Claims (12)
1. Способ производства нарезанных кусков пищевого продукта, в котором кусок пищевого продукта (3) нарезают на ломтики (8) в ломтерезке (1) посредством повторяющегося резания куска пищевого продукта, отличающийся тем, что препарат (12, 16), ингибирующий патогены, распыляют на поверхности (3а) среза, образуемые при нарезании куска пищевого продукта.
2. Способ по п.1, отличающийся тем, что препарат (12, 16) распыляют с использованием одного или большего числа сопел (9, 13).
3. Способ по п.1, отличающийся тем, что препарат (12, 16) содержит бактерии, которые непосредственно или посредством производимого бактерицида, являются эффективными против патогенных микроорганизмов.
4. Способ по п.1, отличающийся тем, что препарат (12, 16) распыляют в таком количестве, чтобы ингибировать развитие микроорганизмов на ломтиках (8) в течение, по меньшей мере, 4 недель, когда ломтики хранят в упаковках с инертным газом или в вакуумных упаковках при 5-10°С.

Способ по п.1, отличающийся тем, что препарат (12, 16) распыляют с использованием двух сопел (9, 13), из которых одно сопло (9) расположено прямо против поверхности (3а) среза на куске пищевого продукта и обращено к этой поверхности, а другое сопло (13) расположено сбоку от поверхности (3а) среза и обращено к боковой стороне куска пищевого продукта и к поверхности среза на куске пищевого продукта.
6. Способ по п.1, отличающийся тем, что препарат (12, 16) распыляют в количестве менее 0,1 мл на см2 поверхности (3а) среза.
7. Способ по п.1, отличающийся тем, что при нарезании ломтики (8) укладывают в стопку или с частичным перекрытием.
8. Способ по п.1, отличающийся тем, что ломтики (8) упаковывают стопками или с частичным перекрытием в упаковку с инертным газом или вакуумную упаковку.
9. Способ по п.1, отличающийся тем, что препарат (12, 16), ингибирующий патогены, распыляют на все поверхности куска пищевого продукта (3) до его нарезания.
10. Способ по п.1, отличающийся тем, что в качестве куска пищевого продукта (3) используют пищевой продукт, который сварен, нагрет или обработан иным образом.
11. Способ по п.1, отличающийся тем, что распыляют, по меньшей мере, 104 КОЕ/г препарата, эффективного против листерий.
12. Устройство для производства нарезанных кусков пищевого продукта, содержащее ломтерезку (1) с одним или более ножами (5) для нарезания куска пищевого продукта (3) на ломтики (8) посредством повторяющегося резания куска пищевого продукта, отличающееся тем, что ломтерезка (1) содержит устройства (9, 13) для распыления препарата (12, 16), ингибирующего патогены, на поверхности (3а) среза, образуемые при нарезании куска пищевого продукта.
