Abstract

L'invention concerne un procédé de mise en forme, d'emballage de café vert (cru) ou torréfié moulu de différents types et qualités qui diffèrent en termes de traitement thermique et de mouture (finesse) ainsi que de leurs mélanges. Le but de l'invention consiste à obtenir un produit final qui est une boisson à base de café avec des propriétés naturelles maximales et à former un comprimé stable et résistant pour la préparation de café présentant une bonne solubilité dans l'eau, la préservation de toutes les qualités organoleptiques et la possibilité d'utiliser n'importe quelle méthode d'extraction (macération, digestion, percolation ou perforation) avec une bonne solubilité. L'invention est caractérisée par un processus technologique court et ininterrompu et notamment par un traitement hydrothermique spécial du café moulu avec de la vapeur d'eau et par régime de pressage.
