Abstract
Description
The invention relates to the alcoholic beverage industry, namely to vodka.
[1, 2]. Widely known are vodkas containing a water-alcohol liquid based on rectified ethyl alcohol “Extra” or of higher purification and water and honey [1, 2].
Despite the fact that honey contains a whole gamut of biologically active components, it is not enough to produce vodka with high biological value.
[1]. Therefore, honey is often used in a mixture with other prescription components, in particular with aromatic alcohols of aromatic raw materials, as is the case in the production of special vodkas, for example, Kaluga [1].
However, special vodkas make up a special group of vodkas and differ in the preparation technology and organoleptic characteristics obtained from ordinary vodkas.
Known vodka containing a water-alcohol liquid based on rectified ethyl alcohol and corrected water, sodium bicarbonate and lactic acid [3]. And although this vodka has a very pleasant mild taste and high organoleptic characteristics, it is not enriched with a complex of biologically active substances necessary for the human body, and is not stable enough for long-term storage.
The technical result of the present invention is to increase the biological value of vodka and storage stability and expand the range of vodkas enriched with biologically active components and providing a therapeutic and prophylactic effect.
To do this, vodka containing aqueous-alcoholic liquid based on rectified ethyl alcohol and corrected drinking water, lactic acid and sodium bicarbonate, it contains rectified ethyl alcohol "Lux" as rectified ethyl alcohol, and the vodka additionally contains honey and propolis tincture in the following ratio ingredients, kg per 1000 gave the finished product:
Sodium bicarbonate - 0.2 - 0.4
Lactic acid - 0.2 - 0.35
Honey - 3.5 - 4.5
as well, l
Propolis tincture - 0.01-0.02
Aqueous-alcoholic liquid based on rectified ethyl alcohol "Lux" and corrected drinking water - Else
Propolis contains resins and balms, essential oils, wax, pollen, aromatic substances, as well as a number of natural biologically active substances (phenols, flavonoids, aromatic acids, terpenes, etc.). All these substances pass into tincture, which is centrally manufactured and packaged in glass bottles.
During the reaction of lactic acid and sodium bicarbonate, sodium lactic acid is formed, which helps to remove methanol from vodka and enrich it with organic compounds - aromatic esters and acetals. When honey and propolis are introduced, the water-alcohol mixture is additionally enriched with stabilizing substances such as phytonicides, propolis flower pollen resins, which manifest their effect on the antioxidant and phytoncide levels, as a result of which vodka acquires storage stability, saturation and freshness in aroma and softness in the taste of the finished product for a long time. Along with stabilizing the aroma and taste of the finished product and with the softness of the taste acquired as a result of the introduction of lactic acid and sodium bicarbonate, vodka is enriched with biological active natural components of honey and propolis, which are enzymes, flavonoids, resins and balms, essential oils, phenols, terpenes as well as aromatic acids. In addition, the use of high-quality Lux alcohol increases the organoleptic characteristics of vodka, and the introduction of honey as a storehouse of biologically active substances, significantly reduces the energy value (calorie content) of the product and, together with propolis, gives it therapeutic and preventive properties.
Vodka "Ministerial" is prepared as follows.
Water is softened and additionally treated with reverse osmosis. To prepare the sorting, the prepared water is mixed with high-quality Lux alcohol at the rate of obtaining a mixture with a strength of 40%. Lactic acid is mixed with sodium bicarbonate, kept until sodium lactic acid is formed, which is sorted, then filtered and treated with activated carbon in a coal-cleaning battery through a coal layer 4 m high at a speed of 20 dal / h. After purification, vodka enters the liqueur vat, where propolis tincture and honey are served. Honey is introduced in the form of a solution, which is prepared by diluting honey with vodka in a ratio of 1:10 and filtering it through a filter material.
Vodka is thoroughly mixed and allowed to stand for 3 to 5 hours to assimilate the taste, and then sent to the bottling.
