Abstract
A method for manufacturing a low-protein rice, the method including subjecting a raw rice to proteolytic processing, washing the thus obtained processed rice, adhering an oil to the rice, and then gelatinizing the rice. The present invention enables a highA-energy, low-protein rice which has excellent distribution properties to be provided to patients with kidney disease or the like who must restrict their protein intake.
