Description
The invention relates to the food industry, in particular to methods for producing desserts for functional nutrition based on soybean and pumpkin.
A known method of obtaining protein-carbohydrate products of a functional orientation, including obtaining a protein-carbohydrate mixture from soy and vegetable components, by joint disintegration of soybean seeds, raw carrots, etc. in an aqueous medium, separation of insoluble soy-vegetable fraction, and thermoacid coagulation of proteins at a temperature of 65-70 ° C with a 5% solution of ascorbic acid to obtain a clot-coagulum (RF Patent No. 2482696. Method for preparing protein-carbohydrate products of a functional orientation. IPC A23L 1/00. Analog).
The disadvantages of this method is the introduction of an excessive amount of ascorbic acid solution, not a high content of natural vitamins, including vitamin E, C and β-carotene.
There is also known a method of obtaining protein-carbohydrate products, in which a soy protein base is prepared, into which fruit or fruit-berry syrup (puree) and a fermented milk product are added in a ratio of 1: 1: 1, followed by heating to a temperature of 90 ° C and coagulation protein substances. The resulting protein-carbohydrate curd is brought to a moisture content of 30-80% (Patent No. 2407398. Method for producing protein-carbohydrate products. IPC A23J 1/20, A23J 3/14, A23J 3/16. Prototype).
The disadvantages of this method is a long production process due to the separate production of the protein base and fruit or fruit syrup (puree); a cold method of obtaining a soy protein base and the need for its subsequent heating and aging to reduce the content of anti-nutrients; not high in antioxidants and other functional ingredients.
There is also known a method for obtaining specialized products, including the preparation of a protein dispersed system based on soy and vegetable components, by their joint disintegration in an aqueous medium and coagulation of proteins in a dispersed system with a 7% buttermilk solution of ascorutin and obtaining soy-pumpkin-butter coagulum (Patent No. 2680698. Method of obtaining specialized products IPC A23L 11/10, A23L 33/185, A23L 33/19, A23J 3/08, A23L 3/16, A23L 2/52, A23L 23/00, A23C 19/02, А23С 23/00 Prototype).
Недостатками данного способа является: затруднение процесса коагуляции белков в соево-тыквенно-сливочной суспензии из-за присутствия сливок, вследствие чего на этот процесс расходуется значительное количество (до 40% от общей массы) 7%-ного пахтового раствора аскорутина; высокая калорийность готового продукта (219 ккал/100 г).The disadvantages of this method are: the difficulty of the process of coagulation of proteins in the soy-pumpkin-cream suspension due to the presence of cream, as a result of which a significant amount (up to 40% of the total weight) of 7% buttermilk solution of askorutin is consumed for this process; high calorie content of the finished product (219 kcal / 100 g).
The objective of the present invention is to obtain a plant-based dietary desserts with functional purposes of high nutritional value, containing natural antioxidant vitamins.
The method is achieved by preparing a soy-pumpkin mixture, dividing it into soy-pumpkin liquid and solid fractions, adding a 2.5% solution of ascorbic acid to the liquid fraction, obtaining a soy-pumpkin protein coagulum with a moisture content of 75%, homogenizing with the addition of syrup sea buckthorn and soy-pumpkin gelling solution or without it.
The technical result is that this method allows you to get dietary low-calorie desserts rich in protein, natural antioxidant vitamins - E, C, β-carotene; expand the range of functional products.
The method is carried out as follows.
Soybeans are inspected, washed and soaked. After thorough washing, the pumpkin is peeled, freed from the seed nest and cut into pieces with a facet size of 15 × 15 mm. The swollen soybean grain is mixed with crushed pumpkin and a prescription amount of water in a 1: 1: 6 ratio. The resulting mixture is heated to 100 ° C with simultaneous grinding and extraction of soluble solids, then filtration separates the soy-pumpkin liquid fraction from the solid fraction (soy-pumpkin okara). A 2.5% solution of ascorbic acid is added to the obtained liquid fraction at a temperature of 75-80 ° C for coagulation of protein substances. The mixture is squeezed out, the protein coagulum is brought to a moisture content of 75%, the whey is separated. Soy-pumpkin protein coagulum is mixed with sea buckthorn syrup, homogenized for 60 seconds and cooled to obtain a soy-pumpkin dessert. To the gelling solution obtained by mixing the soy-pumpkin liquid fraction and gelatin, add soy-pumpkin coagulum and sea buckthorn syrup according to the recipe, homogenize for 90 seconds and cool to obtain a soy-pumpkin jelly dessert.
Studies have established that with an equal consumption of an aqueous solution of a coagulant, a 2.5% solution of ascorbic acid fully allows the process of coagulation of protein substances at a temperature of a soybean-pumpkin liquid fraction of 75-80 ° C with the preservation of all nutrients of the mixture, comparable to analogue (RF Patent No. 2482696), where thermoacid coagulation of proteins is carried out at a temperature of 65-70 ° C with a 5% solution of ascorbic acid.
1.Example 1.
1).The method of obtaining a soybean-pumpkin dessert is carried out as follows (Fig. 1).
Soy grains are inspected, washed and soaked in water at a temperature of 18-20 ° C for 10-12 hours. After thorough washing, the pumpkin is peeled, freed from the seed nest and cut into pieces with a facet size of 15 × 15 mm. The swollen soybean grain is freed from water and mixed with crushed pumpkin and a prescription amount of water in a ratio of 1: 1: 6. The resulting mixture is heated to 100 ° C with simultaneous grinding and extraction of soluble solids. The soy-pumpkin liquid fraction is separated from the resulting mass by filtration from the solid fraction (soy-pumpkin okara). A 2.5% solution of ascorbic acid is added to the obtained liquid fraction at a temperature of 75-80 ° C for coagulation of protein substances. The mixture is squeezed out, bringing the protein coagulum to a moisture content of 75%, separating the whey.
54,8%.Sea buckthorn syrup is prepared. To do this, the frozen sea buckthorn berry is thawed, then the juice is squeezed out, separating the cake, filtered through a fabric filter, mixed with sugar in a 1: 1 ratio and continuously stirring, heated to a temperature of 45 ° C to reduce contamination by microorganisms, dissolve sugar and uniform distribution of components. The sucrose content in sea buckthorn syrup is 54.8%.
Soy-pumpkin coagulum (92%) is mixed with sea buckthorn syrup (8%), homogenized for 60 seconds, obtaining a soy-pumpkin dessert, which is cooled before serving. Soy-pumpkin dessert, according to SanPiN 2.3.2 1324-03, is stored in refrigerators at a temperature of 4 ± 2 ° C and a relative humidity of no more than 75% for no more than 36 hours.
1).It was found that when preparing a soybean-pumpkin dessert, the optimal duration of homogenization is 60 seconds. With homogenization for less than 60 seconds, a sufficiently homogeneous, stable mass is not achieved, and for more than 60 seconds, the product becomes finely ground, which does not correspond to the desired consistency and appearance (Table 1).
2.Example 2.
2).The method of obtaining a soybean-pumpkin jelly dessert is carried out as follows (Fig. 2).
The resulting mass is heated to 100 ° C with simultaneous grinding and extraction of soluble solids. The mixture is squeezed out, the coagulum is brought to a moisture content of 75%, separating the whey.
54,8%.To prepare sea buckthorn syrup, the frozen berry is thawed, then the juice is squeezed out, separating the cake, filtered through a fabric filter, mixed with sugar in a 1: 1 ratio and continuously stirring, heated to 45 ° C to reduce contamination by microorganisms, dissolve sugar and even distribution of components. The sucrose content in sea buckthorn syrup is 54.8%.
The gelling solution is prepared by mixing gelatin and soy-pumpkin liquid fraction (50 g of gelatin per 1000 ml of liquid), then infused for 30-40 minutes, heated without boiling, with continuous stirring until the gelatin is completely dissolved and mixed with soy- pumpkin liquid fraction in a ratio of 1: 2. The resulting gelling solution (72%) is mixed with soy-pumpkin protein coagulum (20%), sea buckthorn syrup (8%) and homogenized for 90 seconds, obtaining a soy-pumpkin jelly dessert, packed into molds with a net weight of 100 g and cooled. Soy-pumpkin jelly dessert, according to SanPiN 2.3.2 1324-03, is stored in refrigerators at a temperature of 4 ± 2 ° C and a relative humidity of no more than 75% for no more than 36 hours.
Studies have found that the optimal duration of homogenization for a soybean-pumpkin jelly dessert is 90 seconds. Homogenization for less than 90 seconds does not allow obtaining a homogeneous, slightly airy mass, homogenization for more than 90 seconds makes the product excessively filled with air and not stable when cooled, due to the violation of the structure of swollen collagen grains.
2.The results of the organoleptic evaluation of the obtained soybean-pumpkin jelly dessert are presented in table 2.
3, 4.The nutritional value of desserts is presented in tables 3, 4.
Tables 3, 4 show that desserts have a rich chemical composition, high in protein, fat, phosphatides, vitamins E, C, β-carotene.
Сироп плодов облепихи обогащает десерты многими витаминами (А, Е, группы В, β-каротином и др.), пектиновыми веществами, флавоноидами, макро- и микроэлементами, органическими кислотами (яблочная, винная и др).The introduction of gelatin into the recipe for soybean-pumpkin jelly dessert can increase the content of protein and microelements in the product. Sea buckthorn syrup enriches desserts with many vitamins (A, E, group B, β-carotene, etc.), pectin substances, flavonoids, macro- and microelements, organic acids (malic, tartaric, etc.).
In one serving of desserts (100 g), the content of β-carotene, vitamin E and C is more than 15% of the daily physiological needs of the human body, which, in accordance with GOST R 52349-2005, allows the developed products to be classified as functional. Therefore, the resulting desserts, rich in many valuable substances, can be recommended for use in functional nutrition.
