Abstract

La presente invención se refiere a un producto de confitería, caracterizado porque comprende: a.5-95% en peso de complejo de polifenol-gelatina que contiene hasta 60% en peso de agua basado en los sólidos de polifenol y gelatina, que tiene una relación en peso de polifenol a gelatina de 0.2:1 a 0.8:1, en donde el complejo de polifenol y gelatina se hace al mezclar gelatina seca con una solución de polifenol y agua; y b.10-95% en peso de agente de volumen adecuado; en donde el producto de confitería se desintegra durante la masticación bajo las condiciones de la boca en 2 a 40 minutos, en donde el agente de volumen adecuado se selecciona del grupo que consiste de eritritol, manitol, gomas hidrocoloides, almidón modificado, pectina, inulina, proteína, sales de proteína y combinaciones de los mismos.
