Abstract
PROCESSO DE CONSERVAçãO DE ALIMENTOS. A presente invenção refere-se a um novo processo de conservação de diferentes alimentos que garante ao alimento processado um prolongado prazo de validade, podendo se estender em até cinco anos sem a adição de conservantes, e utilização de congelamento ou resfriamento. O referido processo permite, ainda, que as características naturais do alimento processado como o sabor e a textura sejam mantidos. O processo de conservação de diferentes alimentos da presente invenção compreende as etapas: a. acondicionamento do alimento em embalagem; b. aquecimento do sistema alimento 1 embalagem mantendo o alimento em contato com o ar atmosférico externo à embalagem; c. alteração da composição gasosa no interior da embalagem contendo o alimento; d. fechamento / selagem da embalagem contendo o alimento; e. tratamento térmico da embalagem fechada/selada contendo alimento; e pode ser utilizado para diversos tipos de alimentos compreendendo, entre os mesmos, pescados, frutos do mar, carnes de aves, carnes bovinas, carnes sumas, frios, patês, massas, cereais, legumes, verduras, frutas, produtos lácteos, comidas prontas, sobremesas ou misturas entre os mesmos.
