Abstract

PURPOSE:To obtain a liquid food having a texture of dressing of separation type, usually not being in an emulsified state, capable of being readily and uniformly blended by shaking in use, keeping a uniformly mixed state for a specific time, consisting of a water phase and an oil phase containing a surface active agent. CONSTITUTION:The aimed food which consists of a water phase and an oil phase, preferably a water phase of an acidic aqueous solution and/or a solution having high salt content and/or an oil phase of soybean oil or corn oil, containing one or more surface active agents, wherein >=90% of the oil phase is separated from the water phase, is uniformly mixed in 10-100mu average particle diameter by shaking, further maintains the uniform mixed state for >=10min and is returned to the state before the shaking within 24hr after the shaking. One or more of lysophosphatide, polyglycerin fatty acid ester having high HLB and glycerin monofatty acid ester are preferable as the surface active agent.
