Abstract

PURPOSE: To obtain a protein raw material usable as various foods from a bone-containing sardine, by roughly crushing gutted sardine, removing oils and fats therefrom, fermenting the meat with an enzyme and/or microorganism, inactivating the enzyme and/or microorganism and finely pulverizing the product.
CONSTITUTION: Guts and optionally head and skin are removed from a sardine and the obtained sardine meat is roughly crushed. After removing oils and fats from the meat, the roughly crushed sardine meat is subjected to (1) fermentation with an enzyme and/or microorganism, inactivation of the enzyme and/or microorganism and fine pulverization or (2) fine pulverization, fermentation of the powder with an enzyme and/or microorganism and inactivation of the enzyme and/or microorganism or (3) fermentation with an enzyme and/or microorganism under fine pulverization and inactivation of the enzyme and/or microorganism.
