Abstract

a invenção pertence a um processo para produção simultânea de um produto de fórmula infantil e um produto lácteo ácido a partir de leite animal desengordurado, que compreende (a) processar o leite para um fluxo de caseína, um fluxo de proteína do soro do leite e um fluxo de lactose: (i) submetendo o leite animal desengordurado a uma etapa de filtração sobre uma membrana de microfiltração capaz de reter bactérias e permear proteínas do leite, para fornecer um leite desbacterizado como permeado; (ii) submetendo o permeado originário da etapa (i) a uma etapa de filtração sobre uma membrana de microfiltração capaz de reter caseína e permear proteínas do soro do leite, para fornecer um fluxo de caseína como retentado e um permeado que compreende proteína do soro do leite; (iii) fracionando o permeado originário da etapa (ii) para um fluxo de proteína do soro do leite e um fluxo de lactose; (b) combinar parte do fluxo de caseína, pelo menos parte do fluxo de proteína do soro do leite originário da etapa (a) e uma fonte de lactose para se obter um fluxo recombinado, em que a fonte de lactose compreende soro do leite ácido; (c) usar o fluxo recombinado originário da etapa (b) na fabricação do produto de fórmula infantil; (d) usar parte do fluxo de caseína originário da etapa (a) na fabricação do produto lácteo ácido. a invenção refere-se ainda ao produto de fórmula infantil que pode ser obtido pela etapa (c) do processo de acordo com a invenção, e ao produto lácteo ácido que pode ser obtido pela etapa (d) do processo de acordo com a invenção.
