Abstract

"Pó SOLúVEL PARA BEBIDA TIPO CAFé EXPRESSO". A presente invenção refere-se a um pó para bebida tipo café solúvel, que, ao se adicionar água forma um café tendo superfície superior espumada. Em particular a invenção refere-se a uma bebida tipo café solúvel que assimila bastante as características de textura de um café expresso italiano, isto é, uma bebida com uma "creme fino", mas que apresenta amargor reduzido, comparado com uma infusão fresca de café expresso, tendo, apesar disso, um aroma forte. O pó para bebida tipo café solúvel é caracterizado por uma matriz contendo gás solúvel composta, com base no peso total da matéria seca da matriz, de : entre 10% e 35% em peso de sólidos de café solúveis, cerca de 10% a cerca de 35% em peso de formador de creme pré-floculado, cerca de 12% a cerca de 30% em peso de oligossacarídeos efetivos para diluição da proteína no formador de creme. O pó solúvel para bebida, ao ser reconstituído, proporciona uma superfície superior espumada com base em todos os ingredientes, sendo que toda a espuma da superfície superior espumada é feita, substancialmente, de bolhas tendo diâmetro na faixa de 0,05 a 0,5 mm. Para um aroma particularmente bom, o pó para bebida tipo café solúvel compreende aroma aquoso. Em um outro aspecto, a invenção refere-se a um processo para preparação desse produto.
