Claims (13)
1. Комплекс железа с белковым гидролизатом, включающий ионы железа (II), хелатированные с частично гидролизованным яичным белком с мол. массой от примерно 2000 до 6000.
2. Комплекс по п.1, в котором частично гидролизованный яичный белок представляет собой гидролизат, полученный с помощью микробной протеазы.
3. Комплекс по п.2, в котором микробную протеазу получают из Aspergillus oryzae, причем препарат микробной протеазы содержит как эндопептидазу, так и экзопептидазу.
4. Комплекс по п.1, в котором частично гидролизованный яичный белок представляет собой белковый гидролизат, полученный гидролизом яичного белка с помощью микробной протеазы, выделенной из Aspergillus oryzae и содержащей как эндопептидазу, так и экзопептидазу, и с помощью микробной протеазы, выделенной из Bacillus licheniformis и содержащей эндо-пептидазу.
5. Комплекс по п.1, включающий от 1 до 2% или от 4,5 до 10 мас.% железа (II) по сухой массе.
6. Комплекс по п.1, стабильный при нейтральных значениях рН, но диссоциирующий при рН меньше 3.
7. Комплекс по любому из предшествующих пунктов, включающий от 1 до 2% или от 4,5 до 10 мас.% железа (II) по сухой массе.
8. Комплекс по п.8, в котором частично гидролизованный стабильный комплекс для обогащения железом, представляющий собой комплекс железа с белковым гидролизатом по любому из предшествующих пунктов.
9. Стерилизованный жидкий напиток, содержащий полифенолы и стабильный комплекс для обогащения железом, представляющий собой комплекс железа с белковым гидролизатом по любому из пп.1-7.
10. Напиток по п.9, представляющий собой чай.
11. Порошок для получения напитка, включающего липиды и стабильный комплекс для обогащения железом, представляющий собой комплекс железа с белковым гидролизатом по любому из пп.1-7.
12. Порошок для получения напитка по п.11, включающий какао.
13. Способ получения комплекса для обогащения железом, представляющий собой комплекс железа с белковым гидролизатом по любому из пп.1-7, включающий ферментативный гидролиз яичного белка с помощью микробной протеазы для получения частично гидролизованного яичного белка; добавление источника железа к частично гидролизованному яичному белку в кислых условиях; и повышение рН до 6,5-7,5 с целью образования комплекса железа (II) с гидролизованным яичным белком.
