Abstract
본 발명은 오이식초를 함유한 숙취해소용 음료 조성물에 관한 것으로서, 정제수 100중량부에 오이식초 2~15중량부, 헛개나무 추출농축액 0.5~5중량부, 울금 추출농축액 0.1~0.5중량부를 혼합하여 이루어진 것을 특징으로 한다. 상기의 방법으로 제조된 오이식초를 함유한 숙취해소용 음료 조성물은 섭취시 알코올을 섭취한 체내에서 ADH 및 ALDH 활성이 증가함과 동시에 알코올농도 및 혈중 아세트알데히드농도가 감소함에 따라 숙취의 원인인 알코올과 아세트알데히드의 대사를 촉진시켜 체내 알코올의 분해를 촉진하여 숙취해소 및 알코올성 간장해 개선을 할 수 있는 음료를 제공할 수 있다. 또, 상기 오이식초를 함유한 숙취해소 음료 조성물에 액상과당, 배 농축액, 구연산, 오렌지향, 비타비티, 카라멜비에이, 벌꿀향, 로얄제리 추출물, 비타민 B1, 비타민 B2, 멘톨 중 하나 또는 둘 이상을 더 혼합함으로써, 주재료의 기능을 강화하여 주며, 맛, 향, 색을 더욱 향상하여 소비자의 요구를 충분히 제공할 수 있는 기능성 식품을 제공할 수 있다.
Description
본 발명은 오이식초를 함유한 숙취해소용 음료 조성물에 관한 것으로, 더 상세하게는 정제수 100중량부에 오이식초 2~15중량부, 헛개나무 추출농축액 0.5~5중량부, 울금 추출농축액 0.1~0.5중량부를 혼합하여 이루어짐에 따라, 섭취시 알코올을 섭취한 체내에서 ADH 및 ALDH 활성이 증가함과 동시에 알코올농도 및 혈중 아세트알데히드농도가 감소함에 따라 숙취의 원인인 알코올과 아세트알데히드의 대사를 촉진시켜 체내 알코올의 분해를 촉진하여 숙취해소 및 알코올성 간장해 개선을 할 수 있는 음료를 제공할 수 있도록 제조된 오이식초를 함유한 숙취해소용 음료 조성물에 관한 것이다.
최근 경제성장과 더불어 식생활의 서구화로 인한 비만 인구의 증가, 과중한 업무로 인한 스트레스, 과음 또는 각종 질환 등으로 인하여 지방간을 비롯한 간질환 환자가 계속 증가하는 추세에 있다. 특히, 우리나라 사람들은 잘못된 식습관인 과음으로 인해 외국인들보다 간염을 비롯한 간 질환 발생 비율이 높을 뿐 아니라 간암에 의한 사망 비율이 높은 것으로 보고된 바 있다.
상기와 같은 숙취를 신속히 해소하기 위해서는 체내에 흡수된 알코올의 대사 산물인 아세트알데히드가 혈액 중에 잔존하지 아니하고, 우리 몸속에 있는 효소의 작용으로 간에서 물과 탄산가스로 분해되어야 하는데, 이러한 숙취 작용은 마신 술의 종류와 양, 그리고 개개인의 신체조건에 따라 다르다. 그러나 한 가지 확실한 사실은 아세트알데히드의 신속한 해독과 배출의 능률을 높이는 데 있다.
따라서, 평소에 간 기능을 증진할 수 있는 식품을 꾸준히 섭취함으로써 음주로 인한 급격한 간 독성을 사전에 예방할 수 있기에 현대인들에게 음주 전후에 숙취 해소와 간 보호를 위한 각종 기능성 식품들이 많은 각광을 받고 있으며, 이와 관련한 다양한 제품들의 핵심은 숙취해소용 음료라 할 수 있겠다. 이 숙취해소용 음료의 시장이 각광을 받고 있는 것은 주된 음주연령층인 30∼50대의 직장인들이 소주나 위스키 등 비교적 고알코올을 선호하는 음주층으로 음주 후 다음날 원활한 활동을 위하여 숙취해소용 음료를 선호하고 있으며, 최근에는 여성과 대학생층 등 젊은층에서도 그 수요가 점차 늘어나고 있는 추세에 있다.
따라서, 상기와 같은 목적으로 특허출원된 예를 살펴보면, 대한민국 특허 제181168호의 오리나무와 마가목의 잎, 줄기, 뿌리를 직접 분말화 한 것을 주원료로 하여 숙취해소용 천연차를 제조하는 것에 관한 기술, 대한민국 공개특허공보 제2002-23770호의 음주 후 숙취해소를 위한 건강보조식품에 관한 것으로 오리나무의 수피, 눈지, 적양실을 주원료로 한 천연환, 타뷰렛, 캅셀 형태의 제조에 관한 기술, 대한민국 공개특허공보 제2002-48212호의 토종국산 헛개나무(잎, 줄기, 열매)와 오리나무 추출물을 주원료로 하고 여기에 갈화 등 한약재 추출물과 타우린 등을 넣어 숙취해소용 음료 제조에 관한 기술, 대한민국 특허 제345798호의 헛개나무, 오리나무, 칡을 물과 에틸알코올을 일정비율로 혼합한 용매를 이용하여 추출, 농축하여 만든 숙취해소용 기능성 식품의 제조방법에 관한 기술, 그리고 대한민국 특허 제 2003-385844호의 헛개나무와 잎, 열매를 주원료로 하여 음건(陰乾)한 후 중탕과정을 거쳐 복용이 간편하고 인체에 흡수가 빠른 숙취해소용 음료의 제조에 관한 기술들이 알려져 있다.
그러나, 오이를 발효하여 제조된 오이식초를 함유한 숙취해소 음료는 전무하다.
본 발명은 상기와 같은 문제를 해결하고자 발명한 것으로, 그 목적은 정제수 100중량부에 오이식초 2~15중량부, 헛개나무 추출농축액 0.5~5중량부, 울금 추출농축액 0.1~0.5중량부를 혼합하여 이루어진 오이식초를 함유한 숙취해소용 음료 조성물을 제공하는 목적으로 한다.
또 다른 목적은 상기 오이식초를 함유한 숙취해소 음료 조성물에 액상과당, 배 농축액, 구연산, 오렌지향, 비타비티, 카라멜비에이, 벌꿀향, 로얄제리 추출물, 비타민 B1, 비타민 B2, 멘톨 중 하나 또는 둘 이상을 더 혼합하여 제조함으로써 주재료의 기능을 강화하여 주며, 맛, 향, 색을 더욱 향상할 수 있도록 하는 것이다.
상기와 같은 목적을 달성하기 위하여 본 발명에 따른 오이식초를 함유한 숙취해서 음료 조성물은 정제수 100중량부에 오이식초 2~15중량부, 헛개나무 추출농축액 0.5~5중량부, 울금 추출농축액 0.1~0.5중량부를 혼합하여 이루어진 것을 특징으로 한다.
또, 상기 오이식초는, 세척된 오이를 분쇄하고, 상기 분쇄된 오이에 당도가 8~30°brix가 되도록 당을 첨가하고, 상기 당이 첨가된 오이에 주모를 중량대비 1 : 0.05~0.15의 비율로 접종하고 25~30℃에서 4~8일 동안 알코올 발효하고, 상기 알코올발효된 알코올발효액을 65~80℃에서 5~20분 동안 살균하고, 상기 살균된 알코올발효액을 원심분리 및 여과하고, 상기 원심분리 및 여과된 오이여과액에 종초를 중량대비 1 : 0.05~0.15의 비율로 접종하고 25~30℃에서 200~300rpm으로 교반하여 10~15일 동안 초산발효하고, 상기 초산발효된 초산발효액을 65~80℃에서 5~20분 동안 살균하고 여과하여 제조된 것을 특징으로 한다.
또, 상기 오이식초의 주모는 상기 당이 첨가된 오이에 saccharomyces cerevisiae 균주를 접종하여 25~30℃에서 4~8일 동안 정치 배양한 것을 특징으로 한다.
또, 상기 오이식초의 종초는 상기 원심분리 및 여과된 오이여과액에 아세트산균(acetobacter sp.)을 접종하여 25~30℃에서 200~300rpm으로 4~8일 동안 진탕 배양한 것을 특징으로 한다.
또, 상기 오이식초를 함유한 숙취해소 음료 조성물에 액상과당, 배 농축액, 구연산, 오렌지향, 비타비티, 카라멜비에이, 벌꿀향, 로얄제리 추출물, 비타민 B1, 비타민 B2, 멘톨 중 하나 또는 둘 이상을 혼합한 것을 더 포함하는 것을 특징으로 한다.
본 발명에 따른 오이식초를 함유한 숙취해소용 음료에 의하면, 섭취시 알코올을 섭취한 체내에서 ADH 및 ALDH 활성이 증가함과 동시에 알코올농도 및 혈중 아세트알데히드농도가 감소함에 따라 숙취의 원인인 알코올과 아세트알데히드의 대사를 촉진시켜 체내 알코올의 분해를 촉진하여 숙취해소 및 알코올성 간장해 개선을 할 수 있는 음료를 제공할 수 있는 효과가 있다.
도 1은 알코올과 헛개열매 추출농축액을 함유한 숙취해소용 물질, 알코올과 본 발명에 따라 제조된 오이식초를 함유한 숙취해소용 음료의 급여에 따른 체중의 변화이다.
도 2는 헛개열매 추출농축액을 함유한 숙취해소용 물질과 본 발명에 따라 제조된 오이식초를 함유한 숙취해소용 음료를 알코올 투여 전에 장기적으로 섭취시켰을 때 나타나는 혈장 알코올과 아세트알데히드 농도 변화이다.
도 3은 알코올 대사에 간여하는 ADH, ALDH의 활성을 조사한 결과이다.

본 발명은 오이식초, 헛개나무 추출농축액, 울금 추출농축액, 정제수를 주재료로 한 오이식초를 함유한 숙취해소용 음료 조성물에 관한 것이다.
더 상세하게는, 정제수 100중량부에 오이식초 2~15중량부, 헛개나무 추출농축액 0.5~5중량부, 울금 추출농축액 0.1~0.5중량부를 주재료로 한 오이식초를 함유한 숙취해소용 음료 조성물에 관한 것이다.
상기 오이식초는,
세척된 오이를 0.1~10mm의 크기로 분쇄하고, 상기 분쇄된 오이에 당도가 8~30°brix가 되도록 당을 첨가하고, 상기 당이 첨가된 오이에 주모를 중량대비 1 : 0.05~0.15의 비율로 접종하고 25~30℃에서 4~8일 동안 알코올 발효하고, 상기 알코올발효된 알코올발효액을 65~80℃에서 5~20분 동안 살균하고, 상기 살균된 알코올발효액을 200~300rpm으로 원심분리하고 0.45㎛인 여과막으로 여과하고, 상기 원심분리 및 여과된 오이여과액에 종초를 중량대비 1 : 0.05~0.15의 비율로 접종하고 25~30℃에서 200~300rpm으로 교반하여 10~15일 동안 초산발효하고, 상기 초산발효된 초산발효액을 65~80℃에서 5~20분 동안 살균하고 0.45㎛인 여과막으로 여과하여 제조된 것이다.
여기서, 상기 세척된 오이를 상기 세척된 오이를 0.1~10mm의 두께로 분쇄하는 것은 하기의 당도조절단계, 알코올발효단계에서 상기 세척된 오이에 당 및 주모가 원활하게 침투되게 하기 위한 것으로 만약, 상기 세척된 오이를 0.1mm 미만으로 분쇄할 경우에는 0.1~10mm로 분쇄할 경우와 동일한 수율 및 활성을 얻기 때문에 필요 이상의 분쇄를 하게 되어 비경제적이며, 상기 세척된 오이를 10mm를 초과하여 분쇄할 경우에는 상기 세척된 오이에 당 및 주모가 원활하게 침투되기 어려워서 당도조절 및 알코올발효가 원활하게 이루어지지 않을 수 있다.
그리고, 상기 분쇄된 오이에 당도가 8~30°brix가 되도록 당을 첨가하는 것은 하기의 알코올발효, 초산발효를 통해 과실 식초의 품질 기준인 총 산도를 4.0%이상으로 발효시키기 위함이며, 알코올 함량을 5~9% 정도가 조절하기 위한 것으로 만약, 상기 분쇄된 오이에 당도가 8°brix 미만이 되도록 당을 첨가하게 되면 알코올 함량이 낮아 식초를 원활하게 제조하기 어려울 수 있으며, 상기 분쇄된 오이에 당도가 30°brix를 초과하도록 당을 첨가하게 되면 알코올함량이 너무 높아 하기의 초산발효에서 초산균의 활착 및 증식이 어려워져 식초를 원활하게 제조하기 어렵게 된다.
그리고 또한, 상기 당은 과실농축액, 꿀, 설탕 중 하나 또는 둘 이상을 사용하는 것이며 바람직하게는, 과실농축액 중 사과농축액을 사용하는 것이다.
그리고, 상기 주모는 상기 당이 첨가된 오이에 saccharomyces cerevisiae 균주를 접종하여 25~30℃에서 4~8일 동안 정치 배양하여 제조하는 것으로, 상기 saccharomyces cerevisiae 균주는 알코올 발효력이 강한 상면 발효 효모로, 알코올 저항성이 좋으며, 내당성이 있고, 알코올 발효 후 공기 존재하에서 피막을 형성하는 특징이 있다.
여기서, 상기 당이 첨가된 오이에 saccharomyces cerevisiae 균주를 접종하여 25~30℃에서 4~8일 동안 정치 배양하여 주모를 제조하는 것은 최적의 당도변화 및 알코올 함량에 맞는 알코올발효를 원활하게 하기 위함이다.
그리고, 상기 당이 첨가된 오이에 주모를 중량대비 1 : 0.05~0.15 비율로 접종하고 25~30℃에서 4~8일 동안 알코올 발효하는 것은 식초에 맞는 알코올과 당도의 함량을 도출하기 위함이다.
만약, 상기 당이 첨가된 오이에 주모를 중량대비 1 :0.05~0.15의 비율로 접종하고 25℃ 미만으로 발효할 경우에는 식초에 맞는 알코올, 당도의 함량이 도출되지 못하여 식초를 원활하게 제조하기 어려울 수 있으며, 상기 당이 첨가된 오이에 주모를 중량대비 1 : 0.15~0.15의 비율로 접종하고 30℃ 초과하여 발효할 경우에는 높은 온도로 인하여 알코올발효가 원활하게 이루어지지 않아 식초를 제조하기 어려울 수 있다.
그리고, 만약, 상기 당이 첨가된 오이에 주모를 중량대비 1 : 0.05~0.15의 비율로 접종하고 25~30℃에서 4일 미만으로 발효할 경우에는 식초에 맞는 알코올, 당도의 함량이 도출되지 못하여 식초를 원활하게 제조하기 어려울 수 있으며, 8일을 초과하여 발효할 경우에는 알코올함량은 어느 정도 증가할 수 있지만 당도가 더 이상 변하지 않게 되어 필요 이상의 발효를 하게 되어 비경제적이다.
그리고, 상기 당이 첨가된 오이에 주모를 중량대비 1 : 0.05~0.15의 비율로 접종하는 것은 상기 당이 첨가된 오이에 상기 주모가 골고루 접종되어 알코올 발효가 원활하게 진행되게 하기 위함이다.
만약, 상기 당이 첨가된 오이에 주모를 중량대비 1 : 0.05 미만의 비율로 접종할 경우에는 상기 당이 첨가된 오이에 주모를 골고루 접종되지 못하여 알코올발효가 원활하게 진행되지 못할 수 있으며, 상기 첨가된 오이에 주모를 중량대비 1 : 0.15를 초과한 비율로 접종할 경우에는 상기 당이 첨가된 오이에 주모를 필요 이상으로 접종되어 비경제적이며 오히려 알코올발효의 시간이 더 오래 걸리게 된다.
그리고, 상기 알코올발효된 알코올발효액을 65~80℃에서 5~20분 동안 살균하는 것은 상기 알코올발효된 알코올발효액 성분의 활성을 손상시키지 않으면서 유해균을 살균하기 위함이다.
만약, 상기 알코올발효된 알코올발효액을 65℃, 5분 미만에서 살균할 경우에는 낮은 온도로 인하여 살균이 거의 이루어지지 않으며, 80℃, 20분을 초과하여 살균할 경우에는 높은 온도로 인하여 상기 알코올발효된 알코올발효액 성분의 활성을 손상시키게 되어 원활하게 식초를 제조할 수 없게 된다.
그리고, 상기 살균된 알코올발효액을 200~300rpm으로 원심분리하고 0.45㎛인 여과막으로 여과하는 것은 과피 등의 찌꺼기를 용이하게 제거하기 위함이다.
만약, 상기 살균된 알코올발효액을 200rpm 미만으로 원심분리할 경우에는 과피 등의 찌꺼기가 용이하게 침전되지 않아 제거하기 어려울 수 있으며, 300rpm을 초과하여 원심분리할 경우에는 필요 이상으로 원심분리하게 되어 비경제적이다.
그리고, 상기 종초는 상기 원심분리 및 여과된 오이여과액에 아세트산균(acetobacter sp.)을 접종하여 25~30℃에서 200~300rpm으로 4~8일 동안 진탕 배양한 것으로, 상기 아세트산균(acetobacter sp.)은 살균능력이 있어 대장균이나 포도상구균과 같이 식중독을 일으키는 세균을 죽임으로써 음식의 부패를 막으며, 보통 맥아식초, 사과초, 양조식초, 알코올식초 등을 만드는 데 사용된다.
여기서, 상기 종초를 상기 원심분리 및 여과된 오이여과액에 아세트산균(acetobacter sp.)을 접종하여 25~30℃에서 200~300rpm으로 4~8일 동안 진탕 배양하여 제조하는 것은 상기 아세트산균의 생육 최적온도와 알코올 함량에 맞는 초산발효를 원활하게 하기 위함이다.
그리고, 상기 원심분리 및 여과된 오이여과액에 종초를 중량대비 1 : 0.05~0.15의 비율로 접종하고 25~30℃에서 200~300rpm으로 교반하여 10~15일 동안 초산발효하는 것은 식초에 맞은 알코올과 당도의 함량을 도출하기 위함이다.
만약, 상기 원심분리 및 여과된 오이여과액에 종초를 중량대비 1 :0.15~0.15의 비율로 접종하고 25℃ 미만으로 발효할 경우에는 아세트산균이 원활하게 생육하지 못하여 식초에 맞는 알코올과 당도의 함량이 도출되지 못하여 식초를 원활하게 제조하기 어려울 수 있으며, 30℃ 초과하여 발효할 경우에는 높은 온도로 인하여 아세트산균이 생육하지 못하여 발효가 이루어지지 않을 수 있다.
그리고 만약, 상기 원심분리 및 여과된 오이여과액에 종초를 접종하고 25~30℃에서 200rpm, 10일 미만으로 발효할 경우에는 식초에 맞는 알코올, 당도의 함량이 도출되지 못하여 식초를 원활하게 제조하기 어려울 수 있으며, 300rpm,15일을 초과하여 발효할 경우에는 필요 이상의 발효를 하게 되어 비경제적이다.
그리고, 상기 원심분리 및 여과된 오이여과액에 종초를 중량대비 1 :0.15~0.15의 비율로 접종하는 것은 상기 원심분리 및 여과된 오이여과액에 상기 종초가 골고루 접종되어 초산발효가 원활하게 진행되게 하기 위함이다.
만약, 상기 원심분리 및 여과된 오이여과액에 종초를 1 : 0.05 미만의 비율로 접종할 경우에는 상기 원심분리 및 여과된 오이여과액에 상기 제7단계에서 제조된 종초가 골고루 접종되지 못하여 초산발효가 원활하게 진행되지 못할 수 있으며, 상기 제6단계에서 원심분리 및 여과된 오이여과액에 종초를 1 : 0.15를 초과한 비율로 접종할 경우에는 상기 원심분리 및 여과된 오이여과액에 종초가 필요 이상으로 접종되어 비경제적이며 오히려 초산발효의 시간이 더 오래 걸리게 된다.
그리고, 상기 초산발효된 초산발효액을 65~80℃에서 5~20분 동안 살균하고 0.45㎛인 여과막으로 여과하는 것은 상기 초산발효된 초산발효액에 추가적으로 발생한 유해균을 살균하고, 추가적으로 발생한 불순물을 제거하기 위함이다.
만약, 상기 초산발효된 초산발효액을 65℃, 5분 미만에서 살균할 경우에는 낮은 온도로 인하여 살균이 거의 이루어지지 않으며, 80℃, 20분을 초과하여 살균할 경우에는 높은 온도로 인하여 상기 초산발효된 초산발효액 성분의 활성을 손상시키게 되어 원활하게 식초를 제조할 수 없게 된다.
그리고, 상기 헛개나무 추출농축액은,
먼저, 상기 헛개나무는 갈매나무과의 낙엽교목으로써, 은은한 향기가 있고, 단맛이 있어 먹을 수 있으며 음식맛을 한결 돋운다. 《본초강목》에 술을 썩히는 작용이 있다고 하며 생즙은 술독을 풀고 구역질을 멎게 한다고 하였다. 목재는 건축재·가구재·악기재 등으로 사용하고 있다.
상기 헛개나무의 열매, 줄기, 잎을 모두 사용할 수 있으며, 바람직하게는 열매를 사용하는 것이다.
그리고, 상기 헛개나무 추출농축액은 당업계에서 일반적으로 사용하는 방법으로 추출한 것을 사용하는 것으로 그 추출방법에 구애받지 않는다.
바람직하게는, 상기 헛개나무의 열매를 건조하고, 정제수와 혼합하여 증숙하여 추출하는 것이다.
그리고, 상기 울금 추출농축액은,
먼저, 상기 울금은 생강과에 속하는 다년생 초본식물로써, 피부질환 예방 및 지혈, 숙취해소, 치질개선, 통증제거, 항암작용, 노화방지, 당뇨병치료, 동맥경화예방, 해독효소 작용향상, 활성산소 억제, 열병치료 등의 효과가 있다.
상기 울금 추출농축액은 당업계에서 일반적으로 사용하는 방법으로 추출하는 것을 사용하는 것으로 추출방법에 구애받지 않는다.
바람직하게는, 상기 울금의 뿌리를 건조하고, 정제수와 혼합하여 증숙하여 추출하는 것이다.
그리고, 오이식초를 함유한 숙취해소용 음료 조성물을 정제수 100중량부에 오이식초 2~15중량부, 헛개나무 추출농축액 0.5~5중량부, 울금 추출농축액 0.1~0.5중량를 혼합하여 사용하는 것은 오이식초, 헛개나무 추출농축액, 울금 추출농축액을 통해 알코올을 섭취한 체내에서 ADH 및 ALDH 활성이 증가함과 동시에 알코올농도 및 혈중 아세트알데히드농도가 감소함에 따라 숙취의 원인인 알코올과 아세트알데히드의 대사를 촉진시켜 체내 알코올의 분해를 촉진하여 숙취해소 및 알코올성 간장해 개선을 할 수 있는 음료를 제공할 수 있도록 하기 위함이다.
만약, 상기 정제수 100중량부에 오이식초를 2중량부 미만으로 혼합할 경우에는 상기 정제수에 오이식초가 골고루 혼합되지 못할 뿐 아니라 숙취의 원인인 알코올과 아세트알데히드의 대사를 원활하게 촉진시키기 어려울 수 있으며, 상기 정제수 100중량부에 오이에 당을 첨가하고 알코올발효 및 초산발효를 하여 제조된 오이식초를 15중량부를 초과하여 혼합할 경우에는 상기 오이식초의 시큼한 맛이 강하여 숙취자가 거부감이 생길 수 있으며 숙취해소 및 알코올성 간장해 개선을 하기에 필요 이상으로 오이식초가 혼합되어 비경제적이다.
그리고 만약, 상기 정제수 100중량부에 헛개나무 추출농축액을 0.5중량부 미만으로 혼합할 경우에는 상기 정제수에 헛개나무 추출농축액이 골고루 혼합되지 못할 뿐 아니라 숙취의 원인인 알코올과 아세트알데히드의 대사를 원활하게 촉진시키기 어려울 수 있으며, 상기 정제수 100중량부에 헛개나무 추출농축액을 5중량부 초과하여 혼합할 경우에는 헛개나무의 씁쓸한 맛이 강하여 숙취자가 거부감이 생길 수 있으며 숙취해소 및 알코올성 간장해 개선을 하기에 필요 이상으로 헛개나무 추출농축액이 혼합되어 비경제적이다.
그리고 만약, 상기 정제수 100중량부에 울금 추출농축액을 0.1중량부 미만으로 혼합할 경우에는 소량이어서 숙취해소 및 해독을 원활하게 하기 어려울 수 있으며, 상기 정제수 100중량부에 울금 추출농축액을 0.5중량부 초과하여 혼합할 경우에는 매운맛이 강하여 숙취자가 거부감이 생길 수 있으며 숙취해소 및 알코올성 간장해 개선을 하기에 필요 이상으로 울금 추출농축액이 혼합되어 비경제적이다.
그리고, 상기 오이식초를 함유한 숙취해소용 음료 조성물에 액상과당, 배 농축액, 구연산, 오렌지향, 비타비티, 카라멜비에이, 벌꿀향, 로얄제리 추출물, 비타민 B1, 비타민 B2, 멘톨 중 하나 또는 둘 이상을 혼합한 것을 더 포함할 수 있다.
더 상세하게는, 상기 오이식초를 함유한 숙취해소용 음료 조성물의 정제수 100중량부에 액상과당 10~20중량부, 배 농축액 0.5~2중량부, 구연산 0.1~0.3중량부, 오렌지향 0.03~0.07중량부, 비타비티 0.02~0.06중량부, 카라멜비에이 0.02~0.04중량부, 벌꿀향 0.01~0.03중량부, 로얄제리 추출물 0.05~0.02중량부, 비타민 B1 0.0005~0.002중량부, 비타민 B2 0.0005~0.002중량부, 멘톨0.0003~0.0007중량부 중 하나 또는 둘 이상을 혼합한 것을 더 포함할 수 있다.
상기 오이식초를 함유한 숙취해소용 음료 조성물의 정제수 100중량부에 배 농축액 0.5~2중량부, 구연산 0.1~0.3중량부, 오렌지향 0.03~0.07중량부, 비타비티 0.02~0.06중량부, 카라멜비에이 0.02~0.04중량부, 벌꿀향 0.01~0.03중량부, 로얄제리 추출물 0.05~0.02중량부, 비타민 B1 0.0005~0.002중량부, 비타민 B2 0.0005~0.0m02중량부, 멘톨0.0003~0.0007중량부 중 하나 또는 둘 이상을 혼합함으로써, 주재료의 기능을 강화하여 주며, 맛, 향, 색을 더욱 향상할 수 있도록 하는 것이다.
상기 액상과당은 음료의 기능성을 강화하여 주는 역할을 수행하도록 첨가되며, 단당류, 이당류 중 하나 또는 둥 이상을 혼합하여 사용할 수 있다.
더 상세하게는 꿀, 설탕, 물엿, 과당, 과실농축액 중 하나 또는 둘 이상을 혼합하여 사용할 수 있다.
상기 배 농축액은 알칼리성 식품으로서 주성분은 탄수화물이고 당분, 사과산, 주석산,시트르산 등의 유기산, 비타민 B와 C, 섬유소·지방 등이 들어 있어 기관지 질환에 효과가 있어 감기·해소·천식 등에 좋으며, 배변과 이뇨작용을 돕는다. 가래와 기침을 없애고 목이 쉬었을 때나 배가 차고 아플 때 증상을 완화해 주며 종기를 치료하는 데도 도움을 주며, 그 밖에 해독작용이 있어 숙취를 없애준다.
그리고, 상기 구연산은 체내의 칼슘흡수를 촉진시키며, 과즙·청량음료에 첨가하거나, 의약품·이뇨성 음료에 신맛을 내는 외에 분석시약으로도 사용되고, 혈액응고제로도 이용된다.
그리고, 상기 로얄제리 추출물은 담황색의 버터 상태로 된 액체로 특이한 향기가 있으며, 단백질 20∼30%, 탄수화물 15%, 지방 10∼15%, 수분 50∼60%를 함유하고, 그 밖에도 여러 종류의 비타민을 풍부하게 함유하고 있으며, 강장ㆍ강정ㆍ영양제ㆍ 피로ㆍ권태ㆍ쇠약ㆍ빈혈ㆍ체질개선ㆍ갱년기 장애ㆍ성기능 부전ㆍ피부미용ㆍ노화방지 등에 애용된다.
그리고, 상기 비타민 B1은 비타민 B1의 결핍은 심각한 치매 증상인 베르니케-코르사코프를 유발시키기도 한다. 따라서, 숙취해소용 음료수에 식품조성물의 구성성분으로 첨가되는 경우 알코올 및 격무로 인해 유발되는 피로는 물론이거니와, 치매증상의 예방에도 도움을 줄 수 있다.
그리고, 상기 비타민 B2는 사람의 성장발육에 중요하고 구각염, 설염을 예방하며, 특히 우리나라에서 부족하기 쉬운 비타민이다.
그리고, 상기 오렌지향과 벌꿀향, 비타비티, 카라멜비에이, 멘톨은 향료 및 착색료로 사용하는 것이다.
상기의 방법으로 제조된 오이식초를 함유한 숙취해소용 음료조성물은 섭취시 알코올을 섭취한 체내에서 ADH 및 ALDH 활성이 증가함과 동시에 알코올농도 및 혈중 아세트알데히드농도가 감소함에 따라 숙취의 원인인 알코올과 아세트알데히드의 대사를 촉진시켜 체내 알코올의 분해를 촉진하여 숙취해소 및 알코올성 간장해 개선을 할 수 있는 음료를 제공할 수 있는 효과가 있다.
이하에서 실시예를 통하여 본 발명을 보다 구체적으로 설명한다. 그러나 하기의 실시예는 본 발명을 구체적으로 예시하기 위한 것일 뿐, 본 발명의 권리범위를 제한하는 것이 아님은 당업자에게 있어서 명백한 사실이다. 즉, 본 발명의 단순한 변형 내지 변경은 당업자에 의하여 용이하게 실시될 수 있으며, 이러한 변형이나 변경은 모두 본 발명의 영역에 포함되는 것으로 볼 수 있다.
실시예 : 본 발명에 따라 제조된 오이식초를 함유한 숙취해소용 음료
오이식초 : 오이(3kg)를 세척하여 5mm의 크기로 분쇄한 다음, 15°brix가 되도록 사과농축액을 첨가한다. 그리고, 상기 당이 첨가된 오이에 saccharomyces cerevisiae 균주를 접종하여 28℃에서 6일 동안 정치 배양하여 주모를 제조한다.
그리고, 상기 당이 첨가된 오이(2kg)에 상기 제조한 주모(0.1kg)를 접종하여 28℃에서 6일 동안 알코올발효하고, 70℃에서 10분 동안 살균하고 나서 250rpm으로 원심분리하고 0.45㎛인 여과막(membrane filter)으로 여과하여 과피 등의 찌꺼기를 제거한다.
그리고, 원심분리 및 여과된 오이여과액에 아세트산균(acetobacter sp.)을 접종하여 25~30℃에서 200~300rpm으로 4~8일 동안 진탕 배양하여 종초를 제조한다.
그리고, 상기 원심분리 및 여과된 오이여과액(2kg)에 상기 종초(0.2kg)를 접종하고 28℃에서 250rpm으로 12일 동안 초산발효하고, 70℃에서 15일 동안 살균하고 0.45 ㎛인 여과막(membrane filter)에 통과시켜 여과하여 오이식초를 제조한다.
헛개나무 추출농축액, 울금 추출농축액, 액상과당, 배 농축액, 구연산, 오렌지향, 비타비티, 카라멜비에이, 벌꿀향, 로얄제리 추출물, 비타민 B1, 비타민 B2, 멘톨은 당업계에서 일반적으로 사용하는 방법으로 직접 추출하거나 시중에서 구매하여 사용하였다.
정제수 100L에 상기에 제조한 오이식초 4kg, 헛개나무 추출농축액 1.5kg, 울금 추출농축액 0.25kg, 액상과당 15kg, 배 농축액 1kg, 구연산 0.2kg, 오렌지향 0.05kg, 비타비티 0.04kg, 카라멜비에이 0.03kg, 벌꿀향 0.02kg, 로얄제리 추출물 0.01kg, 비타민 B1 0.001kg, 비타민 B2 0.001kg, 멘톨 0.0005kg을 혼합하여 오이식초를 함유한 숙취해소용 음료를 제조한다.
실험 1 : 동물실험
동물사육 조건 : 실험동물은 4주령의 수컷 SD계 흰쥐 24마리를 바이오제노믹스(Biogenomics, Seoul, Korea)로부터 구입하였다. 쥐는 1주간 고형식이로 적응시킨 후 난괴법에 의하여 알코올 대조군(Control), 알코올과 헛개열매 추출농축액을 함유한 숙취해소용 물질(SKM), 알코올과 본 발명에 따라 제조된 오이식초를 함유한 숙취해소용 음료((실시예(Product))으로 나누었다. 동물 사육실의 환경은 항온(20±2℃), 항습(50±5%), 12시간 간격(08:00~20:00)의 광주기로 일정한 조건을 유지하고 동물들은 stainless cage에서 한 마리씩 분리하여 사육하였다. 식이와 식수는 자유롭게 섭취하도록 하였다.
아래 표 1은 본 실험에 사용한 기본식이 Lieber와 DeCarli의 액체식이로, 식이조성에 따라 1mL당 lkcal 열량을 공급할 수 있도록 같이 제조하였다. 실험기간 중 식이조제는 각종 비타민 파괴와 오염방지를 위하여 매일 제조하여 신선한 상태로 공급하였다. 알코올을 포함한 액체식이는 특수 고안된 액체 식이병에 채워 제공하였으며, 알코올 식이 적응을 위해 급여 첫날과 둘째날의 알코올 함량은 식이의 3%(전체 에너지 섭취량의 21%), 셋째날과 넷째날은 식이의 4%(전체에너지 섭취량의 28%), 그리고 다섯째 날부터는 식이의 5%(전체 에너지 섭취량의 36%)로 급여하여 알코올성 간장해를 유도하였다. 알코올과 헛개열매 추출농축액을 함유한 숙취해소용 물질(SKM), 알코올과 본 발명에 따라 제조된 오이식초를 함유한 숙취해소용 음료((실시예)(Product))는 사람의 하루 섭취량을 기준으로 매일 일정한 시각에 체중 kg당 7mL씩 경구투여 하였다. 체중은 매주 1회 일정시각에 측정하였으며, 식이섭취량은 매일 일정시각에 측정한 후 급여량에서 잔량을 감하여 계산하였다.
쥐의 체중, 식이섭취량 및 장기무게 변화에 미치는 영향
(1) 체중 증가량
도 1은 알코올과 헛개열매 추출농축액을 함유한 숙취해소용 물질(SKM), 알코올과 본 발명에 따라 제조된 오이식초를 함유한 숙취해소용 음료((실시예)(Product))의 급여에 따른 체중의 변화이다.
상기 SKM군이 대조군에 비해 체중이 감소되는 경향으로 나타났고, 상기 실시예에서는 대조군에 비해서 체중이 증가하였다. 따라서, SKM과 실시예는 알코올을 급여한 마우스의 체중과 식이섭취량에는 영향을 미치지 않는다는 것을 확인할 수 있었다.
(2) 장기무게 변화
아래 표2는 장기간 헛개열매 추출농축액을 함유한 숙취해소용 물질(SKM), 본 발명에 따라 제조된 오이식초를 함유한 숙취해소용 음료((실시예)(Product))을 급여 후 알코올을 투여하고 마우스의 100g당 장기무게를 나타낸 것이다. 간의 무게에서 대조군에 비해 SKM과 실시예(시제품군)들이 유의적으로 감소하였다.다른 장기무게에서는 유의적 차이가 없었다.

실험 2 : 혈중 알코올과 아세트알데히드 농도에 미치는 영향
혈장 중의 알코올 농도는 알코올 측정용 kit(Roche, Switzerland)를 이용하여 Cobas Intergra 800(Roche, Switzerland)기기로 분석하였다. 아세트알데히드 농도는 알세트알데히드 탈수소 효소(ALDH)에 의해 산화되어 아세트산을 생성하는 과정에서 NAD+라는 조효소의 도움을 받아 NADH를 생성하는데 그 생성물의 양을 측정하였다.
도 2는 헛개열매 추출농축액을 함유한 숙취해소용 물질(SKM)과 본 발명에 따라 제조된 오이식초를 함유한 숙취해소용 음료((실시예)(Product))를 알코올 투여 전에 장기적으로 섭취시켰을 때 나타나는 혈장 알코올과 아세트알데히드 농도 변화이다.
알코올을 5주 동안 급여한 흰쥐에서 SKM과 실시예의 혈장 중 알코올 함량은 대조군에 비하여 각각 9.5%와 31.7% 낮았다. 특히, 실시예는 유의적으로 혈중 알코올 함량을 개선하였다. 혈장 중의 아세트알데히드 함량은 대조군에 비하여 SKM과 실시예가 각각 40.6%와 48.4% 개선하였다. 특히, 혈장의 아세트알데히드 함량은 간조직의 아세트알데히드 탈수소효소 활성과 유의적 음의 상관 관계(r=-0.564, p<0.01)였으며, CYP2E1 활성과는 양의 상관 관계(r=0.566, p<0.01)를 보였다. 따라서 혈장 중의 아세트알데히드 함량은 알코올성 간장해 개선의 주요 지표인 것으로 확인할 수 있었다.
실험 3 : 간기능 관련 바이오마케에 미치는 영향
간독성의 생화학적 지표로 널리 알려져 있는 혈장의 glutamic-oxaloacetic transferase(GOT)와 glutamic-pyruvic transaminase(GPT) 활성은 생화학 분석기 (Fuji Film DRI-CHEM, 35001)를 이용하여 측정하였다.
아래 표 3은 에탄올의 간기능 저하 정도를 알아보기 위한 혈청 GOT와 GPT 활성을 측정한 결과이다.
간기능의 대표적인 지표로 사용되는 혈청 중의 GOT와 GPT 활성은 대조군에 비하여 SKM과 시제품군에서 유의적으로 낮았으며, 헛개열매 추출농축액을 함유한 숙취해소용 물질(SKM)과 본 발명에 따라 제조된 오이식초를 함유한 숙취해소용 음료((실시예)(Product))은 장기간의 알코올 섭취로 인한 간장해 개선에 유익할 것으로 사료된다.

실험 4 : 간조직의 ADH와 ALDH 활성도에 미치는 영향
Alcohol dehydrogenase(ADH)활성도는 Bergmeyer의 방법에 준해 70 mM glycine/NaOH 완충액 일정량에 기질인 10mM 알코올 용액과 0.67 mM NAD+ 용액 및 효소액 0.1mL를 첨가하여 최종 반응액이 4.0 mL가 되게 한 다음 37에서 5분간 반응시켰다. 반응 종료 후 생성된 NADH를 340 nm에서 흡광도를 측정하고 표준검량선에 의거하여 그 활성도를 산출하였다.
Aldehyde dehydrogenase(ALDH) 활성도는 Koivula와 Koivusalo의 방법에 준하여 ALDH 활성저해제인 16.7 mM 피라졸 용액의 존재 하에서 기질인 60 mM 프로피온알데히드 용액과 13.3mM NAD+ 용액 및 효소액 0.1 mL를 70 mM 피로인산 나트륨 완충액 중에 함유시켜 최종 반응액이 4.0mL가 되게 하였다. 이것을 37에서 5분간 반응시켜 생성된 NADH를 340nm에서 흡광도를 측정하고 표준검량선에 의거하여 그 활성도를 산출하였다.
도 3은 알코올 대사에 간여하는 ADH, ALDH의 활성을 조사한 결과이다.
간조직의 알코올대사 효소인 ADH는 실험군간에 유의적인 변화가 없었다. 이는 5주 동안 장기적인 알코올 섭취로 인한 알코올 분해 대사가 ADH에 의존하지 않기 때문인 것으로 사료된다. 반면, 아세트알데히드를 아세트산으로 산화하는 ALDH 활성은 헛개열매 추출농축액을 함유한 숙취해소용 물질(SKM)과 본 발명에 따라 제조된 오이식초를 함유한 숙취해소용 음료((실시예)(Product)) 모두 대조군에 비하여 각각 약 25.2%, 27.8% 유의적으로 높았다. 이와 같이, SKM과 실시예는 알코올성 간독성 물질로 알려진 아세트알데히드 분해를 향상시키는 것으로 나타났다.
실험 5 : 간조직의 CYP2E1 활성도에 미치는 영향
YP2E1과 관련이 있는 aniline hydroxylase의 측정은 기질로 aniline을 사용하여 생성된 4-hydroxy aniline의 양을 630nm에서 흡광도를 측정함으로써 정량하였다. 100mM aniline과 20mM NADPH 및 마이크로좀 시료를 potassium phosphate buffer(pH 7.4)에 혼합한 후 37에서 1시간 동안 반응시킨 다음 40% TCA를 가하여 반응을 종결시키고 12,000rpm에서 10분간 원심분리하여 상층액에 10% Na2CO3와 2% phenol를 가한 후 실온에서 45분간 방치하여 발색시켰다. 630nm에서 흡광도를 측정하고 4-hydroxyaniline 검량선으로부터 활성도를 계산하였다.
도 4는 간조직의 CYP2E1 활성도의 결과이다.
만성적인 알코올 섭취는 ADH 활성에 영향을 미치기보다 CYP2E1을 활성화하여 알코올 대사율을 증가시킨다. 따라서, 만성 알코올 급여시 CYP2E1에 대한 알코올 대사 의존성이 높아지며, 알코올 대사에 있어 CYP2E1 의존성이 높을수록 산소 라디칼 생성이 많아지는 것으로 알려져 있다. 본 실험을 통해 대조군보다 헛개열매 추출농축액을 함유한 숙취해소용 물질(SKM)과 본 발명에 따라 제조된 오이식초를 함유한 숙취해소용 음료((실시예)(Product))는 간조직의 CYP2E1 활성을 유의적으로 낮추어 간장해 개선에 유익할 것이라고 사료된다.
실험 6 : 간조직의 황산화 효소 활성도에 미치는 영향
Superoxide dismutase(SOD) 활성도 측정은 Marklund와 Marklund의 방법으로 측정하였다. 반응액은 10mM EDTA 용액을 함유한 50mM 트리스-염산 완충액에 0.5mM의 피로갈롤 용액과 효소액을 가하여 25에서 10분간 반응시킨 후, 1N 염산 용액을 가해 반응을 종료시키고 440nm에서 흡광도를 측정하여 활성도를 산정하였다. 효소활성도는 효소액을 넣지 않고 반응시킨 0.5mM 피로갈롤 용액의 자동산화를 50% 억제하는 단백질의 양으로 나타내었다.
Catalase (CAT) 활성도 측정은 Aebi 등의 방법을 수정,보완하여 측정하였다. 즉, 50 mM potassium phosphate buffer 2.89mL와 효소원 10uL를 섞어 25에서 5분간 반응시킨 후 0.3 M H2O2 용액 0.1mL를 첨가하여 240nm에서 반응 전 흡광도를 측정한 다음 25에서 5분간 더 반응시킨 후 240nm에서 반응 후 흡광도를 측정하여 H2O2 흡광도 변화를 구하였다. 활성 단위는 mitochondrial protein 1 mg당 1분간 감소된 H2O2의 μmol로 나타내었다.
Glutathione peroxidase(GSH-Px) 활성도 측정은 Paglia 등의 방법을 수정,보완하여 과산화수소(H2O2)를 기질로 이용한 coupled enzyme procedure로 측정하였다. 즉, 환원형 glutathione(GSH)은 GSH-Px에 의해 H2O2와 반응하여 산화형 glutathione(GSSG)으로 되고, 이것은 다시 glutahione reductase와 NADPH에 의해 환원된다. 이때 NADPH의 광도가 340 nm에서 감소되는 정도를 측정하여 GSH-Px의 활성도를 산출하였다. 즉, 0.1 M Tris-HCl buffer(pH 7.2) 2.6mL에 30 mM 환원형 glutathione 용액 0.1 mL, 6 mM NADPH 용액 0.1 mL, 그리고, 25 μM H2O2 0.1mL을 순서대로 첨가하여 25에서 5분간 전 반응시킨 후 효소원 0.1mL을 혼합하여 340nm에서 반응전 흡광도를 측정하였다. 이어서 즉시 25에서 5분간 더 반응시킨 후, 340 nm에서 반응후 흡광도를 측정하였다. 활성도 단위는 cytosolic protein 1 mg 당 1분간 산화된 NADPH의 nmol로 나타내었다.
총 glutathion(환원형 GSH와 산화형 GSSG) 함량 측정은 Ellman 등의 방법을 수정, 보완하여 수행하였다. 간조직에 20%(w/v) 농도가 되도록 0.1 M potassium phosphate buffer(pH 7.4)를 첨가하여 빙냉상태에서 glass teflon homogenizer(Glascol, 099C K44, USA)로 분쇄하였다. 분쇄물 0.2 mL, 4% sulfosalicylic acid 0.5 mL, 그리고 증류수 0.3 mL을 잘 섞은 후 2,500 rpm에서 10분간 원심분리하여 상층액 0.3 mL을 취하였다. 여기에 발색제인 disulfide 시액(5,5-dithio-bis-2-nitrobenzoic acid) 2.0mL을 첨가하고 20분 후 412nm에서 흡광도를 측정하였다.
만성적인 음주는 ROS를 정상적인 조건에서보다 많이 생성하는데 생체 내에서는 이러한 반응성 산소종으로부터 과산화물이 증가되어져 지질과산화물이 증가되어진다. 이러한 지질과산화물을 세포막과 생체 내물질을 보호하기 위해 SOD, catalase, GST, GSH-px 등의 항산화 효소계가 작용한다.
아래 표 4는 알코올을 투여 후, 헛개열매 추출농축액을 함유한 숙취해소용 물질(SKM)과 본 발명에 따라 제조된 오이식초를 함유한 숙취해소용 음료((실시예)(Product))의 투여에 의한 항산화 효소 활성 변화를 나타낸 것이다.
간조직의 SOD와 CAT 활성은 SKM과 실시예는 대조군에 비하여 유의적으로 높았으나 GSH-Px 활성은 군간 변화가 없었다. SKM과 실시예는 알코올 섭취로 인한 항산화 물질인 GSH 함량을 유의적으로 높였다. 또한, 간조직의 지질과산화물 함량 역시 SKM과 시제품 보충으로 저하시켰다.

실험 7 : 혈장과 간조직의 지질 함량에 미치는 영향
간조직의 지질과산화물 함량은 Ohkawa 등의 방법을 이용하여 조직 0.5g에 0.1 M potassium phosphate buffer(pH 7.4) 2mL을 첨가하여 빙냉상태에서 glass teflon homogenizer(Glascol, 099C K44, USA)로 분쇄하였다. 분쇄물 0.2mL, 8.1% sodium dodecyl sulfate(SDS) 용액 0.2 mL, 그리고 증류수 0.6 mL를 섞어 실온에서 5분간 방치한 후 20% acetate(pH 3.5) buffer 1.5 mL와 0.8%TBA 1.5 mL를 첨가하여 95에서 1시간 동안 반응시켰다. 반응 후 시료를 실온으로 냉각시켜 증류수 1mL와 n-butanol:pyridine(15:1) 용액 5mL를 첨가하고 3,000 rpm에서 15분간 원심분리한 후 상층액의 흡광도를 532nm에서 측정하였다.
표 5는 혈장과 간 조직내 지질함량을 나타낸 것이다.
헛개열매 추출농축액을 함유한 숙취해소용 물질(SKM)과 본 발명에 따라 제조된 오이식초를 함유한 숙취해소용 음료((실시예)(Product))은 혈장의 총콜레스테롤과 간조직의 콜레스테롤을 유의적으로 개선하였으며, 시제품일 경우 간조직의 트리글리세리드 함량이 유의적으로 낮아졌다.

실험 8 : 간조직의 조직학적 변화에 미치는 영향
도 5는 헛개열매 추출농축액을 함유한 숙취해소용 물질(SKM), 본 발명에 따라 제조된 오이식초를 함유한 숙취해소용 음료((실시예)(Product))을 급여시 간조직의 조직학적 변화이다.
알코올 대조군은 고지방 식이 및 알코올 섭취에 의해 각조직에 지방축적 및 세포손상이 발생하는데 본 실험에서도 알코올 대조군 간조직에 지방이 축적된 것이 발견되었다. SKM과 실시예에서는 알코올대조군에 비하여 지방축적이 감소되는 것으로 나타났다.
본 발명의 오이식초를 함유한 숙취해소용 음료 조성물은 정제수 100중량부에 오이식초 2~15중량부, 헛개나무 추출농축액 0.5~5중량부, 울금 추출농축액 0.1~0.5중량부로 이루어져 섭취시 알코올을 섭취한 체내에서 ADH 및 ALDH 활성이 증가함과 동시에 알코올농도 및 혈중 아세트알데히드농도가 감소함에 따라 숙취의 원인인 알코올과 아세트알데히드의 대사를 촉진시켜 체내 알코올을 분해하여 숙취해소 및 알코올성 간장해 개선에 유용하게 활용될 수 있을 것이다.
Claims (5)
- 정제수 100중량부에 오이식초 2~15중량부, 헛개나무 추출농축액 0.5~5중량부, 울금 추출농축액 0.1~0.5중량부를 혼합하여 이루어진 것을 특징으로 하는 오이식초를 함유한 숙취해소 음료 조성물.
- 제 1항에 있어서,상기 오이식초는,세척된 오이를 분쇄하고, 상기 분쇄된 오이에 당도가 8~30°brix가 되도록 당을 첨가하고, 상기 당이 첨가된 오이에 주모를 중량대비 1 : 0.05~0.15의 비율로 접종하고 25~30℃에서 4~8일 동안 알코올 발효하고, 상기 알코올발효된 알코올발효액을 65~80℃에서 5~20분 동안 살균하고, 상기 살균된 알코올발효액을 원심분리 및 여과하고, 상기 원심분리 및 여과된 오이여과액에 종초를 중량대비 1 : 0.05~0.15의 비율로 접종하고 25~30℃에서 200~300rpm으로 교반하여 10~15일 동안 초산발효하고, 상기 초산발효된 초산발효액을 65~80℃에서 5~20분 동안 살균하고 여과하여 제조된 것을 특징으로 하는 오이식초를 함유한 숙취해소 음료 조성물.
- 제 2항에 있어서,상기 오이식초의 주모는 상기 당이 첨가된 오이에 saccharomyces cerevisiae 균주를 접종하여 25~30℃에서 4~8일 동안 정치 배양한 것을 특징으로 하는 오이식초를 함유한 숙취해소 음료 조성물.
- 제 2항에 있어서,상기 오이식초의 종초는 상기 원심분리 및 여과된 오이여과액에 아세트산균(acetobacter sp.)을 접종하여 25~30℃에서 200~300rpm으로 4~8일 동안 진탕 배양한 것을 특징으로 하는 오이식초를 함유한 숙취해소 음료 조성물.
- 제 1항 내지 4항 중 어느 한 항에 있어서,상기 오이식초를 함유한 숙취해소 음료 조성물에 액상과당, 배 농축액, 구연산, 오렌지향, 비타비티, 카라멜비에이, 벌꿀향, 로얄제리 추출물, 비타민 B1, 비타민 B2, 멘톨 중 하나 또는 둘 이상을 혼합한 것을 더 포함하는 것을 특징으로 하는 오이식초를 함유한 숙취해소 음료 조성물.
