Abstract
Способ получения белково-витаминного продукта, включающий приготовление соевого молока, термокислотную коагуляцию его белка посредством кислотного коагулянта, отделение белкового сгустка от сыворотки и его формование, отличающийся тем, что термокислотную коагуляцию белка в соевом молоке осуществляют смесью 5%-ных растворов янтарной и аскорбиновой кислот в соотношении 1:1, причем отделенный белковый сгусток доводят до влажности 10-80% с получением гранул, пасты и пюре, а на основе сыворотки готовят белково-витаминные напитки.
