Abstract

La presente invención se refiere a un yogur para beber novedoso y a un proceso para la manufactura del mismo. Mientras que este yogur para beber tiene el mismo sabor y características organolépticas que un yogur para beber tradicional, tiene una estructura de proteínas diferente y una composición diferente con respecto al contenido de caseína y proteínas de suero lácteo. En particular, el yogur para beber comprende caseína y proteína de suero lácteo en una relación de caseína:proteína de suero lácteo de 4:96 a 12:88 (p/p). El yogur para beber se puede hacer sin la formación de un coágulo después de la fermentación. Además, la invención proporciona un proceso para la manufactura de este yogur para beber, que comprende agregar una cantidad de base de producto de suero lácteo a una cantidad de base de producto de leche para preparar un yogur para beber que comprende caseína y proteínas de suero lácteo en una relación de caseína:proteína de suero lácteo de 4:96 a 12:88 (p/p).
