Abstract

La presente invención está en el campo de composiciones de alimentos concentrados. Se refiere además a un proceso para preparar el mismo. Se refiere además al uso de la composición de alimentos para preparar un caldo, una sopa, una salsa, jugo o un platillo sazonado. Es por lo tanto un objeto de la presente invención proporcionar concentrados de alimentos gelificado con una alta concentración de sal, a base de gelatina. Se encuentra que en geles de gelatina tipo A con altas concentraciones de sal se pueden obtener en concentraciones de gelatina que de otro modo darían lugar a la separación de fases de gel-líquido mediante la adición de ciertos aminoácidos.
