椒酱、番茄酱、食盐、白砂糖倒入锅中,加热,并不断翻炒,将鱼肉、生姜末、花生酱、中药浓缩液倒入其中,充分搅拌均匀,冷却后,灌装即可。

一种麦芽鱼肉酱的制备方法,包括以下步骤:

1.一种麦芽鱼肉酱,其特征在于,由以下重量份原料组成:辣椒酱130-150、番茄酱60-80、带鱼100-120、椰汁50-60、银耳20-30、花生米40-50、麦芽20-30、橘子20-30、山楂20-30、乌梅7-9、丁葵草7-8、金银花9-10、石榴叶4-5、花生壳5-6、牛奶80-100、生姜末10-20、红酒20-30、食用盐20-30、白砂糖20-30、水适量。
2.如权利要求1所述的一种麦芽鱼肉酱的制备方法,其特征在于,包括以下步骤:
(1)将带鱼洗净,取其肉,放入锅中,加入牛奶、生姜末、红酒,加热熬煮1-2小时,冷却后,将液体过滤掉,取剩余物,即鱼肉、生姜末备用;
(2)将银耳、花生、麦芽米洗净,与椰汁一起,加热焖煮1-2小时,然后将银耳、花生米、麦芽捞出备用;
