Abstract

PURPOSE: To prepare a food material having high nutritive value in itself and excellent processability and palatability, servable as a food having excellent palatability, and utilizable over wide range, by pulverizing defatted wheat embryo buds heated at a secific temperature.
CONSTITUTION: Defatted wheat embryo bud, pref. defatted with an organic solvent to a crude fat content of ≤ about 1wt%, is heat-treated until the material temperature reaches 135W190°C at a temperature between the final material temperature (T) and T+40°C, and finely pulverized to a particle diameter of ≤250μm. The obtained food material is composed of defatted and pulverized wheat embryo bud having ocher or dark brown color developed by the heat- treatment, and having a water suspension ratio in 9.1wt% aquesus suspension of 31W100vol% (vol% of powder in a suspension 5min after suspending the powder in water at 9.1wt% concentration).
