Abstract
Se refiere a un proceso de conservacion de diferentes alimentos que garantizan al alimento procesado un prolongado plazo de validez, pudiendo extenderse hasta por cinco anos sin adicionar conservantes ni utilizar congelamiento o enfriamiento. El referido proceso permite, además, que las características naturales del alimento procesado como el sabor y la textura se mantengan. El proceso de conservacion de diferentes alimentos de a presente invencion comprende las etapas: a. acondicionamiento del alimento en el envase; b. calentamiento del sistema alimento/envase manteniendo al alimento en contacto con el aire atmosférico externo al envase; c. modificacion de la composicion gaseosa en el interior del envase conteniendo el alimento; d. cierre/sellado del envase conteniendo al alimento; e. tratamiento térmico del envase cerrado/sellado conteniendo alimento; y puede ser utilizado para diversos tipos de alimentos comprendiendo, entre ellos, pescados, frutos de mar, carnes de aves, carnes bovinas, carnes porcinas, fiambres, patés, pastas, cereales, legumbres, verduras, frutas, productos lácteos, comidas rápidas, postres o mezclas entre ellos.
