Abstract
Способ получения белкового концентрата из вторичного молочного сырья, предусматривающий пастеризацию молочного сырья, охлаждение, внесение коллоидного раствора хитозана, перемешивание, выдержку и разделение смеси на белок-хитозановый комплекс и безбелковую жидкость, отличающийся тем, что в качестве молочного сырья используется смесь из пастеризованного обезжиренного молока и творожной сыворотки в соотношении компонентов: обезжиренного молока от 20 до 70%, творожной сыворотки от 70 до 30%, после пастеризации компонентов смесь охлаждается до 20-50°С, далее в нее вносится 1%-ный коллоидный раствор хитозана, приготовленный на молочной кислоте, с рН 3,01-4,01 в количестве 2-18%, после перемешивания смесь оставляется в покое на время от 20 до 60 мин, после чего белковые вещества выделяют одним из известных способов.
