Abstract
La presente invención se refiere a un polipéptido variante que tiene actividad quimosina, en que la variante tiene una secuencia de aminoácidos que, cuando se alinea con la quimosina que comprende la secuencia expuesta en SEC ID N°: 2, comprende al menos una sustitución de un resto de aminoácido correspondiente a cualquiera de los aminoácidos 2, 22, 40, 48, 50, 51, 53, 61, 62, 76, 88, 98, 99, 109, 112, 117, 125, 126, 135, 144, 160, 161, 163, 187, 189, 194, 200, 201, 202, 203, 221, 223, 240, 242, 244, 254, 267, 271, 273, 278, 280, 284, 289, 292, 294 o 295 definiéndose dichas posiciones con referencia a SEC ID N°: 2 y en que la variante tiene una o más propiedades alteradas en comparación con un polipéptido de referencia que tiene actividad quimosina. Dicho polipéptido variante puede usarse en la preparación de un queso.
