Abstract

L'invention concerne un dispositif servant à chauffer et à faire mousser des aliments liquides et des boissons, en particulier du lait, au moyen d'un mélange vapeur-air (DL) produit à l'extérieur du liquide (3). Le mélange vapeur-air est introduit au moyen d'une lance à vapeur (1) dans le liquide (3) contenu dans un récipient (2). La lance à vapeur (1) est constituée d'un tuyau à vapeur (4) pouvant être connecté à une unité de préparation de vapeur, qui comporte, immédiatement après la zone de raccord (11), un rétrécissement (5) interne, réalisé sous la forme d'une buse Venturi, pourvu d'au moins une ouverture (9,14) servant à l'aspiration d'air. Le rétrécissement (5) pourvu de l'ouverture (9,14) d'aspiration d'air est séparé de l'ouverture de sortie (7) de la lance à vapeur (1) par une distance telle que ce rétrécissement (5) se trouve au-dessus du niveau (8) du liquide (3) contenu dans le récipient (2) lorsque la lance à vapeur (1) est complètement introduite dans le liquide (3) à chauffer ou à faire mousser.
