節約になる。大豆の表面がきれいになるので、衛生的に
も優れ、とうふの日持ちが非常によくなる。しかも合理
的な操作なので、繰返えし回数も少なく、短時間に洗滌
工程の仕事が、とうふの製造法の効率化がはかられるも
のである。
