Abstract

Es por lo tanto un objeto de la presente invención proporcionar concentrados de alimentos gelificado con una alta concentración de sal, a base de gelatina. Se encuentra que en geles de gelatina tipo A con altas concentraciones de sal se pueden obtener en concentraciones de gelatina que de otro modo darían lugar a la separación de fases de gel-líquido mediante la adición de ciertos aminoácidos.
