Abstract
La presente invencion en un primer aspecto concierne a nuevas sustancias moduladoras de sabor de conformidad con la Formula (I) y/o a sales comestibles de la misma: R1-CR2-(OR)3-CONR4-Y-X (1). Se encontro que sustancias representadas por la formula (1) pueden ser usadas ventajosamente para impartir sabor deseable, especialmente atributos de sabor a comestibles, bebidas, y productos farmaceuticos que se incorporan a la presente. Ademas dichas sustancias son capaces de modular y de complementar el impacto sensorial de otras sustancias impartidoras de sabor. Asi, Las sustancias moduladoras de sabor de la presente son aplicadas ventajosamente en composiciones de sabor, alimentos, bebidas y productos farmaceuticos. Ejemplos tipicos de sustancias moduladoras de sabor de conformidad con la presente invencion incluyen N-lactoil tiramina, N-gluconil tiramina, N-lactoil 4-hidroxibencilamina, N-lactoil vainillinamina y N-lactoil dopamina.
