Abstract

A találmány oldható kávéitalporra vonatkozik, amelyből vízhozzáadásával habos tetejű kávéitalt lehet készíteni. A találmányszerinti oldható kávéitalpor egy oldható gáztartalmú mátrixottartalmaz, amelyben a mátrix összes szárazanyagára számítva 10-35 tömeg% oldhatószilárd kávéanyag, mintegy 10-35 tömeg% mennyiségű előflokkuláltkávékrém, mintegy 12-30 tömeg% mennyiségben a kávékrém fehérjéithatásosan hígító oligoszacharid van, és amely az összes összetevőtmagába foglaló habos felső felületet biztosít az oldható italporhelyreállítása után, és a habos felszíni rétegben a hab lényegébenteljesen 0,05-0,5 mm átmérőjű buborékokból áll.
