Abstract
"UM MéTODO E UM APARELHO PARA A INIBIçãO DE PATóGENOS, QUANDO DA PRODUçãO DE COMIDA EM FATIAS". A presente invenção refere-se a um método para a produção de pedaços de alimentos fatiados, no qual um pedaço de alimento (3) é cortado em fatias (8) em um dispositivo de corte em fatias (1), por meio de cortes repetitivos do pedaço de alimento. Durante o corte em fatias, uma preparação inibidora de patógenos (12, 16) é adicionada nas superfícies das fatias cortadas, que são geradas durante o corte em fatias do pedaço de alimento, usando um ou mais bocais (9, 13). Quantidades suficientes de uma preparação inibidora do desenvolvimento de células germinativas patogênicas, por exemplo, organismos de listéria, são adicionadas automaticamente na superfície das fatias. O produto fica, desse modo, seguro para ser usado após ter sido armazenado por um período de tempo considerável em temperatura glacial.
